I pinched this straight out of a Campbell's soup ad in Good Housekeeping magazine. Why didn't I think of this? I have tried some of the other soup/rice combos, but this sounds great. Why should soup always be accompanied by either a salad or a sandwich? Photo by: SoupPlus.com

1 can(s) (10.5 oz.) campbell's bean with bacon soup
1 can(s) water
1/2 c uncooked rice

Steps:

  • 1. In a medium to large saucepan, heat Campbell's soup with one can of water to boiling.
  • 2. Stir in the uncooked rice.
  • 3. Reduce heat to low and cover. Cook about 20 minutes until rice is tender, stirring occasionally.
  • 4. Serve with a green vegetable and some buttered crescent rolls.
  • 5. May double recipe for more than two people.

2 -3 tablespoons no-added-salt tomato paste
1 cup water
mixed herbs
1/2 cup gnocchi, cooked (optional)
1/2 cup frozen peas and corn (optional)
1/4 cup chickpeas, drained (optional)
2 tablespoons low fat cottage cheese (optional)
salt and pepper

Steps:

  • Place gnocci (or any other cooked pasta) in a bowl with frozen veggies/beans. Pour in tomato paste and mixed herbs.
  • Pour on water and mix well. Taste for desired consistancy.
  • Microwave on med-high, until bubbly and heated through.
  • Top with cottage cheese and pepper. I needed no salt.
  • I also added 1 tbsp of my mum's home-made spicy tomato sauce. Its a very flexible recipe.

When I was a child, my family used to eat this at least once a week due to the fact that it is inexpensive and a little goes a long way. We also added fresh herbs or sometimes whole kernel corn. Its even better the next day and it freezes well.

Number Of Ingredients 10

1 large onion, chopped
2 garlic cloves, minced
1 tablespoon olive oil
1 lb ground beef, browned and drained
2 (16 ounce) cans stewed tomatoes
1 (16 ounce) can water
8 ounces elbow macaroni, uncooked
salt, to taste
pepper, to taste
parmesan cheese (optional)

Steps:

  • Saute onions and garlic in olive oil until translucent.
  • Brown ground beef and drain.
  • Add ground beef, tomatoes, water, raw macaroni, salt and pepper to the onion and garlic mixture.
  • Cook for 15 to 20 minutes or until macaroni is tender.
  • If desired, top with Parmesan cheese.
  • Serve with crusty bread and a salad.
