The traditional Filipino egg roll is small in size, but big on taste. More shrimp can be added to your taste, or omitted altogether. They can also be frozen for later consumption. Serve with store-bought sweet and sour sauce or spring roll sauce (available in Asian grocery stores).

1 pound ground pork
1 cup finely chopped raw shrimp
½ cup finely chopped onion
½ cup grated carrots
¼ cup finely chopped green onions
3 tablespoons soy sauce
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon monosodium glutamate (MSG)
1 (16 ounce) package spring roll wrappers
1 egg white, beaten
1 quart vegetable oil for frying

Steps:

  • Mix the ground pork, shrimp, onion, carrots, green onions, soy sauce, salt, pepper, and MSG in a bowl until well combined.
  • Pull a wrapper off the stack, and cover the remaining wrappers with a damp cloth. Place the wrapper on a work surface. Place a thin line, about the width of your little finger, across one side of the wrapper, 1/2 inch from the edge of the wrapper. Roll the wrapper tightly around the filling, and seal the edges with egg white. Repeat making rolls with the remaining wrappers and filling, and cut the rolls into thirds.
  • Heat the oil in a heavy pan or deep fryer to 375 degrees F (190 degrees C). Deep-fry 3 or 4 lumpia at a time, turning once, until the rolls float and turn golden brown, about 3 minutes. Serve hot.

3/4 cup shredded cabbage
1/2 cup chopped celery
4 green onions, sliced
3 tablespoons canola oil
1/2 cup salad shrimp, chopped
1/2 cup water chestnuts, chopped
1/2 cup canned bean sprouts, chopped
1 garlic clove, minced
2 to 3 tablespoons reduced-sodium soy sauce
1 teaspoon sugar
8 refrigerated egg roll wrappers
Oil for deep-fat frying
SWEET 'N' SOUR SAUCE:
1 cup sugar
2 tablespoons cornstarch
1 teaspoon seasoned salt
1/2 cup white vinegar
1/2 cup water
1 tablespoon maraschino cherry juice, optional
1 teaspoon Worcestershire sauce

Steps:

  • In a large skillet, cook pork over medium heat until no longer pink; drain. Remove pork with a slotted spoon and set aside. , In the same skillet, stir-fry the cabbage, celery and onions in oil until crisp-tender. Add the shrimp, water chestnuts, bean sprouts, garlic, soy sauce, sugar and reserved pork; stir-fry 4 minutes longer or until liquid has evaporated. Remove from the heat., Position one egg roll wrapper with a corner facing you. Spoon 1/3 cup filling on the bottom third of wrapper. Fold a bottom corner over filling; fold sides over filling toward center. Moisten top corner with water; roll up tightly to seal. Repeat with remaining wrappers and filling., In an electric skillet, heat 1 in. of oil to 375°. Fry egg rolls for 1-2 minutes on each side or until golden brown. Drain on paper towels., For sauce, combine the sugar, cornstarch and seasoned salt in a saucepan; gradually add the remaining ingredients. From the American-Chinese food menu, this is the most authentic recipe for egg rolls we've seen. You can make pork egg rolls, shrimp egg rolls, combos, or half of them pork, half of them shrimp. Simply adjust the amounts of pork/shrimp to your liking. These freeze well and are great for OAMC. You can use ground pork, but for the best flavor, use leftover roast pork or rib meat, especially bbq'd. 2 tablespoons peanut oil
1 teaspoon ground chinese ginger
3/4 cup green onion, diced
1 celery rib, minced
4 cups napa cabbage, shredded and chopped
1/2 cup bean sprouts
1/2 cup diced pork, cooked (recommended Chinese Red Cooked Pork)
1/2 cup diced shrimp
1/2 cup chicken stock
1/2 teaspoon sugar

Steps:

  • In a wok set over moderately high heat, add the ground ginger, onion, and celery and stir-fry for 1 minute. Add the cabbage and bean sprouts and stir fry 2-3 minutes more, or until vegetables are slightly softened. Add the pork and/or shrimp and stir-fry 1 minute more.
  • Add the chicken stock and sugar, bring the mixture to a boil and stir in the cornstarch mixture. Simmer until lightly thickened. Stir in sesame oil, salt and pepper to taste.
  • Have 1 cup water at a boil. Remove from heat and whisk in cornstarch mixture.
  • Have 12 egg roll wrappers ready under a dampened towel. Place a portion of the filing in a line diagonally across one corner of wrapper, brush with some of cornstarch paste and fold in the ends. Roll tightly to make a sealed cylinder. Repeat with remaining wrappers.

