6 tablespoons butter, softened
1/2 cup packed brown sugar
1/4 cup sugar
1/2 cup canned pumpkin
2 tablespoons beaten egg
1/4 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 cup quick-cooking oats
1/4 cup whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/4 cup dried cranberries

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in the pumpkin, egg and vanilla. Combine the all-purpose flour, oats, whole wheat flour, baking soda, ginger, cinnamon, salt, nutmeg and allspice; gradually add to creamed mixture. Fold in cranberries. , Drop by 1/4 cupfuls 2 in. apart onto a baking sheet coated with cooking spray. Bake at 350° for 20-22 minutes or until lightly browned. Remove to wire racks to cool.

1/2 cup butter
1/4 cup sugar
1/4 cup brown sugar
1 egg
1 teaspoon vanilla
2/3 cup pumpkin puree
3/4 cup dried cranberries
1 3/4 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1/4 teaspoon clove

Steps:

  • Preheat oven to 375°F.
  • Cream together the butter and the sugars.
  • Beat in the egg, pumpkin and vanilla.
  • Mix dry ingredients together and then add to the wet ingredients and blend well.
  • Stir in dried cranberries.
  • Drop batter by rounded tablespoons onto a greased cookie sheet.
  • Bake for 15-20 minutes or until golden brown.

1 1/2 cups rolled oats
2 cups whole wheat flour
1 1/2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon clove
1/4 teaspoon allspice
1 cup pumpkin
1/2 cup water
2 tablespoons bob's red mill egg substitute
1 teaspoon vanilla extract
1 cup cranberries, quartered or 1/2 cup dried cranberries

Steps:

  • Preheat the oven to 350°F.
  • Place all ingredients in bowl, stir together until combined.
  • Use 1/4 cup measuring cup to drop onto greased cookie sheet, 6 to a sheet.
  • Spray the top of each cookie with non-stick spray. Flatten with your fingers to the desired size. These cookies do not spread.
  • Bake 15 minutes.
  • Store in an airtight container between layers of waxed paper.
  • These freeze well, and can go straight from the freezer to the toaster.

1 1/2 cups Gluten-Free Flour Blend, recipe below
1/2 cup gluten-free oat flour
1 cup gluten-free quick-cooking oats
2 teaspoons pumpkin pie spice
1 teaspoon baking soda
1 teaspoon salt
1 cup softened unflavored coconut oil or unsalted butter
3/4 cup granulated sugar
3/4 cup coconut sugar
1 large egg, at room temperature
1 tablespoon pure vanilla extract
1 cup canned pure pumpkin puree
1 cup dried cranberries
Gluten-free old-fashioned oats, for coating
3 cups (435 grams) white rice flour
1 1/2 cups (187 grams) tapioca flour
3/4 cup (123 grams) potato starch
1 tablespoon (8 grams) xanthan gum
1 1/2 teaspoons (5 grams) salt

Steps:

  • For the cookies: Preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper. In a small bowl, whisk together the flour blend, oat flour, quick-cooking oats, pumpkin pie spice, baking soda and salt. In a large bowl, cream together the softened coconut oil, granulated sugar and coconut sugar. Beat in the egg and vanilla. Stir in the flour mixture in two additions, alternating with the pumpkin puree, stirring just until combined. Stir in the cranberries.
  • Place some old-fashioned oats in a small bowl. Using a 1 3/4-inch ice-cream scoop, scoop up cookie dough and drop it into the bowl. Roll the dough in the oats to coat. Dry Ingredients
2 cups all-purpose flour - I prefer King Arthur's. You could also fresh ground soft white wheat, or a gluten free flour blend
1 cup uncooked oatmeal - quick cooking for a softer cookie, old fashioned or steel cut for a chewier cookie
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt or Real Salt
1 1/2 teaspoons ground cinnamon, preferably organic
1/4 teaspoon ground cardamom, preferably organic - you can substitute more cinnamon if you don't have cardamom
Wet mix ingredients
1 cup (8 ounces) butter, softened
1 cup light brown sugar, packed
3/4 cup granulated sugar
1 large chicken egg or small duck egg
1 1/2 teaspoons vanilla extract
1 cup home cooked pumpkin (squash) puree or 1 cup canned solid pack pumpkin
Ingredients to add last
1 cup dried cranberries or dried tart cherries
1 cup chopped walnuts or pecans, preferably as crispy nuts

Steps:

  • Heat oven to 350°. Lightly grease baking sheets or line with parchment paper or reusable parchment sheets. In a medium bowl, mix together dry ingredients and set aside. (If you don't want to dirty a bowl for this, you can dump them straight onto the top of your wet mixture, but this ensures they are thoroughly mixed.) Cream the butter and sugars in a large bowl until well blended. Mix in the egg, vanilla, and pumpkin. Add the dry ingredients and stir gently until blended. Stir in cranberries or tart cherries and chopped nuts. Drop by teaspoonfuls onto the prepared baking sheets. Bake for 12 to 15 minutes, or until lightly browned around the edges and set. Don't overbake! You can use Airbake pans if you're nervous about burning the cookies. These are tender cookies, so you'll need to let them cool for a few minutes on the pan to set up before moving them to a wire rack to cool completely.

  • Preheat oven to 350'. Using electric mixer, beat sugar and butter together in a medium mixing bowl until light and fluffy. Add egg; mix well. Add pumpkin and vanilla; mix well. Combine dry ingredients in a separate mixing bowl. Add to pumpkin mixture, mixing just until moist, using the electric mixer. Stir in cranberries and nuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 20 miniutes or until golden brown. Cool completely.
