2 cups sourdough pretzel nuggets
1/2 cup all-purpose flour
2 eggs
1/4 cup buttermilk
2 garlic cloves, minced
1/8 teaspoon pepper
4 boneless skinless chicken breast halves (5 ounces each)
5 tablespoons olive oil, divided
2/3 cup mayonnaise
2 tablespoons Dijon mustard
2 teaspoons cider vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
1 package (5 ounces) spring mix salad greens

Steps:

  • Place pretzels in a food processor; process until finely crushed. Place pretzels and flour in separate shallow bowls. In another shallow bowl, whisk the eggs, buttermilk, garlic and pepper. Pound chicken with a meat mallet to 1/4-in. thickness. Dip both sides of chicken in flour, egg mixture and then pretzel crumbs., In a large skillet, heat 3 tablespoons oil over medium heat. Add chicken; cook for 4-6 minutes on each side or until no longer pink., Meanwhile, in a small bowl, mix mayonnaise and mustard. Remove 2 tablespoons to another bowl for dressing; whisk in remaining oil, vinegar, salt and pepper., Place salad greens in a large bowl. Drizzle with dressing; toss to coat. Serve with chicken and remaining mayonnaise mixture.

Whenever I visit my family in Minnesota, I can't wait to get my hands on a bag of Dot's Homestyle Pretzels. They're coated in a top-secret seasoning mix that I crave! This recipe recreates the flavor of Dot's, using butter-flavored pretzels mixed with ranch seasoning, so now we can satisfy that craving year-round. The pretzel mix is the perfect coating for chicken fingers that are fried till crispy then served with a punchy-sweet dipping sauce.

1/3 cup yellow mustard
2 tablespoons Dijon mustard
3 tablespoons brown sugar
1/4 cup honey
1 teaspoon fresh lemon juice
3 cups plain or butter-flavored pretzels (about 6 1/2 ounces)
1 tablespoon ranch dressing mix or 1/2 teaspoon each onion powder and garlic powder
3 large eggs
Kosher salt and freshly ground black pepper
1 pound chicken tenders (7 to 8 pieces) or 1 pound boneless skinless chicken breast cut into 7 to 8 strips
1 cup all-purpose flour
Vegetable oil, for frying

Steps:

  • For the dipping sauce: Whisk together both mustards with the brown sugar, honey and lemon juice in a small bowl. Cover and set aside until ready to use.
  • For the chicken fingers: Pulse the pretzels in a food processor until finely ground but pea-sized bits remain. Transfer to a medium bowl and stir in the ranch dressing mix or onion powder and garlic powder and 1 teaspoon salt.
  • Beat the eggs with 1 teaspoon salt and a few grinds of black pepper in another medium bowl.
  • Whisk the flour with 1 tablespoon salt and a few grinds of black pepper in a third medium bowl.
  • Set a wire rack in a rimmed baking sheet. Dredge 1 chicken piece at a time in the seasoned flour, shaking off the excess, then dip into the egg to evenly coat, and finally evenly coat in the pretzel crumbs. Transfer to the prepared wire rack.
  • Heat 1/2 inch oil in a 12-inch cast-iron skillet over medium-high heat. Test the temperature of the oil by dropping a pinch of leftover flour in the oil. When it sizzles and rises to the top, the oil is ready for frying. Add half of the chicken to the skillet and fry until golden brown, flipping once, 1 1/2 to 2 minutes per side. Transfer with tongs to a paper towel-lined plate. Season with a sprinkle of salt. Repeat the frying process with the remaining chicken.
  • Serve the chicken fingers warm with the mustard dipping sauce.

I love chicken thighs because they cook so quickly and are very forgiving. This recipe has minimal ingredients, comes together in no time and makes for an incredibly low-fuss but satisfying weeknight dinner. Serve it with some rice and any side of your choosing!

6 bone-in, skin-on chicken thighs (about 2 pounds)
2 tablespoons canola oil
Kosher salt and freshly ground black pepper
1 cup pineapple juice
3 cloves garlic, finely minced
3 tablespoons honey
2 tablespoons hot sauce
Cooked rice, for serving
Chopped cilantro, for serving, optional

Steps:

  • Preheat the oven to 425 degrees F.
  • Arrange the chicken thighs on a baking sheet, evenly spaced, and pat the skin dry with a paper towel. Rub the chicken skin with the oil and season with salt and pepper. Roast until the skin is golden brown and crispy and the meat registers 165 degrees F when an instant-read thermometer is inserted into the thickest part of the meat, 35 to 40 minutes.

10 ounces raw boneless skinless lean chicken breast, cut into 8 strips
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup and 2 tablespoons honey mustard, plus more, for optional dipping
1/4 cup fat-free liquid egg substitute
20 standard-sized (not mini) hard salted thin pretzel twists
1 tablespoon and 1 teaspoon granulated sugar

Steps:

  • Preheat the oven to 375 degrees F.
  • Season chicken strips with salt and pepper. Set aside.
  • In a large bowl, combine honey mustard with egg substitute and whisk well. Submerge the chicken and set aside to marinate for at least 5 minutes.
  • Meanwhile, place pretzels in sealable plastic bag, seal, and finely crush through the bag with a meat mallet or other heavy utensil. Add sugar, reseal, and shake to mix. Spread the mixture out on a large plate or in a large dish. Set aside.
  • Spray a baking sheet with nonstick spray.
  • Using tongs, transfer chicken strips to the pretzel-sugar mixture and thoroughly coat. Then transfer them to the baking sheet. (Discard excess mustard-egg mixture.) Mist the tops of the strips with nonstick spray.

12 boneless, skinless chicken thighs
flour , for dusting
2 eggs , beaten with a fork
1 tbsp olive oil
100ml wholegrain mustard
4 tbsp honey
1 tsp white wine vinegar
green veg or salad and potatoes , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Crush the pretzels in a food processor or bash up in a plastic bag using a rolling pin. Transfer pretzel crumbs to a plate. Season the chicken, toss in flour, dip into the egg, then roll in the pretzel crumbs. Place on a baking tray, drizzle over the oil and bake for 35 mins until crisp and tender.