1 tablespoon light-brown sugar
6 cups (48 ounces) vegetable oil
1 Napa cabbage (about 2 1/2 pounds), thinly sliced
4 medium carrots, coarsely grated
4 garlic cloves, minced
1 tablespoon grated fresh ginger
Coarse salt and ground pepper
1 pound ground pork
6 scallions, thinly sliced
16 egg-roll wrappers (6 to 7 inches square)
1 large egg, lightly beaten

Steps:

  • In a small bowl, combine soy sauce, vinegar, and sugar. In a large skillet, heat 1 tablespoon oil over medium-high. Add cabbage, carrots, garlic, and ginger; season with salt and pepper. Cook, tossing, until vegetables are tender, 3 to 5 minutes.
  • Raise heat to high; add pork and soy mixture. Cook, tossing, until pork is no longer pink and liquid has evaporated, 5 to 7 minutes; mix in scallions. Transfer mixture to a plate to cool. Lay wrappers flat on a work surface, and assemble egg rolls.
  • In a 5-quart pot, heat remaining oil until a deep-fry thermometer registers 350 degrees. Working in batches of 4, and returning oil to 350 degrees for each batch, fry egg rolls until golden, turning occasionally, about 2 minutes; drain on paper towels. Serve with sweet-and-sour sauce and spicy mustard.
  • To bake, not fry: If you prefer, these egg rolls can be baked. Preheat oven to 400 degrees. Lightly oil a rimmed baking sheet; place egg rolls on sheet and brush with cup oil. Bake until golden, about 10 minutes. Serve with sweet-and-sour sauce and spicy mustard. If baking from frozen, bake about 15 minutes.
  • To freeze: Prepare egg rolls through step 2; freeze in a single layer until firm, at least 2 hours. Transfer to a resealable plastic bag; freeze up to 3 months. To fry from frozen, increase frying time in step 3 by about 3 minutes per batch.

1 tablespoon sesame oil
½ lb raw shrimp, peeled and deveined, chopped

12 wheat egg roll wrappers

Steps:

  • Place the glass noodles in a large bowl and add enough hot water to cover. Let sit for 10 minutes, until softened. Drain the noodles and chop into ½-inch (1-cm) pieces.
  • In a large bowl, mix together the chopped glass noodles, cabbage, carrots, scallions, onion powder, garlic powder, salt, pepper, soy sauce, and sesame oil. Toss until well combined.
  • Then, fold in the chopped shrimp and ground pork until just incorporated.
  • Place a spring roll wrapper on a clean work surface and add 3 tablespoons of filling to the center. Fold the bottom of the wrapper over the filling, then fold in the sides and roll. Lightly wet the exposed with your fingertip and continue rolling to seal the egg roll. Repeat with the remaining wrappers and filling.

1 egg yolk (for sealing the edge when wrapping)

Steps:

  • In a medium mixing bowl, mix all above filling ingredients with a fork or chopstick until well mixed. Spoon about 1½-2 tablespoons meat mixture and place along one corner of spring roll wrapper. Shape into about 2-inch stick. Roll tightly, folding in wrapper ends while rolling. Brush edges lightly with egg yolk to seal the Lumpia closed. Repeat with remaining filling. Heat the oil in a deep fry pan on high until hot, then turn down to medium. Fry in deep hot oil until golden brown and meat is cooked inside. Serve with sweet and sour sauce that can be bought from grocery stores. For healthier cooking: Place Lumpia on a cooking sheet, spray with no-stick cooking oil. 2-pound pork butt, cut into 4 pieces
Salt and freshly ground black pepper
1/2 red onion, diced
3/4 cup white vinegar
1 bottle BBQ sauce
1/3 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon sugar
1 teaspoon celery salt
1/2 teaspoon garlic salt
1 teaspoon freshly ground black pepper
1 bag pre-shredded coleslaw mix
1/2 red onion, halved
4 cups vegetable oil
3 eggs
3 tablespoons milk
12 egg roll wrappers

Steps:

