1 tablespoon grape seed oil
1/2 cup thin-sliced (height wise) red or Vidalia onion
1/4 cup thin-sliced bacon
1 cup thin-sliced apple (1/4-inch by length)
1/4 cup white wine, sauvignon blanc or riesling
1/4 cup (1/2 stick) butter, at room temperature
1/2 teaspoon ground nutmeg, optional
1/2 teaspoon turmeric, optional
2 tablespoons grape seed oil
Eight 4-ounce fresh boneless pork loin chops
1 teaspoon ground pepper
1 tablespoon kosher or sea salt
1 teaspoon fresh mint, chopped
Potatoes of choice, for serving

Steps:

  • For the apple compote: In a large saute pan over high heat, add the oil and allow to heat to the verge of smoking. Then add the onions and reduce the heat to medium. Allow the onions to cook, stirring throughout, until light brown in color, about 2 minutes. Then add the bacon and allow to cook until the bacon has begun to brown. Then add the apples. After adding the apples, allow all the ingredients to blend in flavor for a final 2 minutes. Add the wine to deglaze the pan and allow the alcohol to cook off. After reducing the wine, reduce the heat to low and whisk in the butter and optional spices, stirring for 1 to 2 minutes to create a sauce. Finish with the mint and hold warm until serving.
  • For the chops: In large a saute pan over medium-high heat, add the oil and allow to warm. Sprinkle the chops with salt and pepper equally on both sides and add to the warm oil. Allow the chops to brown on the first side for 3 to 4 minutes, and then flip and repeat cooking on the second side for a final 3 to 4 minutes. Once cooked, remove from the pan and serve with potatoes of choice. Finish with the apple compote.

I started making this dish a few years ago after apple picking with my children. I was looking for something different to do with some of the apples and this sure is delicious! We all enjoy it and hope you do too!!

2 tablespoons vegetable oil
½ cup chopped onion
4 raw chop with refuse, 113 g; (blank) 4 ounces (1/2-inch thick) pork chops
½ teaspoon salt
ground black pepper to taste
2 medium (2-3/4" dia) (approx 3 per lb)s apples - peeled, cored and sliced
2 tablespoons brown sugar
½ teaspoon ground mustard
⅛ teaspoon ground cloves
¾ cup hot water

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat oil in large skillet. Saute onion in oil for 1 minute, or until tender. Remove onion and set aside. Brown pork chops on both sides in oil.
  • Place chops in an 8x12 inch baking dish and sprinkle them with salt and pepper. Cover the chops with the apples and cooked onion.
  • In a small bowl, combine brown sugar, mustard, cloves and water. Pour over chops. Cover and bake in the preheated oven for 30 to 45 minutes. Enjoy!

2 boneless center cut pork chops
seasoning salt
pepper
1 tablespoon olive oil
1/4 cup chicken broth
1 tablespoon butter
1 apple
2 tablespoons sugar
1 teaspoon cinnamon
1 teaspoon water

Steps:

  • Prepare apples by peeling and chopping to the size you desire and sprinkling with sugar and cinnamon. If you want an 'applesauce' texture dice the apples, if you prefer a more elegant presentation, you may prefer slices.
  • In a small sauce pan, Simmer cinnamon sugar coated apples in the butter and water until the juices form a glaze.
  • Meanwhile, prepare the chops by cutting through outside fat strip every 1 inch to prevent curling being careful not to cut into the meat, and seasoning chops with salt and pepper.
  • Sauté chops in olive oil, in a skillet over medium-high heat until browned, flip and brown other side (approx 3-4 minutes per side). Remove chops from pan and rest on a platter while you make the compote.
  • Deglaze the skillet with chicken broth being sure to scrape up brown bits from the bottom of the pan.
  • When you have reduce the broth by about 1/2, add the apple mixture and juices release from the rested pork chops and stir until well combine. Season to taste and serve over the pork chops. If wish, you can return the pork chops to the pan to coat before serving.
