- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, whisk together Splenda®, oats, wheat flour, soy flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Stir in pumpkin, canola oil, water, egg whites, and molasses. Stir in flax seeds, if desired. Roll into 14 large balls, and flatten on a baking sheet.
- Bake for 5 minutes in preheated oven. DO NOT OVERBAKE: the cookies will come out really dry if overbaked.

- Preheat oven to 375 degrees F.
- In a mixing bowl, beat together pumpkin and Truvia Baking Blend until fluffy.
- Beat in eggs and molasses until well combined.
- Add vanilla protein powder, salt, baking soda, pumpkin pie spice and flour and mix until combined.
- Fold in dark chocolate chips.
- Use a cookie scoop or roll dough into balls and place on a baking sheet sprayed with nonstick cooking spray or lined with parchment paper or a silicone baking mat.
- Bake for 8-9 minutes, or until just golden brown on the edges.