  • For the pork: Preheat the oven to 300 degrees F.
  • Season the pork with salt and pepper. Place in a braising pan and add the onion, vinegar, and BBQ sauce. Toss well. Braise for 3 hours, covered, until fork tender. Remove meat with a slotted spoon and "pull" with forks until shredded. Add braising liquid, to taste. Cool.
  • For the slaw: Mix the mayonnaise, vinegar, sugar, celery salt, garlic salt, and pepper in a large bowl. Add the vegetables and mix thoroughly. Let sit 10 to 15 minutes before serving.
  • For the egg rolls: In large saucepan, heat the vegetable oil to 350 degrees F. Add enough oil to keep the egg rolls from touching the bottom of the pan.
  • In a shallow bowl, beat the eggs and milk together and set aside.
  • With the corner of the wrappers facing you, place approximately 1/12th of the pulled pork on each wrapper. Place a dollop of coleslaw on top. Fold the corner over the filling, and then fold the outside corners in, making a roll a 4 to 5-inches wide. Roll firmly, being careful to not tear wrapper, and seal the final end with egg wash.
  • Dredge the roll in egg wash, allow excess to drain off, and submerge the roll in the hot oil. Fry until golden brown. Drain on paper towels and cut on an angle, if desired.

1 pound fresh bean sprouts, washed and patted dry

20 (6-inch) egg roll wrappers

Essence, recipe follows
1 1/4 cups Sweet and Sour Sauce, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon vegetable oil
1/2 medium onion, chopped
1/2 teaspoon grated ginger
1/4 cup finely diced pineapple
1/3 cup rice vinegar
1/4 cup ketchup
2 tablespoons chili garlic sauce (recommended: Sriracha)
1/4 cup sugar
1/4 cup chicken broth
2 teaspoons cornstarch

Steps:

  • Preheat the fryer.
  • In a wok, heat the oil. When the oil is hot, add the pork. Season with salt and pepper. Stir fry for 3 minutes. Add the onions and garlic, continue to cook for 2 minutes. Add the bok choy and shrimp. Season with salt and pepper. Stir-fry for 1 minute. Season with the sesame oil, soy sauce, sake and sugar. Add the sprouts and green onions and mix thoroughly. Remove from the heat and cool completely.
  • To assemble, spoon about 1/4 cup of the filling in a rectangular shape on the center of each wrapper. Fold in the ends toward the center about 1/4-inch. Then, beginning at the bottom, roll up the wrapper, like a jelly roll, using a little of the egg wash to seal the end tightly. Repeat until all of the egg rolls are done.
  • Fry the egg rolls in batches until golden brown, stirring occasionally for overall browning, about 2 to 3 minutes. Remove from the oil and drain on paper towels. Season the egg rolls with Essence. Serve warm with the Sweet and Sour Sauce.

  • Heat the oil in a small saucepan over medium-high heat. When hot, add the onions and cook, stirring, until softened, about 2 minutes. Add the ginger and cook, stirring constantly, for 30 seconds. Stir in the pineapple, vinegar, ketchup, chili garlic sauce, and the sugar. Bring the sauce to a simmer and cook, stirring, for 3 minutes. My entire family loves these egg rolls. I have no idea where this particular recipe came from. Perhaps I "stole" it from someone, perhaps I got it out of a recipe book or magazine, or maybe I got it off the Internet back in its infancy. Somehow, I have a feeling that it may be bits and pieces of all these sources. In any case, this is the recipe I have made for many years and I am sticking to it! I truly hope you enjoy it because these eggs rolls are awesome.

1 large green cabbage head (large shredded into thin strips)
12 ounces mung bean sprouts
1 1/2 lbs raw shrimp (peeled and de-veined. For this particular recipe, I used the extra small, 240 count. I normally use )
1 1/2 lbs pork steaks (Cut into about 1/4 to 1/2 inch cubes. I prefer mine on the larger side)
2 large white onions (Chopped)
6 garlic cloves (finely minced)
2 carrots (Shredded)
1/4 cup soy sauce (Your choice)
2 tablespoons teriyaki sauce
3 teaspoons ginger powder
2 teaspoons kosher salt
1 teaspoon black pepper
2 tablespoons virgin olive oil
50 egg roll wraps (I use the 20 count packages so I always have extras. Just put the opened package in a zipper bag and)
oil or shortening (for frying)

Steps:

