My neighbor made this dish at a barbecue and I had to have the recipe. It is so easy and you will be surprised what a wonderful flavor the peaches give to the chicken!

8 skinless, boneless chicken breast halves
1 pinch salt and ground black pepper to taste
2 cups peach preserves
3 tablespoons extra-virgin olive oil
2 tablespoons soy sauce
1 tablespoon finely chopped garlic
1 tablespoon Dijon mustard
4 ripe peaches, halved and pitted

Steps:

  • Preheat grill for medium heat and lightly oil the grate. Season chicken breast halves with salt and black pepper.
  • Stir peach preserves, olive oil, soy sauce, garlic, and mustard in a bowl; season with salt and black pepper. Reserve about 1/2 cup peach sauce.
  • Place chicken on preheated grill; cook until golden brown, 6 to 7 minutes, then flip chicken. Continue cooking for 5 to 6 minutes. Brush both sides of the chicken with peach sauce. Cook until no longer pink in the center and the juices run clear, 4 to 5 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Arrange peach halves cut side down on the grill. Grill for 2 minutes, flip, and brush with reserved 1/2 cup peach sauce. Continue to grill until peaches are tender, 3 to 4 minutes more.

This recipe is from the back of a bottle of Heinz malt vinegar. It is close to some of the other recipes for "Peachy Chicken", but has a few differences.

1 (16 ounce) can peach slices, drained and reserve juice
2 1/2 lbs skinless chicken pieces
1 tablespoon vegetable oil
1/4 cup frozen orange juice concentrate, thawed
1/4 cup malt vinegar
1 tablespoon brown sugar
1 teaspoon dried basil leaves
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon cinnamon
1/8 teaspoon pepper
2 tablespoons cornstarch
2 tablespoons water

Steps:

  • In large skillet, brown the chicken in the oil.
  • Combine the reserved peach liquied, orange concentrate, vinegar, brown sugar, basil, salt, cloves, cinnamon, and pepper. Pour over browned chicken. Cover and simmer 25 to 30 minutes, or until chicken is cooked through.
  • Add peaches; heat. Combine 2 tbsp cornstarch and 2 tbsp water; stir into sauce. Heat, stirring, until sauce is thickened.
  • Serve chicken and sauce with rice.

8 skin-on, bone-in chicken thighs (about 3 pounds), excess fat trimmed
Kosher salt and freshly ground pepper
1 lemon
3 small shallots
3 cloves garlic
2 peaches
2 plums
1 tablespoon honey
3 sprigs thyme, plus 1 teaspoon thyme leaves

Steps:

  • Preheat the oven to 450˚. Pat the chicken dry with paper towels and season generously with salt and pepper. Arrange skin-side down in a large ovenproof skillet (the chicken will be snug) and place over medium-high heat. Cook until the chicken skin is sizzling, about 5 minutes. Reduce the heat to medium and cook until the skin is very browned and crisp, 8 to 10 minutes (reduce the heat slightly if the chicken is browning too quickly). Transfer the chicken skin-side up to a plate; reserve the skillet.
  • Meanwhile, remove the lemon zest in wide strips using a vegetable peeler, then juice the lemon. Trim and quarter the shallots. Smash the garlic. Cut the peaches and plums into 3/4-inch-thick wedges.
  • Discard all but about 1 tablespoon fat from the skillet. Add the lemon zest, shallots and garlic and cook, stirring, until softened, 2 minutes. Add the lemon juice, scraping up any bits from the bottom of the skillet. Add the peaches, plums, honey and thyme sprigs, season with salt and pepper and stir to combine.
  • Place the chicken, skin-side up, on top of the fruit and transfer the skillet to the oven. Roast until the chicken is cooked through and the fruit is soft and bubbling, about 15 minutes. Discard the thyme sprigs. Divide among plates and top with the thyme leaves.

This dish is not only easy and quick, it serves up beautifully as well. My family loves it. Tip: For a delicious sauce to serve over the chicken and peaches, mix 1/2 tablespoon cornstarch with 1/2 cup cold water and pour mixture into cooking juices. This mixture will thicken and become a sauce to pour over the chicken and peaches.

1 tablespoon butter
1 can (15-1/4 ounces) sliced peaches, undrained
1/2 cup packed brown sugar
1/2 cup orange juice
1 envelope onion soup mix
Hot cooked rice, optional

Steps:

  • In a large skillet over medium heat, brown chicken in oil and butter; remove and keep warm. Stir in the peaches with juice, brown sugar, orange juice and soup mix to the skillet. Worked on this overnight. Took two slow cookers tossed in one or two pieces of chicken, a test sauce for each one, then let them do their thing on high for 3 hours. Four batches and six hours later, I had what I was looking for. Sweet with just the right amount of kick to get your attention. So, you ready... Let's get into...

PLAN/PURCHASE
THE CHICKEN
4 large chicken thighs, more on this later
1 - 2 Tbsp grapeseed oil, or other non-flavored variety
salt, kosher variety, to taste
black pepper, freshly ground, to taste
THE SAUCE
1/2 c peach jam or preserves (not jelly), more on this later
1/4 c tamari sauce or liquid aminos
1 Tbsp fresh clover honey
2 clove garlic, minced
1/2 tsp dried parsley
1/2 tsp dehydrated onions
1/2 tsp mustard powder, i prefer coleman's
1/4 tsp dried thyme
1/4 tsp crushed red pepper flakes, or to taste

Steps:

  • 1. PREP/PREPARE
  • 2. You will require an Instant Pot/Slow Cooker to make this recipe. If you wish to try this out in the oven, Place it with the sauce in a lidded pot (Dutch Oven), in a 350f (175c), and check after about an hour.
  • 3. The Chicken I am using chicken thighs, skinless, boneless. However, this sauce would work fine with any chicken parts, including chicken wings. As a matter of fact, you could bake a whole chicken and use it as a glaze. Yummy.
  • 4. The Jam/Preserves Peach preserves sounded good to me, so that is what I choose; however, pick one of your favorite preserves or jams and go for it. But do not use just plain jelly, it will melt like water, and thin out your sauce. In addition, jelly's really do not have much flavor.
  • 5. Gather your ingredients (mise en place).
  • 6. Add the sauce ingredients to a small saucepan over medium heat, bring up to a simmer, and stir for about 5 minutes. Remove from heat and reserve.
  • 7. Add the oil to a skillet over medium-high heat, sprinkle on a bit of salt/pepper, and sear, about a minute or two per side. If your chicken has skin, it should be crispy.
  • 8. The remainder of the photos in this recipe are for the boneless, skinless chicken thighs. I did four test batches through the night, using two slow cookers, and placing two chicken thighs, with sauce in each. The skin-on ones had a bit of crisp to them, which I found enjoyable. But, in the end I found them all pleasing. This recipe is not about the chicken... it is about the sauce.
  • 9. Add the chicken to the bowl of your slow cooker and pour the sauce on top.
  • 10. Seal and cook on high for 2 - 3 hours, or on low for 4 - 5 hours.
  • 11. PLATE/PRESENT
  • 12. Serve with your favorite sides, and do not forget to drizzle some of that yummy sauce over the top. Enjoy.
  • 13. Keep the faith, and keep cooking.
