½ cup butter, softened
½ cup brown sugar
1 cup all-purpose flour
½ cup rolled oats
2 eggs
¾ cup white sugar
1 (15 ounce) can pumpkin
1 (12 fluid ounce) can evaporated milk
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground cloves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together butter and brown sugar. Mix in flour. Fold in oats. Press into a 9x13 inch baking dish.
  • Bake in preheated oven 15 minutes, until set.
  • In a large bowl, beat eggs with white sugar. Beat in pumpkin and evaporated milk. Mix in salt, cinnamon, ginger and cloves. Pour over baked crust.
  • Bake in preheated oven 20 minutes, until set. Let cool before cutting into squares.

  • Preheat oven to 350°. Mix flour, sugar and brown sugar; cut in butter until crumbly. Stir in walnuts. Reserve 1 cup mixture for topping; press remaining mixture onto bottom and halfway up sides of a 13x9-in. baking dish., In a large bowl, beat eggs, pumpkin, milk, cinnamon, salt and allspice just until smooth. 1 (15 ounce) can solid pack pumpkin puree
2 cups all-purpose flour

1 teaspoon baking soda
2 teaspoons baking powder
½ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In a medium bowl, mix together the eggs, oil, sugar and pumpkin until smooth. Sift together the flour, cinnamon, cloves, ginger, nutmeg, baking soda, baking powder and salt. Stir into the pumpkin mixture.

1 tablespoon pumpkin-pie spice
1 teaspoon baking soda
3/4 teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1 1/4 cups sugar
1 large egg
2 teaspoons vanilla extract
1 cup canned pumpkin puree
1 package (12 ounces) semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Line bottom and sides of a 9-by-13-inch baking pan with foil, leaving an overhang on all sides. In a medium bowl, whisk together flour, pie spice, baking soda, and salt; set aside.
  • With an electric mixer, cream butter and sugar on medium-high speed until smooth; beat in egg and vanilla until combined. Beat in pumpkin puree (mixture may appear curdled). Reduce speed to low, and mix in dry ingredients until just combined. Fold in chocolate chips.
  • Spread batter evenly in prepared pan. Bake until edges begin to pull away from sides of pan and a toothpick inserted in center comes out with just a few moist crumbs attached, 35 to 40 minutes. Cool completely in pan.

1/2 cup cold butter
1 egg
2 eggs
1 (29 ounce) can pumpkin (not pumpkin pie mix)

Steps:

  • Preheat the oven to 350 degrees.
  • CRUST: Empty cake mix into a bowl. Cut in 1/2 cup butter until mixture forms moist even crumbs. RESERVE ONE CUP MIXTURE. Add the egg to the remaining mixture and stir until crumbled together.
  • Spoon into a 9" x 13" greased pan and press lightly to form an even layer. Bake for 10 minutes and remove, but leave the oven on.
  • FILLING: Beat two eggs until foamy. Beat in pumpkin, milk, spices and 1/4 cup of brown sugar. Pour on top of baked layer. (It should be liquidy but don't worry - it will bake up fine.).

Steps:

  • Heat oven to 350F. Spray 13x9-inch pan with cooking spray. In medium bowl, mix 1 1/2 cups Bisquick and 1/2 cup pecans. Using pastry blender or fork, cut in 1/2 cup butter until mixture is crumbly. With floured fingers, press mixture in bottom of pan. Bake 10 minutes.
  • Meanwhile, in large bowl, beat filling ingredients with wire whisk until smooth; set aside. In medium bowl, mix 1 cup Bisquick mix and 1/2 cup brown sugar. Using pastry blender or fork, cut in 1/4 cup butter until mixture is crumbly. Stir in pecans.

Every year we make a trip to the US to shop and one of my favourite places to shop is the Williams-Sonoma store. This year they were serving samples of this made with their own Pecan Pumpkin Butter and giving away the recipe. Since I can't buy the pumpkin butter here I adapted the recipe to use a butter recipe already on Zaar. Absolutely delicious!

1 (18 ounce) box yellow cake mix
1/2 cup butter, melted
3 large eggs
1 1/4 cups pumpkin butter (I used Spicy Pumpkin Butter, takes 10 minutes to make)
1/8 cup milk
1/2 cup pecans, toasted and chopped
1 tablespoon flour
1/4 cup sugar
1 teaspoon cinnamon
1/4 cup butter, softened

Steps:

  • Measure out one cup of the cake mix and set aside for the topping.
  • Mix remaining cake mix with 1/2 cup melted butter, then mix in 1 egg.
  • Press lightly and evenly into a lightly greased 9 X 13 baking pan.
  • Mix the pumpkin butter with 2 eggs and the milk.
  • Spread pumpkin butter over the cake base evenly.
  • Sprinkle chopped pecans over the pumpkin.
  • Mix the 1 cup reserved cake mix with the flour, sugar and cinnamon.
  • Add softened butter and mix until crumbly.
  • Sprinkle crumbs over the top of the cake.
  • Bake at 350 degrees for 35-40 minutes, until golden.
  • Note: If you're making your own pumpkin butter let it cool before using in this recipe.
  • Prep and cook times do not include the time to make the pumpkin butter.