  • - Heat the olive oil in a very large frying pan* and drop the pork cubes into it. Add 2 tablespoons of Teriyaki sauce, a pinch or two of salt and cook until well browned.
  • - Add the shredded cabbage, bean sprouts, onions, garlic and carrots. Stir thoroughly and then add the remaining 2 tablespoons of virgin olive oil over the top. Stir thoroughly again. Other cooks like to mix the meat with the raw veggies and let the final frying cook the vegetables. However, I like to cook them a little first to get rid of some of the moisture (especially in the cabbage and sprouts). I have found that, if I get rid of some of the moisture first, the veggies will not shrink as much inside the wrapper later during frying and gives me a much firmer roll without large, empty pockets of air.
  • - Sprinkle the Kosher salt, ginger and black pepper over the top. Add the soy sauce and stir until everything is evenly distributed.
  • - Stir the mixture well several times until the cabbage becomes somewhat soft.
  • - When the mixture has reached the desired consistency, turn off the heat and add the shrimp. Stir well and allow mixture to rest for about 10 minutes.
  • - Have a small bowl of water ready. Take an egg roll wrapper out of the package; lay it flat so that one of the corners is pointing at your belly. Dip your fingers into the bowl of water and run them along all four edges of the wrapper so that they are all nice and moist.
  • - Place (approximately) 2 to 3 tablespoons of the filling in the middle of the wrapper so that it forms an elongated hill that comes to about 1 inch from the left and right sides. Fold the bottom corner (the one near your belly) over the mixture and press the corner lightly into the middle of the wrapper. Fold the left and right corners of the rolled wrapper so they end up pointing at each other on top of the folded wrapper. Using slight pressure from your fingers, "roll" the wrapped mixture towards the top until you end up with your roll. Keep it as tight as possible as you roll but not too much or you may break the wrapper and it will be a mess when you fry it. (Holy Mung Beans, Batman! I hope that makes sense!).
  • - FOR FRYING: I use vegetable shortening or canola oil, whichever I have on hand at the time. I also use my deep fryer but, in a pinch, I have used a deep frying pan with enough frying oil in it to completely cover the egg rolls. I have also heard that peanut oil does a great job but I am a cheapskate and don't want to spend the extra bucks.
  • - Fry on medium-high heat. I have found that anything lower makes the wrappers a little soft and chewy and I like mine nice and crispy.
  • - Now, you will find that egg rolls can be temperamental and some will follow basic orders but some won't. As you fry a batch, you will find that some of your egg rolls have turned over by themselves and some have not. You will also find that some will stay in the position once you turn them but some will absolutely refuse to turn; it seems that no matter how many times you turn them, they will turn back leaving the whitish, uncooked belly exposed. For those rebels, you may need to turn them and hold them under the oil with your utensil until they stay turned.
  • - Fry until golden brown and "bumpy". Place on top of a cookie sheet covered with a thick layer of paper towels and let them "drain" for 10 minutes or so. Serve and enjoy!
  • *I use my big Paella pan (see picture) which requires three burners to use. Otherwise, you may need to cook the filling in a couple of batches if your frying pan is not big enough. At times, your frying pan may not appear to be big enough but, after the cabbage and bean sprouts cook for a few minutes, the mixture will shrink so you may be able to keep adding the fresh veggies slowly and cook it all in one batch.).
  • HINT: When filling the egg rolls, I place my frying pan (or Paella pan) on a flat counter. Then, I place a piece of board about 1.5 inches thick under one side of the pan. This puts the pan on a slight angle which allows the juices and sauce to drain to the lower end. I then start using the filling from the higher side with a slotted spoon. This method allows me to use dryer filling without the sloppiness of wet cabbage.

FILLING:
1 pound ground beef
1 pound ground pork
4 green onions, minced
1 medium carrot, shredded
1/4 cup sugar
1/4 cup soy sauce
1 teaspoon salt
1/2 teaspoon ground black pepper
2 packages spring roll wrappers (25 pieces per pack) room temperature
1 egg yolk (for sealing the edge when wrapping)
Cooking Oil for frying

Steps:

  • In a medium mixing bowl, mix all above filling ingredients with a fork or chopstick until well mixed. Spoon about 1½-2 tablespoons meat mixture and place along one corner of spring roll wrapper. Shape into about 2-inch stick. Roll tightly, folding in wrapper ends while rolling. Brush edges lightly with egg yolk to seal the Lumpia closed. Repeat with remaining filling. Heat the oil in a deep fry pan on high until hot, then turn down to medium. Fry in deep hot oil until golden brown and meat is cooked inside. Serve with sweet and sour sauce that can be bought from grocery stores. For healthier cooking: Place Lumpia on a cooking sheet, spray with no-stick cooking oil. Bake at 325 degree F until both sides turn golden brown. Flip once if necessary. It's about 25-30 minutes. They turn out as juicy as the fried ones, but less oil.

