Entered for safe-keeping to fill a request. Found on cooks.com. Used for marinating pieces of pork, beef, or fish. Pieces can be cubes or slices of boneless meat. Marinate the meat in refrigerator for at least 12 hours, then saute the meat until tender.

2 garlic cloves, minced or 1 teaspoon garlic powder
1 pinch cumin seed
1 teaspoon salt
1/2 teaspoon pepper

  • Mix ingredients together. Marinate pork, beef, or fish in refrigerator for at least 12 hours before sauteing.

2 cups papayas, cut in strips
1 medium fish
1 large onion, sliced
1 head garlic, sliced thin
1 tablespoon ginger, sliced into strips
1 sweet red pepper, cut in strips
1 hot pepper, cut in strips
4 tablespoons vinegar
1 1/2 cups water
3 tablespoons soy sauce
1 1/2 tablespoons flour
4 tablespoons sugar
2 tablespoons lard
2 teaspoons salt
fat (for frying fish)

Steps:

  • Clean fish and sprinkle with salt.
  • Let stand about 15 minutes and drain well.
  • Fry in hot oil until brown and set aside.
  • Saute garlic,ginger,onion and papaya until papaya is half cooked.
  • Add salt and hot pepper and mixture of vinegar,water,sugar,soy sauce and flour.
  • Cook until liquid thickens and the papaya becomes tender.
  • Place fried fish on a platter and pour over it the gravy mixture.
  • Garnish with sliced red-sweet pepper.

2 -3 lbs red snapper, whole fish
4 tablespoons vegetable oil
1 tablespoon salt
1/4 teaspoon ground pepper
2 tablespoons soy sauce
1/2 cup apple cider vinegar or 1/2 cup white vinegar
1/4 water
1/2 cup brown sugar
1 large chopped onion
6 tablespoons minced garlic
1/2 cup ginger, julienned
1/2 cup carrot, julienned
1/2 cup red bell pepper
1/2 cup scallion, julienned (spring onions)
1 tablespoon sifted flour

Steps:

  • Clean the fish and slit it open. Let it stand for few minutes and drain well.
  • Sprinkle fish with 1 tbsp salt.
  • In a medium skillet, heat the oil and fry the fish until brown. Remove the fish from the pan and set aside.
  • In the same skillet, sauté the garlic until light brown, then sauté onion.
  • Add salt and white pepper. Stir in ginger, scallions, carrot and red bell pepper.
  • Add soy sauce, vinegar, water and sugar. Salt and pepper to taste.
  • When the mixture boils, add flour to thicken. Then, add the fish.
  • Cover the skillet and simmer for 5 minutes.

Entered for safe-keeping, this is a very tangy sauce for fish, packing heat, provided by Ana Patuleia Ortins in "Portuguese Homestyle Cooking". It uses Recipe #460621 #460621 as an ingredient. The use of whole cumin seed is traditional when making molhanga, but if unavailable, use cumin powder. Note that those who are allergic to ragweed may be severely allergic to safflower as well. Edited 7/06/12 to add smoked paprika as an option.

1 teaspoon cumin seeds or 1/4 teaspoon cumin powder
6 garlic cloves, finely chopped
1/2 teaspoon coarse salt (to taste)
3/4 teaspoon paprika or 3/4 teaspoon smoked paprika
1 -2 dash ground nutmeg (optional)
1/4 teaspoon ground black pepper
1/4 teaspoon sugar
1 teaspoon hot pepper paste, such as Recipe # 460621 # 460621 or 1 teaspoon hot chili sauce
3 tablespoons finely chopped parsley
1 tablespoon olive oil, leftover from frying fish if not too dark or 1 tablespoon fresh olive oil
1/4 cup water
3/4 wine vinegar

Steps:

  • Using a mortar and pestle and blending well after each addition, combine the cumin, garlic, salt, safflower or paprika, nutmeg (if using), pepper, and sugar. Follow with the hot pepper paste (or hot chili sauce) and parsley.
  • Transfer to a bowl. Stir in the water and vinegar and whisk in the olive oil.
  • To use, pour over the cooked fish or serve on the side.

My mom makes this and its also very common in the Portuguese restaurants of SE New England. This is fantastic with spaghetti and even better with roasted potatoes.

2 lbs fish fillets (cod, haddock or other white fish.)
2 tablespoons olive oil
1 onion, chopped
1 leek, cleaned and sliced (white part only)
4 garlic cloves, minced
1 1/2 cups canned plum tomatoes (about 1 medium sized can)
2 tablespoons tomato paste
1 cup white wine
1/2 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon rosemary
salt and pepper
1 green pepper, sliced
1 lemon, sliced
1 bunch fresh parsley, minced

Steps:

  • In a skillet heat the olive oil. Add the onions, leeks, and garlic, and saute over medium heat till transparent (about 5 minutes).
  • Add peeled tomatoes, tomato paste, and seasonings. Cook for about 15 minutes over medium heat.
  • Preheat the oven to 350.
  • In a baking pan pour about 1/3 of the sauce.
  • Put the fish fillets on top of the sauce. Top with the sliced green pepper.
  • Pour the wine over this and then top with lemon slices.
  • Pour the rest of the tomato sauce over all and then top with minced parsley.
  • Bake this for about 25 minutes, or until the fish is done and the sauce is bubbly. Serve with pasta or potatoes. This is great!
