As a soldier during WWII my Dad learned to make this hearty pork dish from a local German woman during the Allied occupation of Germany. I don't know the German name for it, but it is delicious!

8 center cut pork chops
2 pounds sauerkraut, drained
1 large red apple, diced
1 onion, chopped
1 cup brown sugar
1 tablespoon caraway seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large nonstick skillet over medium-high heat, and brown the pork chops on both sides, about 5 minutes per side. Place the chops into a 9x13-inch baking dish.
  • Mix the sauerkraut, apple, onion, brown sugar, and caraway seeds in a bowl until well combined, and spread the sauerkraut mixture over the pork chops. Cover the dish with aluminum foil.
  • Bake in the preheated oven until the pork is no longer pink inside, about 45 minutes. An instant-read thermometer inserted into the center of a chop should read 145 degrees F (63 degrees C).

2 cloves garlic, minced
1 onion, thinly sliced
16 ounces sauerkraut
1 teaspoon caraway seed
2 tablespoons apple juice

Steps:

  • Heat oil in a large skillet over medium heat. Brown chops on all sides and remove from pan.
  • Add the garlic, onion, sauerkraut, caraway seed, apple juice, and salt and pepper to taste to the hot skillet. Saute for 3 to 4 minutes. Lay browned pork chops on top of sauerkraut mixture, cover, reduce heat to low and cook for 20 minutes, stirring occasionally.

Steps:

  • Layer in your crock pot about 1/4 the can of Sauerkraut.

2 medium sweet potatoes, peeled and sliced 1/2 inch thick
1 medium onion, sliced
2 apples - peeled, cored and sliced

1 (16 ounce) can sauerkraut, drained

Steps:

  • Heat a skillet over medium-high heat and coat with cooking spray. Quickly brown the pork chops on each side. Set aside.
  • Arrange sweet potato slices in the bottom of a 3 to 4 quart slow cooker. Cover with the onion slices, then the apple slices. Sprinkle brown sugar, nutmeg and salt over the apples, and grind a little pepper. Place the pork chops on top of the pile, and cover with sauerkraut. Cover, and cook on Low for about 5 hours. It can go an extra hour without drying out though.
  • Serve pork and vegetables with juice from the slow cooker spooned over them.

4 bone-in pork loin chops (3/4 inch thick)
1 tablespoon canola oil
1 cup chopped onion
1 can (14-1/2 ounces) chicken broth
1/2 teaspoon caraway seeds
1/4 teaspoon pepper
1/4 teaspoon celery seed
1 can (14 ounces) sauerkraut, rinsed and well drained
1 red apple, chopped
4 bacon strips, cooked and crumbled, optional

4 pork chops
olive oil or butter
1 lb sauerkraut, rinsed with fresh water and drained
1 large tart apple, peeled, cored and diced
1 medium onion, chopped
1 cup riesling wine

Steps:

  • Salt and pepper the chops and brown them in hot oil or butter, about 3 minutes per side. Set aside.
  • Add the apple and onions to the same skillet and cook for about 5 minutes, until the onion starts to look golden.
  • Add the wine and stir, scraping up all the browned bits, and cook for an additional 3 minutes.
  • Stir in the sauerkraut, and place the chops on top, including any juices that have collected. Cover the skillet, lower the heat and cook until the chops are done, about 7 minutes, depending on thickness. Do not overcook.
  • Note1: I've also made this successfully with chardonnay, but riesling is the best.
  • Note2: Sauerkraut packed in plastic bags and sold in the refrigerator case tastes much better than the canned.

1/2 onion, chopped
1 peeled apple, cored and chopped
3 tablespoons white wine or 3 tablespoons rum

Steps:

  • Season the pork chops with salt and pepper.
  • Heat a skillet and oil lightly.
  • Brown chops on both sides, and remove them from skillet.