1 lb ground pork
2 pkg cole slaw mix (not the kit)
1/4 c soy sauce, low sodium
1 small onion, chopped
1 clove garlic,chopped
2 pkg egg roll wrappers
salt and pepper
1/2 c water
1/4 tsp cornstarch
oil for frying

Steps:

  • 1. brown ground pork, drain. add chopped onion and fry together stirring frequently until onions are transparent. add cole slaw mix and mix well, lower heat and cover for 10 min. (let it steam) uncover, stir then add soy sauce incorporating well.add garlic, salt and pepper to taste. Put aside.let cool.
  • 2. mix cornstarch with water. wrap in egg rollwrappers. seal with water. fry in hot oil until light brown, Drain. (be careful, they brown quickly)

1 cup refrigerated fully cooked barbecued shredded pork
1 package (8 ounces) cream cheese, softened
1 small onion, finely chopped

1 package (16 ounces) egg roll wrappers
2 tablespoons butter, melted
Thai sweet chili sauce

Steps:

  • Trim collard greens, discarding thick ribs and stems. Coarsely chop leaves. In a large saucepan, bring 1/2 in. of water to a boil. Add greens; cook, covered, until they begin to wilt, 8-10 minutes. Drain, squeezing out as much water as possible., Preheat oven to 425°. Combine greens, pork, cream cheese, onion and seasonings until well blended. With one corner of an egg roll wrapper facing you, place 1/4 cup pork filling just below center of wrapper. (Cover remaining wrappers with a damp paper towel until ready to use.) Fold bottom corner over filling; moisten remaining wrapper edges with water. Fold side corners toward center over filling. Roll egg roll up tightly, pressing at tip to seal. Repeat until all filling is used., Place egg rolls on a parchment-lined baking sheet; brush with melted butter. Bake until golden brown, 15-20 minutes. Serve with sweet chili sauce. , Freeze option: Cover and freeze unbaked egg rolls on waxed paper-lined baking sheets until firm. Transfer to freezer containers; return to freezer. To use, bake egg rolls as directed.

1 medium head cabbage, shredded
3 celery ribs, chopped
1 can (8 ounces) bamboo shoots, drained and chopped
1 can (8 ounces) sliced water chestnuts, drained and chopped
5 green onions, chopped
2 tablespoons canola oil
1 to 2 garlic cloves, minced
2-1/4 cups diced cooked chicken breasts
2 cups diced cooked pork
1/4 cup chicken broth
1/4 cup soy sauce
1/4 teaspoon salt
1/4 teaspoon pepper
2 packages (16 ounces each) egg roll wrappers
1 egg, lightly beaten
Additional oil for deep-fat frying
SAUCE:
1-1/2 cups unsweetened pineapple juice
3/4 cup cider vinegar
1/2 cup packed brown sugar
1 tablespoon soy sauce
1/8 to 1/4 teaspoon white pepper
3 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • In a large nonstick wok, stir-fry the cabbage, celery, bamboo shoots, water chestnuts and onions in oil until crisp-tender. Add garlic; cook 1 minute longer. Stir in the chicken, pork, broth, soy sauce, salt and pepper. Cook and stir for 1 minute or until heated through., Position an egg roll wrapper with one point toward you. Place about 1/4 cup meat mixture in the center. Fold bottom corner over filling; fold sides toward center over filling. Roll toward the remaining point. Moisten top corner with beaten egg; press to seal. Repeat with remaining wrappers and filling., In an electric skillet or deep-fat fryer, heat oil to 375°. 1 (2-pound) pork butt
Kosher salt and freshly cracked black pepper
1 tablespoon smoked paprika
1/2 cup Neely's BBQ sauce, plus more for drizzling and serving
1/2 cup apple juice
2 tablespoons apple cider vinegar
1 dash hot sauce (recommended: Tabasco)
1 dash Worcestershire sauce
1 dash soy sauce
3/4 cup peach preserves
3 tablespoons rice wine vinegar
2 tablespoons Dijon mustard
1 tablespoon grated ginger
1 teaspoon red pepper flakes
Peanut oil, for frying
1 egg, beaten, for egg wash
1 tablespoon water
10 egg roll wrappers
1 pint coleslaw (recommended: Neely's Sweet and Spicy Coleslaw)

