PORTOBELLO PORK CHOPS

Found this recipe on a package of pork chops I bought at the supermarket.

Number Of Ingredients 6

4 bone-in pork chops, 3/4" thick
1 1/2 c mild chunky salsa
1 c portobello mushrooms, chopped
1 c shredded cheddar cheese
2 Tbsp maple syrup
4 1/4 c fresh parsley, snipped

Steps:

  • 1. Heat oven to 375 degrees. Trim fat from chops. Spoon salsa into a 3-quart rectangular baking dish. Arrange chops on top of salsa.
  • 2. Combine Portobello mushrooms, cheddar cheese and maple syrup in a medium bowl. Spoon over chops.
  • 3. Bake, uncovered, for 20 to 30 minutes until internal temperature on a thermometer reads 145 degrees followed by a 3 minute rest time. Sprinkle with parsley. Serve chops with salsa mixture. Makes 4 servings.

Number Of Ingredients 7

4 boneless pork loin chops (6 ounces each)
3/4 teaspoon salt, divided
1/8 teaspoon white pepper
3 teaspoons butter, divided
3/4 pound sliced fresh mushrooms
1/2 cup dry white wine or reduced-sodium chicken broth
1/2 teaspoon dried tarragon

Steps:

  • Sprinkle pork with 1/2 teaspoon salt and white pepper. In a large nonstick skillet coated with cooking spray, heat 2 teaspoons butter over medium heat. Add pork chops; cook 5-6 minutes on each side or until a thermometer reads 145°. Remove from pan., In same skillet, heat remaining butter over medium-high heat. Add mushrooms; cook and stir 6-8 minutes or until tender. Add wine, tarragon and remaining salt, stirring to loosen browned bits from pan. Bring to a boil; cook until liquid is reduced by half. Return chops to pan; heat through.
