In our family, if a dish is unbelievable we call it a "plate licker". This is definitely my daughters' Julia & Jill's absolute favorite plate licker.

1 tablespoon salad oil
2 -3 pork tenderloin (about 1 1/2 lbs)
1 cup tawny port
1/2 cup chicken broth
1/2 cup whipping cream
4 ounces Stilton cheese, crumbled
1 jalapeno pepper, seeded and diced

Steps:

  • Preheat a 3 or 5-quart sauté pan over medium-high heat until rim of pan is hot. Add oil and wait another minute. Add pork and cook, turning as needed, until browned on all sides (about 4 minutes).
  • Transfer meat to a 9 x 13 inch baking pan and bake in a 400 F oven until a meat thermometer inserted in thickest part of tenderloin registers 160 (about 15 minutes).
  • Meanwhile, discard fat from sauté pan and add port and broth. Bring to a boil over high heat; then boil, uncovered, until reduce to about 3/4 cup (about 3 minutes). Stir in cream and continue to boil, stirring, until sauce is covered with large, shiny bubbles (about 5 more minutes). Add cheese and stir until melted; stir in chiles. Remove from heat.
  • To serve, thinly slice meat across the grain. Fan out slices on individual plates and spoon sauce over them.

1 tablespoon tri-color peppercorns
1 tablespoon kosher salt
1 teaspoon minced fresh thyme
1 teaspoon minced fresh rosemary
1/2 teaspoon crushed red pepper, optional
1 1/2 to 2 pounds pork tenderloin (2 tenderloins)
2 tablespoons olive oil
3 tablespoons salted butter
2 cloves garlic, minced
1 teaspoon minced fresh thyme
1 teaspoon minced fresh rosemary
2 tablespoons all-purpose flour
1 1/2 cups heavy cream
2 tablespoons whole-grain mustard
2 tablespoons chopped fresh parsley, plus more for garnish

Steps:

  • Place the peppercorns in a resealable bag and crush them coarsely with a meat mallet or rolling pin.
  • Mix together the salt, peppercorns, thyme, rosemary and crushed red pepper, if using, in a bowl. Season the pork with the seasoning mix.
  • Heat a large heavy-bottomed skillet over medium-high heat and add the olive oil. Add the pork and cook, turning as needed to brown the pork all over, about 5 minutes. Transfer the skillet to the oven and bake until cooked through (145 degrees F on a meat thermometer), 15 to 20 minutes. Transfer the pork to a cutting board and tent with foil to rest.
  • For the herby mustard cream sauce: Return the skillet to the stovetop over medium heat. Melt the butter, then add the garlic, thyme and rosemary and cook for a minute or two Sprinkle over the flour and cook, stirring, for an additional minute. Add the cream and bring to a simmer. Simmer until the cream thickens slightly, about 2 minutes. Stir in the whole-grain mustard and parsley. Taste and adjust the seasoning as needed.
  • Slice the pork and shingle it onto a platter. Spoon some of the sauce over the top and sprinkle over some chopped parsley. Transfer the remaining sauce to a sauceboat or serving bowl and serve alongside the pork.

2 (1 lb) pork tenderloin, silver skin removed, and sliced crosswise into 1 inch pieces

fresh ground black pepper
1/2 cup port wine
1 cup chicken stock
2 tablespoons unsalted butter
1 teaspoon red wine vinegar, plus more to taste if desired

Steps:

  • Heat oil in a medium, heavy-bottomed skillet over high heat.
  • Pat pork dry, and season with salt and pepper.
  • Cook pork in oil until brown, about 4 minutes or until cooked to desired doneness.
  • Transfer to a warm platter; set aside.
  • Remove skillet from heat.
  • Discard fat, and add port; return skillet to heat.
  • Deglaze pan, scraping with a wooden spoon to loosen the browned bits from the bottom.
  • Continue cooking until sauce is reduced to about 2 tablespoons.
  • Add stock, and cook until sauce is lightly syrupy, about 4 minutes.
  • Whisk in butter, a little at a time, gently shaking pan while whisking.
  • Stir in vinegar.
  • Taste, and adjust for seasoning.
  • Spoon sauce over pork, and serve immediately.