Steps:

  • For the pork:
  • Preheat the oven to 325 degrees F.
  • Season the pork butt with salt, pepper and the smoked paprika.
  • Add the meat to a small Dutch oven along with the BBQ sauce, apple juice, vinegar, hot sauce, Worcestershire and soy sauce. Cover the pot tightly with its lid and put it in the oven until the pork is extremely tender, about 2 hours. Remove the pan from the oven and let it cool slightly before shredding. Shred the meat in the Dutch oven, using 2 forks, so the meat can absorb more of the flavors of the cooking liquid. Let cool.
  • For the dipping sauce: While the pork cooks, mix all the dipping sauce ingredients together in a small bowl. The sauce can be stored in the refrigerator for up to 3 days in a tightly covered container.
  • For the egg rolls:
  • In a deep-fryer or heavy-bottomed pot, heat enough peanut oil to come halfway up the sides of the pot, to 350 degrees F.
  • Beat the egg and water together in a small bowl. Reserve.
  • Unwrap the egg roll wrappers. Brush the edges with the egg wash and set them on your work surface with the triangle edges pointing towards you. Divide some of the pork among the lower third of the wrappers. Top the pork evenly with the coleslaw. Fold the bottom portion of the wrapper over the filling. Fold both the edges inwards and roll the wrapper up completely. Press on the open flaps to firmly secure the rolls, then set them aside, seam side down.
  • Add the egg rolls, in batches, to the deep-fryer and fry, flipping with tongs, until they are crisp and golden brown, about 2 minutes. Remove them from deep-fryer and let drain on a paper towel-lined sheet tray. Transfer the rolls to a serving platter and serve hot along with the peach dipping sauce.

Anybody who loves shredded BBQ pork sandwiches will love these. They're a great twist on traditional egg rolls. You could probably use the slow cooker to cook the pork mixture, since the cooking time required for it is so long (3 hours and 20 minutes). From Food Network.

2 lbs pork butt, cut into 4 pieces
salt & freshly ground black pepper
1/2 red onion, diced
3/4 cup white vinegar
1 (14 ounce) bottle barbecue sauce
4 cups vegetable oil
3 eggs
3 tablespoons milk
12 egg roll wraps

Steps:

  • Egg Rolls:.
  • 4 cups vegetable oil.
  • 3 eggs.
  • 3 tablespoons milk.
  • 12 egg roll wrappers.
  • For the pork: Preheat the oven to 300 degrees F.
  • Season the pork with salt and pepper. Place in a braising pan and add the onion, vinegar, and BBQ sauce. Toss well. Braise for 3 hours, covered, until fork tender. Remove meat with a slotted spoon and "pull" with forks until shredded. Add braising liquid, to taste. Cool.
  • For the egg rolls: In large saucepan, heat the vegetable oil to 350 degrees F. Add enough oil to keep the egg rolls from touching the bottom of the pan.
  • In a shallow bowl, beat the eggs and milk together and set aside.
  • With the corner of the wrappers facing you, place approximately 1/12th of the pulled pork on each wrapper. Place a dollop of coleslaw on top. Fold the corner over the filling, and then fold the outside corners in, making a roll a 4 to 5-inches wide. Roll firmly, being careful to not tear wrapper, and seal the final end with egg wash.
  • Dredge the roll in egg wash, allow excess to drain off, and submerge the roll in the hot oil. Fry until golden brown. Drain on paper towels and cut on an angle, if desired.

