A delicious autumn cocktail to enjoy after dinner or with dessert. You can adjust the consistency to be thicker (add more pumpkin) or thinner (add more milk) as you see appropriate.

Steps:
- Place graham cracker crumbs in a shallow dish. Coat rim of martini glass with honey, and dip into graham cracker crumbs to coat.
- Combine milk and pumpkin puree in a cocktail shaker, and shake to combine. Pour in vodka and creme de cacao, and add ice. Shake well, and then strain into prepared martini glass. Garnish with a sprinkle of pumpkin pie spice.

- In a small pot over medium heat, mix together the sugar and pumpkin pie spice with 1 cup water. Bring it to a boil, remove from the heat, and allow to cool for 1 hour. The syrup can be stored in the refrigerator for up to 2 weeks.
- To a pitcher, add the vodka and half the simple syrup. Stir until blended. Add the cranberry seltzer and pour into chilled martini glasses. Add more sugar syrup, to taste, if necessary. Garnish with maple candies, if desired.

- Combine first four ingredients in a shaker with ice. Shake well, and top with sparkling wine. Strain into a chilled cinnamon-sugar rimmed martini glass.

- In a small saucepan over medium heat, combine the brown sugar, 1 teaspoon pumpkin pie spice, and 1/2 cup water. Stir until the sugar is dissolved and bring it to a boil. Remove from heat and cool for 30 minutes. Syrup can be stored in the refrigerator for up to 2 weeks.
- Mix together the granulated sugar and remaining 1 teaspoon pumpkin pie spice and put it onto a shallow plate. Pour 2 tablespoons of the simple syrup onto a plate. Dip the rims of 4 martini glasses into the syrup, and then in the spiced sugar. Set aside.
- In a large measuring cup, combine the half-and-half, pumpkin puree, vanilla, and half the simple syrup and whisk until well blended. Pour in to a pitcher filled with ice. If using the vodka, add it to the pitcher before serving and stir. Pour into the prepared glasses. Top with sparkling water.

- Dip the rim of a martini glass in cinnamon and sugar.
