- Place pumpkin, spreadable fruit, brown sugar and pie spice in a blender; cover and process until blended. Transfer to a pitcher; stir in cider until combined. Serve hot or chilled.

WIZARDING WORLD PUMPKIN JUICE #2
Pumpkin juice recipe that isn't too sweet or thick and works well for any autumn party. I stumbled onto this recipe years ago to use at a party we gave for the theatrical release of the last Harry Potter movie. It was surprisingly delicious and is the best recipe I've ever seen for pumpkin juice. This works well with spiced rum if you've got an interest in a bit of an adult twist.

Steps:
- Stir 3 cups apple cider, ginger, cinnamon stick, and cloves together in a saucepan; bring to a boil, reduce heat to low, and simmer until slightly reduced, about 15 minutes.
- Remove saucepan from heat and immediately stir brown sugar and honey into the cider mixture until dissolved into the liquid.
- Pour the liquid into a wide glass dish and refrigerate until chilled completely, at least 45 minutes.
- Mix the chilled apple cider mixture with the remaining apple cider and the pumpkin puree in a large pitcher; stir until the puree dissolves into the liquid.

- Make the pumpkin juice: In a medium pot, combine the pumpkin purée and water. Bring to a boil over medium-high heat, then remove the pot from the heat. Strain through a cheesecloth into a large jar or container. Cover and transfer to the refrigerator to chill for about 30 minutes. You should have about 4 cups.
- Make the spiced syrup: In a small saucepan, combine the sugar, water, cinnamon sticks, and nutmeg pods. Bring to a boil over medium-high heat, then reduce the heat to medium-low and simmer, stirring occasionally, until the sugar dissolves and the syrup thickens, 3-4 minutes. Transfer to an airtight container and refrigerate until ready to use, up to 1 month.
- Make the juice: In a large pitcher, combine the pumpkin juice, apricot juice, apple juice, ½ cup of the spiced syrup, the lime juice, grated nutmeg, and grated cinnamon. Mix well to combine. Serve chilled.

This copycat recipe is the real mccoy. Try it and you will agree. Very important -Be sure to use the Libby's Canned Pumpkin Pie Mix that has the spices already included or it will not taste good or authentic. I recommend to use a blendtec or vitamix for the best results. Enjoy!