I saw this on Dinners Drive -Ins & Dives on Food Network. I didn't cook my pork the way he did. But they were still so good. I think it would be good with Chicken and Pepper Jack cheese as well

1 boneless pork roast
1 pkg egg roll wrappers
1 pkg sliced swiss cheese
1 pkg sliced ham ( black forrest or smoked)
1 bunch green onions
oil for deep frying
1 pkg pork flavored gravy ( for dipping sauce)

Steps:

  • 1. I cooked my pork in my crock pot, season the way you like it. When done let cool some to where it is easy to shred,
  • 2. Place egg roll wrapper on cutting board, layer a slice of cheese, then ham, then some pork, top with a couple of slices of the green onions( i washed my onions and cut half the greens off, then sliced it down 4 times to make thin strips)
  • 3. Brush wrapper around edges with egg wash or water, rolls egg roll then fold in the ends, deep fry until golden brown, roll around some for even cooking, about 3 minutes total
  • 4. Make the pork gravy as directed ( i used 3/4 water then thinned down with 1/2 cup of the broth from the pork)
  • 5. 03/15/12 I made these tonight and I used Curly's pulled Pork ( sauceless) instead of making a roast, I think it was better with this pork, and I also thinned my gravy down with some soy sauce, was really good.

1/2 cup white vinegar
1/2 cup water
1 tablespoon maraschino cherry juice (optional)

Steps:

  • In a large skillet, cook pork over medium heat until no longer pink; drain. Remove pork with a slotted spoon and set aside.
  • In the same skillet, stir-fry cabbage, celery and onions in oil until crisp tender.
  • Add shrimp, water chestnuts, bean sprouts, garlic, soy sauce, sugar and reserved pork; stir-fry 4 minutes longer or until liquid has evaporated.
  • Remove from the heat.
  • Position egg roll wrappers with a corner facing you.
  • Spoon 1/3 cup pork mixture on the bottom third of each wrapper. Fold a bottom corner over filling, fold sides over filling toward center. Moisten top corner with water; roll up tightly to seal.

to to from the slow cooker. Once it is cool enough to handle, use two large forks to shred the meat.
Ingredients for the Alabama White BBQ Sauce
1/2 1/2 1/2 cup mayonnaise
2 2 2 teaspoons creole mustard
1/2 1/2 1/2 teaspoon prepared horseradish
1 1 1 clove garlic, minced
1/2 1/2 1/2 teaspoon black pepper
1 1 1 tablespoon white vinegar
Directions for the Alabama White BBQ Sauce
to to mayo, creole mustard, horseradish, garlic, black pepper, and vinegar in a medium bowl. Mix until well combined. Store the sauce in the refrigerator to allow all the flavors to develop.
Ingredients for the Egg Rolls
1 1 package 1 (1-pound) package refrigerated egg roll wrappers
1 1 can 1 (27-ounce) can seasoned collard greens, very well drained
1 1 1 pound pulled pork recipe
Vegetable oil for frying

Steps:

  • Directions for the Egg Rolls Place about 2 tablespoons of pulled pork in the center of an egg roll wrapper. Top with about 1 1/2 tablespoons of drained collard greens. Roll egg roll up by folding the bottom flap over the filling, then folding in the sides. Roll the wrap up tightly and secure the top by brushing the top flap with a little bit of water and sealing it well. Allow the egg rolls to rest to ensure they are sealed well before frying. Repeat until all of the ingredients have been used. Fry the egg rolls by heating 3-to-4 inches of vegetable oil in a Dutch oven or deep, heavy-bottomed skillet. Once the oil has reached about 350°F, carefully place 3-to-4 egg rolls into the oil. Cook for 2 or 3 minutes, turning occasionally, or until deep golden brown. SHREDDED PORK EGG ROLLS

These dont last long in my house, I literally have to hide them from the family until their ready to eat LOL These are awesome with plum sauce or sweet and sour. They are cooked with soy and teriyaki so extra soy for me is too salty!

2 c shredded pork roast
2 c shredded cabbage
2 c shredded carrots
2 c finely diced celery
1 1/2 c finely diced onion (green onion is best)
1 c diced bok choy (leaves included)
1/4 c diced bean sprouts
1/4 c diced water chesnuts
2 Tbsp diced garlic
1/8 tsp ginger
1 Tbsp soy sauce
1 Tbsp teriyaki sauce
24 egg roll wrappers

Steps:

  • 1. Add carrots and cabbage to pan first, fry for about 2-3 minutes.
  • 2. add the rest of your ingredients and simmer stirring regularly until onions are translucent. Drain in fine colander while heating oil.
  • 3. Fill each wrapper with 1 lg teaspoon of filling. I seal each of them with scrambled egg drop.
  • 4. Fry in oil for about 1.5 minutes on each side, drain on plate lined with paper towel and serve with plum or sweet and sour sauce for dipping Enjoy (thank you Jesus for cooking with me today!)
