GRILLED VEGGIE PORK BUNDLES
"We enjoy these colorful bundles on the deck along with rice and a tall glass of iced tea," Linda Turner Ludwig says from Columbiana, Ohio. For variety, try it with provolone cheese or red sweet peppers...or a substitute chicken breast for the pork chops.

Steps:
- Cross two bacon strips to form an "X"; repeat. Sprinkle pork chops with salt and pepper; place over bacon strips. Layer with onion, tomato and green pepper. Wrap bacon strips over vegetables and secure with a toothpick., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Prepare the grill for indirect heat, using a drip pan. Place pork bundles over the drip pan. Grill, covered, over indirect medium heat for 20-25 minutes or until a thermometer reads 160°. , Place cheese slices over bundles; cover and grill 1 minute longer or until cheese is melted. Discard toothpicks.

Steps:
- Heat oven to 350 degrees. Line cookie sheet with parchment paper
- Mix pork, soy sauce,sesame oil, ginger, sea salt, and pepper together. Add cabbage and chives. Mix until blended.
- Separate dough into 8 biscuits, and separate each biscuit into 2 layers (making 16 rounds). Spoon 1 rounded tablespoon of pork mixture into center of each round. Stretch biscuit up around ball to cover completely. Pinch edges together on top to seal. Place seam side up 1" apart on cookie sheet.
- Bake 16-22 minutes or until golden brown. Serve warm.

- In medium bowl, mix pork, soy sauce, oil, ginger, 1/8 teaspoon sea salt and 1/8 teaspoon pepper. Add cabbage and chives; mix until well blended.
- Separate dough into 8 biscuits; separate each biscuit evenly into 2 layers, making 16 dough rounds. PORK TENDERLOIN BUNDLES
Steps:
- Slice the pork tenderloin into 1" or thicker pieces, then flatten with the side of a cleaver or rolling pin to 1/2" thickness. Cross two slices of bacon, forming an "X". Place one of the flattened tenderloin slices on top. Sprinkle with pepper and garlic powder (no need for salt!), then top with a slice of onion and a slice of tomato. Bring up the four ends of the bacon slices and secure on top with a single wooden toothpick. This should form a neat package. Place on a broiling pan so drippings can drain. Bake uncovered 50 - 60 minutes. OR Grill over medium low heat 20 - 30 minutes, but be prepared to dowse the flames -- that bacon drips like crazy!
PORK BUNDLES

Steps:
- Lay out 12 14-inch lengths of heavy duty foil and lightly grease. Place 4 strips of carrot on each layer with 1 slice onion and 1 or 2 slices potato. Sprinkle with 2 teaspoons parsley, salt, and pepper. Heat butter or margarine and vegetable oil in skillet brown chops on both sides. Place 1 chop on each vegetable bundle top with slice of pineapple.Sauce:*Brown flour in same skillet used for pork chops there should be enough grease left. Add broth and simmer, stirring. Add salt, pepper, and rosemary. Lower heat andstir in half-and-half simmer 3 to 4 minutes. Put 3 tablespoons sauce on top of each bundle. Bring long sides of foil together, over top, and loosely fold into tight seam fold up ends in same manner. Place on jelly roll pan and bake for 1 1/2 hours in a preheated 325° F oven. To serve, untwist bundle sufficiently to stick sprig of parsley in each bundle.
