6 tablespoons rice wine vinegar
6 tablespoons olive oil
5 tablespoons creamy peanut butter
3 tablespoons soy sauce
3 tablespoons brown sugar
2 tablespoons minced fresh ginger root
1 ½ tablespoons minced garlic
½ head red cabbage, finely shredded
2 Braeburn or Fuji apples - peeled, cored, and finely diced
¼ cup finely minced white onion

Steps:

  • Whisk rice wine vinegar, olive oil, peanut butter, soy sauce, brown sugar, ginger, and garlic together in a bowl to make a smooth dressing.
  • Toss red cabbage, apples, and onion in a large salad bowl and pour dressing over slaw; toss to coat. Chill before serving.

½ medium head red cabbage, finely shredded
¼ cup finely minced white onion
2 Fuji apples, peeled, cored and finely diced
1 cup mayonnaise
½ teaspoon salt
⅛ teaspoon pepper
2 teaspoons sugar
2 tablespoons lemon juice
2 tablespoons milk

Steps:

  • In a large serving bowl, toss together the cabbage, onion, and apples. In a small bowl, whisk together the mayonnaise, salt, pepper, sugar, lemon juice, and milk. Pour dressing over the cabbage mixture, and toss to coat. Chill until serving.

I have not made this as yet. But was looking for recipes to serve next weekend when we are having guests who tend to like veggies. So wanted to do some experimentation. This recipe also looked like a way to use our plentiful apple crop! Cook time is minimum refrigeration time.

1/4 cup finely minced white onion
1 fuji apple, peeled, cored, and finely diced
1/2 cup mayonnaise
1/4 teaspoon salt
1 dash black pepper
1 teaspoon sugar
1 tablespoon lemon juice
1 tablespoon milk

Steps:

  • In a large serving bowl toss together the cabbage, onion and apples.
  • In a small bowl, whisk together the dressing.

1 small head of purple cabbage, finely shredded or chopped
1/4-1/2 cup sweet yellow onion, finely chopped
2 large apples, peeled, cored, and finely diced or chopped
1 cup mayonnaise (do not use salad dressing like miracle whip)
1/2 teaspoon salt
1/8 teaspoon pepper
2 teaspoons sugar
2 tablespoons of fresh lemon juice

2 large purple top turnips
1 medium apple any variety
1/3 cup(s) raw dried pumpkin seed
1/3 cup(s) olive oil
1/2 - lemon
DRESSING:
1 tablespoon(s) cider vinegar
1 tablespoon(s) lemon juice
1 teaspoon(s) dijon mustard
1 tablespoon(s) honey or maple syrup
1 teaspoon(s) chopped thyme
- salt and pepper to taste

Steps:

  • Peel turnips and slice into 1/4 inch slice. Stack slices on top of each other cut as thin as you can into matchsticks. Repeat with unpeeled apple.
  • Place in a large bowl, and squeeze 1/2 lemon juice over apple so they don't turn brown.
  • MAKING THE DRESSING:
  • Combine remaining ingredients( except pumpkin seed ) in a glass jar with a tight fitting lid. Shake until combined.
  • Mix pumpkin seed, dressing and slaw until combined. Serve chilled.
