BEST BROILED PORK TENDERLOIN image

Number Of Ingredients 12

Two 16-oz pork tenderloins, silver skin removed
2t kosher salt
1/2t black pepper
1 and 1/4t veg oil
1/4t baking soda
Salsa:
1/4c minced sun-dried tomatoes
1/4c chopped fresh parsley
1/4c chopped fresh basil
1/4c evoo
1 small shallot, minced
2T balsamic vinegar

Steps:

  • 1. Take about 2-inches of the narrow end of each tenderloin and fold it over to get a uniform thickness. Tie w/twine. Tie each tenderloin at 2-inch intervals, and trim off excess string so it doesn't burn. Mix salt, pepper veg oil and baking soda together, then rub on tenderloins. Place in aluminum pan. 2. Set an oven rack approx 4 inches from the broiler. Preheat oven to 325. Just as you put the pork in, switch the oven to "broil". Cook to 129 degrees internal temp. 3. Remove, cover w/foil and let rest for 10 mins. 4. Combine all salsa ingredients, adding salt/pepper to taste. 5. Remove twine from pork. Slice and serve, topped w/salsa.