1 (16-ounce) package (4 links) knockwurst
1 tablespoon butter
1 pound sauerkraut, rinsed and drained
1 teaspoon caraway seeds
1 bay leaf
1/2 teaspoon whole peppercorns
1 cup dark German beer
Spicy mustard
1 loaf pumpernickel, sliced
1 tablespoon extra-virgin olive oil
3 slices bacon, chopped
1 medium to large yellow onion, quartered then thinly sliced
1 green apple, cored and thinly sliced
6 thin cut boneless smoked pork chops, halved on an angle, available near packaged ham in meat case
1 cup dark German beer
1/2 pound each of 2 cheese selections such as: beer kaese, bruder basil, muenster
Sour pickles
1 bag Bavarian pretzels

Steps:

  • Pierce the casings of knockwurst and arrange in medium skillet. Add 1 inch of water, bring to a simmer and warm wursts through. Remove from the pan. Drain the skillet and add butter. Melt butter over medium heat. Cut each knockwurst into 1/3 and add back to the pan to crisp casings. Add sauerkraut to the pan, sprinkle in caraway, add bay leaf and peppercorns. Pour the beer into the skillet. When the beer comes to a bubble reduce heat to simmer.
  • Heat a second skillet over medium high. Add oil, 1 turn of the pan and add chopped bacon. When the bacon renders its fat, add onions and saute 3 to 5 minutes, then add sliced apples and saute mixture another 2 or 3 minutes. Add smoked chops to the pan and caramelize meat on both sides, 2 or 3 minutes. Remove chops to a plate and loosely cover with foil. Pour the beer into the pan and reduce heat to a simmer.
  • When you are ready to serve, cut several slices of pumpernickel in half down the middle. Place a bowl of spicy mustard alongside the pumpernickel bread for passing at the table.
  • Place 2 or 3 chunks of the knockwurst on each dinner plate on a bed of spiced sauerkraut. Serve 3 pieces of smoked pork chops topped with bacon, apples and onions. Place deli style large dill or half sour pickles, German cheeses and pretzels out for an evening of uber snacking!

1 (22 -27 ounce) can sauerkraut, drained

4 -6 juniper berries
2 -3 whole cloves
1 bay leaf, broken up
1 sprig parsley
2 -3 bratwursts
4 small pork chops
4 -8 smoked link sausage
2 potatoes, peeled and cut into bite sized pieces

Steps:

  • In a large skillet or electric frying pan, cook bacon until it just begins to brown. Pour off fat, then add onion. Saute until onion is transparent.
  • Stir in sauerkraut, carrots, brown sugar, chicken broth and wine.
  • Tie up spices and herbs in a small bag of cheesecloth. Bury in the center of the sauerkraut mixture. Cover and simmer 10 minutes.

4 slice bacon, cooked, chopped
1 qt sauerkraut, drained well
1 large onion, quartered, sliced
1 large apple, peeled or unpeeled, sliced not too thick
3 1/2 lb pork chops, not thin cut
2 tsp salt
1/2 tsp pepper
2 Tbsp butter, unsalted
1 tsp salt
1/4 tsp pepper
2 Tbsp brown sugar
2 tsp caraway seeds
1 large bay leaf, cut in 3
1 c dry white wine
3 Tbsp gin

Steps:

  • 1. In a large frying pan, cook bacon until crisp. Remove from pan. Place on a plate to set aside. When cooled, chop roughly.
  • 2. In the same pan, brown all the pork chops in the bacon fat. Do this in batches, setting the browned pieces on a tray. Season the pork with the 2 tsp salt and the 1/2 tsp pepper.
  • 3. Add 2 Tbsp butter to the same pan and saute the onion for 4-5 minutes, or until clear. Add the drained sauerkraut,1 tsp salt, 1/4 tsp pepper, and caraway seeds. Cook 2 minutes more. Remove from heat. Transfer the sauerkraut/onion mix to a large Dutch oven.
  • 4. Bury the 3 pieces of bay leaf in the sauerkraut, evenly spaced. Bury the sliced apples in the sauerkraut too. Place the browned pork chops on top of the apples and sauerkraut.
  • 5. To the same large frying pan, which has residual bits left in it, return to the stove and over high heat deglaze with the wine and gin. When boiling, cook for a couple of minutes. Remove from heat and pour the juices over the top of the pork.
  • 6. Cover the Dutch Oven with lid and bake at 325 degrees for 1 hour. Reduce to 300 degrees and cook 1 hour more. Turn off oven and rest while you finish up your side dishes.
  • 7. Serves 8 generously. Mashes potatoes and peas are the perfect accompaniments.

