1 (15 1/4 ounce) can pineapple chunks in juice, undrained
2 tablespoons fresh lime juice
1 1/2 tablespoons fish sauce
1 teaspoon sugar
2 teaspoons bottled minced garlic
1/2 cup vertically sliced red onion
1/2 cup chopped fresh basil
1 tablespoon low sodium soy sauce
1 teaspoon minced pickled jalapeno pepper
1/2 teaspoon bottled minced fresh ginger
1 (1 lb) pork tenderloin, trimmed and cut into 3/4-inch pieces
2 teaspoons vegetable oil
8 cups trimmed arugula (about 4 ounces) or 8 cups spinach (about 4 ounces)

Steps:

  • Drain pineapple, reserving 1 tablespoon juice. Discard remaining pineapple juice. Set pineapple aside.
  • Combine reserved pineapple juice, lime juice, fish sauce, sugar, and garlic.
  • Place reserved pineapple chunks, onion, and the next 4 ingredients (onion through ginger) in a large bowl.
  • Drizzle 2 tablespoons lime juice mixture over onion mixture; toss gently. Combine remaining lime juice mixture with pork, stirring well.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add pork, and sauté 3 minutes or until done.
  • Add pork to onion mixture; toss well. Serve over arugula.

8 boneless pork loin chops (2 lb.), 3/4 inch thick
1 pineapple, cut into chunks (3/4 inch)
1 cup KRAFT Mango Chipotle Vinaigrette Dressing
2 Tbsp. chopped fresh cilantro
2 tsp. zest and 2 tsp. juice from 2 limes
10 cups tightly packed torn romaine lettuce
1/2 cup KRAFT Shredded Monterey Jack Cheese

Steps:

  • Heat grill to medium heat.
  • Grill chops 5 to 6 min. on each side or until done (145ºF). Remove from grill; set aside. Add pineapple to grill; cook 2 to 3 min. on each side or until lightly browned on both sides.
  • Mix dressing, cilantro, lime zest and juice until blended.
  • Slice chops and chop pineapple. Place lettuce on large platter; top with meat and pineapple.
  • Drizzle with dressing mixture just before serving; sprinkle with cheese.

1 pound thinly sliced pork chops or pork shoulder (omit for vegetarian version)
1 can pineapple rings or 1 fresh pineapple , carved & sliced into thin strips.
1/2 cup vegetable or grape seed oil
1 tablespoon sugar
4 tablespoons fish sauce or soy sauce
3 tablespoons pineapple juice w/ about 2 1″ inch pineapple cubes crushed in juice
2 cloves crushed garlic
1 teaspoon grated or crushed ginger
1/2 teaspoon salt
Lettuce
cucumbers
mint
shredded carrots
Pineapple dressing/dip
1 clove crushed garlic
1/4 cup water
2 tablespoons grape seed oil
4 tablespoons soy sauce
2 teaspoons sugar
1 teaspoon chili flakes
4 table spoons pineapple juice
2 tablespoons minced pineapple

Steps:

  • 1. Marinade : In bowl or plastic bag, mix sugar, fish/soy sauce, pineapple juice & crushed pineapple cubes, garlic , ginger and salt. Add pork , let marinade for about 20 minutes. For vegetarian version, us this same mixture to marinade pineapple slices for about 20 minutes. 2 . Make dressing\dip. In blender, add garlic, water, grape seed oil, soy sauce, sugar, chili flakes, pineapple juice and minced pineapple. Blend well. 3. Wash lettuce, herbs, slice cucumbers & carrots. 4. In hot pan, cook pork on each side for about 1 minute or until cooked. For pineapple, quickly sear each side of pineapple slices for about 30 seconds, or until light brown crust appears. Remove from heat, let cool. 5.Assemble lettuce , pork, pineapple chunks and toss with dressing.
