VEGETARIAN BOLGNESE image

1/4 cup dried porcini mushrooms(1/4oz)
1 Tablespoon olive oil
1 1/2 cups finely chopped onion
1/2 cup finely chopped carrots
1/2 cup finely chopped celery
1 8 oz package cremini mushrooms-finely chopped
1/2 cup dry red wine
1/4 cup warm water
1/2 teasp. salt
1/2 teasp ground pepper
1 28 oz can crushed tomatoes with basil, undrained
1 2 inch piece parmigiano-reggiano cheese rind
12 ozs uncooked whole wheat penne
1/2 cup ( 2 ozs) shaved parm-regg cheese

Steps:

  • place dried mushrooms in a grinder and process until finely ground heat oil in large saucepan over med. high heat--add onion, carrot, celery, and mushrooms and saute 10 mins add winesimmer 2 mins until almost all liquid evaps add 1/4 cup warm water and next 4 ingredients(thru chz rind) to the onion mixture stir in ground porcini-cover, reduce heat and simmer 40 mins, keep warm, remove rind and discard it place pasta in bowl, with sauce over it and some shaved parm chz