1 pinch salt

1 1/2-2 teaspoons cinnamon

These dessert bars are delicious and so easy to make. Perfect for the fall season and for Thanksgiving (or any other time) for an after dinner dessert, or serve with a light lunch. Don't even remember where I got the recipe originally. Maybe it was in a cake mix box. I know and your family will enjoy these. Its a fool proof...

BOTTOM LAYER
1 box yellow cake mix
1/2 c margarine, melted (or use butter if you must)
1 egg
FILLING
1 lb solid pack pumpkin (canned is fine)
2/3 c milk (almond, soy or regular)
2 1/2 tsp pumpkin pie spices/or your own mix
1 tsp allspice
1/2 c firmly packed brown sugar
2 eggs
TOPPING
1 c reserved cake mix
1/4 c sugar
1 tsp cinnamon
1/4 c butter or margarine

Steps:

  • 1. Preheat oven to 350 degrees. Grease bottom only of 9x13 Pan (Brownie pan works well)
  • 2. Reserve 1 Cup cake mix for topping. Combine remaining cake mix with butter/margarine and egg. Press into pan.
  • 3. Combine all filling ingredients and mix until smooth. Pour over crust.
  • 4. Combine topping ingredients and sprinkle over filling.
  • 5. Bake for 45 to 50 minutes until a knife inserted in center comes out clean. (you can also test making sure it's not wiggly anymore.
  • 6. Let cool and refrigerate. Serve with a dollop of whipped cream or whipped topping, or just by itself.
  • 7. NOTE FOR LACTOSE INTOLERANT PEOPLE: If made with margarine, almond/rice soy milk it's a great lactose free dessert, for those lactose intolerant people like me. :-) ---Even though no lactose in butter, one of the healthy margarine works great.

1 (18 1/4 ounce) package spice cake mix or 1 (18 1/4 ounce) package yellow cake mix
4 large eggs
1 (8 ounce) package cream cheese, softened
1 (15 ounce) can solid pack pumpkin
2 teaspoons vanilla
1 (16 ounce) box powdered sugar
2 teaspoons pumpkin pie spice

Steps:

  • Preheat oven to 350°; position oven rack in the middle of oven; spray the bottom only of a 13x9 inch baking pan with cooking spray.
  • Melt ½ cup butter in a saucepan over low heat.
  • In a bowl, beat the cake mix, melted butter, and 1 egg with an electric mixer set on medium speed until well blended (mixture will come together as a thick dough).
  • Pat the dough evenly into prepared pan; set aside.
  • Melt the remaining stick of butter in a small saucepan over low heat.
  • In a bowl, beat the softened cream cheese and canned pumpkin with an electric mixer on medium speed until blended and smooth, scraping down the sides of bowl when needed.
  • Add in the melted butter, remaining 3 eggs, and vanilla extract; blend until smooth.
  • Add in the powdered sugar and pumpkin pie spice; blend until smooth.
  • Spread pumpkin mixture over prepared crust; bake 42-45 minutes (do not overbake; bars should be slightly gooey).
  • Transfer to a wire rack and cool completely.
  • Cut into bars/squares; cover and store in refrigerator.

1/2 cup quick-cooking oats
1/2 cup brown sugar, packed

2 (12 ounce) cans evaporated milk
4 eggs
1 1/2 cups sugar
2 teaspoons cinnamon, ground
1 teaspoon ginger, ground
1/2 teaspoon clove, ground
1 teaspoon salt
1/2 cup brown sugar, packed
1/2 cup pecans, chopped
2 tablespoons butter or 2 tablespoons margarine, softened

Steps:

  • Combine the first four ingredients until crumbly; press into a greased 13"x 9" x 2" baking pan.

1/4 cup butter or 1/4 cup margarine, melted
1 cup crushed graham cracker (approx 16 squares)
1 cup crushed gingersnaps (approx 18 cookies)
2 cups canned pumpkin (not pumpkin pie mix)
1 cup sugar
1/2-1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 cup chopped walnuts
2 quarts vanilla ice cream, softened

Steps:

  • In a bowl combine the melted butter and crushed graham crackers and gingersnaps.
  • Press half of the crumb mixture in an ungreased 9x13" baking dish or pan.
  • In a bowl combine the pumpkin, sugar, cinnamon, salt, ginger and nutmeg, and then add nuts.
  • Gently fold the pumpkin mixture into the softened ice cream.
  • Spread over the crumb mixture in the pan.
  • Sprinkle the other half of the crumb mixture over the top.
  • Return to the freezer for several hours.
  • Let sit out about 10 minutes before slicing and serving.