2 large onions (diced)
1 - 2 tsp caraway seeds (optional)

  • 3. Core and cut apples into round slices. Place slices of apple over the pork chops. Dust apple slices lightly with cinnamon. Set aside.
  • 4. In the same skillet: Add butter and some of the sauerkraut juice. Stir the pan well to get the drippings. Add the onions to the skillet and cook to translucent (do not burn! add water if needed for a little moisture). Add the sauerkraut, ground black pepper and caraway seeds. Stir together well and heat through. Put a layer of sauerkraut over the apple slices in the pork chop pan. Put another layer of apple slices over the sauerkraut. Next put the remaining sauerkraut over the apple slices.
  • 5. Bake covered for 40 minutes. Remove covering from pan and bake 10 more minutes uncovered.
  • 6. ***Serve with mashed potatoes and corn on the cob.

4 (3/4 inch) thick pork chops
2 cloves garlic, minced
1 onion, thinly sliced
16 ounces sauerkraut
1 teaspoon caraway seed
2 tablespoons apple juice, salt and pepper to taste

Steps:

  • Heat oil in a large skillet over medium heat. Brown chops on all sides and remove from pan.
  • Add the garlic, onion, sauerkraut, caraway seed, apple juice, and salt and pepper to taste to the hot skillet. Saute for 3 to 4 minutes.
  • Lay browned pork chops on top of sauerkraut mixture, cover, reduce heat to low and cook for 20 minutes, stirring occasionally.

1 can (16 ounces) sauerkraut, undrained
1 cup thinly sliced carrots
3/4 cup chopped onion
1/2 cup water
1/4 cup uncooked barley
6 pork loin or rib chops, 3/4 inch thick
1/2 cup prepared barbecue sauce

Steps:

  • 1 Heat oven to 350ºF. In ungreased 2-quart casserole or 11x7-inch glass baking dish, mix sauerkraut, carrots, onion, water and barley. 2 Place pork chops on sauerkraut mixture. Spoon barbecue sauce on top of chops. Cover and bake 1 1/4 to 1 1/2 hours or until pork is no longer pink in center. TIPS Barley is one of the first grains ever cultivated. Pearl barley, the most common variety, has the hull, most of the bran and some of the germ removed to shorten cooking time. Barley is available in both regular and quick-cooking varieties. For this recipe, use regular and not the quick-cooking variety.

When I was a kid on our birthday mom would cook a meal of your choosing. I usually had her make pork chops. We didn't have them often and she cooked them several ways. Her Sour Cream and Sauerkraut Pork Chops were my favorite served with a baked potato with sour cream of course and applesauce.

1 Tbsp butter, unsalted
1 Tbsp olive oil, extra virgin
1 1/2 tsp paprika, sweet mild
2/3 c sauerkraut
2/3 c sour cream
4 pork loin chops, boneless
1/4 tsp freshly ground black pepper
1/2 tsp garlic, minced

Steps:

  • 1. Melt half of butter with half of the olive oil in a large skillet over medium-high heat. Stir in onions, and cook until soft and golden.
  • 2. In a bowl, stir together 1/2 teaspoon paprika, sauerkraut, onions, and sour cream. Season pork chops with pepper, garlic salt, and 1 teaspoon paprika.
  • 3. Once onions are carmelized, add them to the sauerkraut mixture. Pre-heat the broiler.
  • 4. In the same skillet add the rest of butter and olive oil; add the pork chops. Fry for 5-6 minutes on each side until pork is just about done.
  • 5. Transfer the chops to a broiling pan or cookie rack placed inside a jelly-roll pan. Heap sauerkraut and onion mixture over pork chops, and broil 3-4 minutes or until the topping is golden brown.
