1 1/2 cups brown sugar
1 1/2 cups water
3 tablespoons butter or 3 tablespoons margarine
1/2 teaspoon vanilla
3/4 cup sugar
3 tablespoons butter or 3 tablespoons margarine
3/4 cup milk
1 pinch salt
1 1/2 cups flour
2 teaspoons baking powder

Steps:

  • In a saucepan melt butter or margarine; stir in brown sugar.
  • Add water and vanilla.
  • Bring to a boil.
  • Meanwhile, make the dough.
  • Cream butter or margarine; add sugar.
  • In a separate bowl, combine flour, baking powder and salt.
  • Add to butter mixture alternately with milk.
  • Pour syrup into a 9 X 13 baking dish.
  • Drop dough by teaspoons over syrup.
  • Bake at 350 F for 30 minutes.

A classic French-Canadian sweet. Along with rice pudding and gelatin, this is one of the most commonly offered desserts in diners. Contrary to the usual recipe, this one uses milk for a more cake-like texture.

1 ½ cups all-purpose flour
1 teaspoon baking powder
1 egg
1 cup white sugar
¼ cup margarine
1 cup milk
2 cups water
2 cups brown sugar
¼ cup margarine
¼ teaspoon vanilla extract

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Sift the flour and baking powder together in a small bowl. Beat the egg, sugar, and 1/4 cup margarine together in a large bowl. Add the flour mixture alternately with the milk to the egg mixture, stirring just to combine. Pour the batter into the prepared dish.
  • Bring the water to a boil in a saucepan; stir the brown sugar, 1/4 cup margarine, and vanilla extract into the water and return to a boil for 2 minutes. Pour the sauce over the batter.
  • Bake in the preheated oven until the center is set, about 45 minutes.

This is a traditional french-Canadian dessert that was made during the depression era. The ingredients are simple and were cheap and it is one of those staple desserts in french-canadian homes. I got this recipe online a while back. I did a search for it when I was craving this dessert I had when I was young. I tried it and it tatsted just as I remembered it. Delicious and sweet as with all french-canadian desserts.

1 1/2 cups flour
1 teaspoon baking powder
1/4 cup butter
1 cup sugar
1 teaspoon vanilla
1 cup milk
3/4 cup maple syrup

1/4 cup butter

Steps:

  • In a bowl sift flour and baking powder together.
  • In another bowl, cream butter and sugar and add vanilla.
  • then slowly add the milk and flour mixture in alternating 1/4 cup increments until all together and smooth.
  • Spread in a buttered baking dish.
  • For the sauce: In a sauce pan, mix all the sauce ingredients together and bring to a boil.
  • Boil for a few seconds and then pour over the cake batter (do not mix).
  • Bake in a 325 preheated oven for 45 minute.

Living in Quebec you learn many things. One, you learn that shoveling snow is considered a winter pastime. Secondly, and more deliciously, you learn that maple syrup can be put on a heck of a lot more than just pancakes (crepes up here). This little recipe is call Poor Man's pudding, and there is probably a recipe for every single family in the Province. This is the one my wife's family makes, and is fantastic. Yes, it's a little sweet, but nothing an ice cold glass of milk can't fix!

18 ounces maple syrup (the real stuff)
18 ounces 35% cream
1/2 cup butter (room temperature)
1 cup sugar
2 eggs
2 cups flour
2 teaspoons baking powder
1 dash salt
1/2 cup milk

Steps:

  • Preheat the oven to 400°F.
  • In a large heavy pan, bring to a boil the maple syrup and the cream. Pay close attention, because it will boil over! Once a slow roll begins, continue for about 3 to 4 minutes, and remove from the heat.
  • With an electric beater, beat the butter and the sugar together. Add the eggs and continue beating for about 2 minutes.
  • Sift together the flour, baking powder and the salt. Add the dry ingredients into the the egg mixture, alternating with the milk.
  • Pour the batter into a 13x9-inch pan. Pour the maple syrup/cream mix on top.
  • Bake for 30 minutes.
  • Enjoy with vanilla ice cream, whipped cream, or all by itself!
  • *NOTE*: a variant that I saw on a local television cooking show called for doing all the above steps, but using single serving baking cups. Before adding anything, put in one or two frozen raspberries, then the batter, followed by the maple/cream mix.
  • Makes an impressive and tasty quick dessert on a cold winter night for guests.

  • CAKE.
  • In a large bowl, with an electric mixer, mix the butter and sugar till the mix is light.
  • Add eggs and vanilla and mix.

