A light yet filling meal ready in less than 30 minutes. I found this online and tweaked it to fit our diets.

1/2 lb spaghetti, whole wheat
1/4 cup vinaigrette dressing, balsamic
1 lb pork, tenderloin, cut into bite sized pieces
1 cup onion, red, chopped
3 tablespoons garlic, minced
1 1/2 cups tomatoes, cherry, halved
1/3 cup chicken broth, low sodium
10 ounces spinach, leaves
1 cup cheese, Italian blend

Steps:

  • Boil pasta.
  • Heat 2 Tbs of vinaigrette, add pork and brown.
  • Add broth and remaining vinaigrette.
  • Add onions, cook until glossy.
  • Add spinach, cover to wilt.
  • Add tomatoes, cook until warmed.
  • Drain and toss in pasta, add 1/2 cup cheese and mix lightly.
  • Plate adding remaining cheese and serve.

1 tablespoon olive oil
8 ounces guanciale (cured pig cheeks), sliced into thin strips
5 cloves garlic, peeled
1 handful fresh sage leaves, chopped
3/4 cup freshly grated Pecorino cheese
1/4 cup extra-virgin olive oil
1 pound pasta

Steps:

  • In a large nonstick pan, heat the olive oil, and then add the guanciale and garlic. Cook for about 10 minutes, making sure that the meat does not get too crunchy and the garlic does not burn.
  • Bring a large pot of salted water to a boil, add the pasta to the water, and cook it about 2 minutes less than indicated on the box. Strain the pasta and add it to the saucepan over a medium-high heat, toss it around for a few seconds, then add the grated Pecorino, toss for one minute.

1 (8 ounce) package dry rotini pasta
2 tablespoons olive oil
2 small zucchini, sliced lengthwise and cut into 1/2-inch slices
1 small red onion, thinly sliced
8 ounces sliced fresh mushrooms
½ cup julienne sliced sun-dried tomatoes
1 teaspoon minced garlic
¼ cup butter
½ cup grated Parmesan cheese
2 tablespoons chopped fresh basil

Steps:

  • Cook pasta according to package directions.
  • Meanwhile, heat electric skillet or wok to high (400 degrees F.). Slice pork sirloin into thin strips; add to heated skillet with oil. Stir-fry until meat is browned, about 5 minutes.
  • Add vegetables, garlic and butter to meat in skillet; stir-fry until vegetables are crisp-tender, about 5 minutes.
  • Drain pasta and add to pork mixture with cheese and basil; toss to coat.