  • Alternate flour mix and milk to the butter mix.
  • Pour into a 13 inch by 9 inch greased pan.
  • MAPLE SAUCE.
  • In a large casserole, bring to boil the syrup, brown sugar, cream and butter and constantly stir.
  • Reduce heat and and gently cook 2 minutes or till sauce has reduced a little bit.
  • Pour sauce gently over cake.
  • Bake at 325°f (160°c) about 35 minutes or till cake is light brown and when toothpick inserted comes out clean.

Put oven rack in upper third of oven and preheat oven to 350°F.
1-1/4 cups maple syrup
3/4 cup heavy cream
2 teaspoons cider vinegar
a pinch of salt
6 tablespoons unsalted butter - softened
1/3 cup white sugar
1 large egg
1/2 teaspoon vanilla
1 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
creme fraiche, sour cream, or whipped cream

Steps:

  • Stir together 1-1/4 cups pure maple syrup (amber or Grade B), heavy cream, 2 teaspoons cider vinegar, and a pinch of salt in a small saucepan and bring to a boil, then remove from heat. Beat together 6 tablespoons unsalted butter (softened) and 1/3 cup sugar in a bowl with an electric mixer until light and fluffy, about 1 minute. Add 1 large egg and 1/2 teaspoon vanilla, then beat until just combined (batter will be very thick). Sift 1 cup cake flour (not self-rising), 1 teaspoon baking powder, and 1/4 teaspoon salt together into egg mixture and stir with a rubber spatula until just combined. Steps:

  • Preheat the oven at 325F (160C). Cake In a large bowl, with an electric mixer, mix the butter and sugar until the mixture is light. Add the eggs and vanilla and mix. In another bowl, mix the flour and baking powder. Add the dry mixture to the butter mixture alternating with the milk, mixing thoroughly. Pour the batter in greased oven proof (9"X13") dish or twelve ramekins. Put aside. Creamy Maple Saauce In a large saucepan, bring the syrup, sugar, cream and butter to a boil while stirring over medium high heat. Lower the heat and simmer for two minutes or until the sauce has been slightly reduced. Slowly and delicately spoon the sauce over the cake batter. Bake in preheated oven for about 35 minutes or until the pudding is golden brown and a toothpick comes out clean. Serve warm or at room temperature. *Serving tip* Use ramekins, serve on a plate with a nice scoop of fresh whipped cream (use the rest of the 35% cream, I always get the 500ml for this purpose) or gelato beside the ramekin.

1 teaspoon Baking Powder
1/4 cup Margarine
2/3 cup Sugar
1 ea Egg
1 teaspoon Vanilla

MAPLE SAUCE
1 cup Maple Sirop
1 cup Brown sugar
1 cup Water
1/4 cup Butter

  • Pre-heat the oven at 325°F.
  • Sift together the flour and the Baking poweder. Put asside.
  • In a bowl, cream the butter or margarine; slowly add sugar until a smooth constitency.
  • Slowly add ¼ of the milk with the sugar with the egg and the vanilla. Repeat until all is mixed.
  • Using butter or margarine, grease the 9x13 baking dish. Pour in the doe in. Put asside.
  • In a pan, mix all the sauce ingredients and bring to a boiling state for a moment.
  • Pour the sauce on the doe. DO NOT mix.
  • Cook at 350°F for 45 minutes.

Maple Sauce:
2 cups maple syrup (500 ml)
1/2 cup brown sugar (125 ml)
1 cup 35% cream (250 ml)
1/4 cup butter (60 ml)
Batter:
1 cup butter room temperature (250 ml)
1 cup sugar (250 ml)
2 cups flour (500 ml)
2 teaspoons baking powder (10 ml)
unit A pinch of salt
1 cup milk (250 ml)
1 tablespoon vanilla extract (15 ml)

Steps:

  • Maple Sauce: Bring all the ingredients to a boil. Let simmer for 5 minutes. Set aside on lowest setting. Can make this ahead of time Batter (can make day before) Preheat oven to 350 F (180 C). In a bowl, cream butter with sugar and vanilla extract. In another bowl, combine the dry ingredients. Add the dry ingredients to the sugar mixture, alternating with milk. Divide batter into 8 ramekins and if not using right away, refrigertae. When ready to cook, pour syrup over batter. Bake for about 35 minutes until golden brown. To know if the cake is baked enough, stick a toothpick in the cake and take it out. If the toothpick comes out clean, the cake is done. Serve warm with a scoop of vanilla ice cream.
