Pork, liver, and potatoes are cooked in a tomato base to make this Filipino stew elegant enough for special occasions.

2 ¼ pounds boneless pork, cut into bite-sized pieces
2 tablespoons soy sauce
½ lemon, juiced
2 pounds pork liver
3 tablespoons olive oil
2 potatoes, quartered
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 large tomatoes, diced
1 green bell pepper, cut into chunks
salt and ground black pepper to taste

Steps:

  • Place the pork in a large pot; pour enough water into the pot to cover the pork. Stir the soy sauce and lemon juice into the water. Bring the mixture to a boil for 5 minutes. Remove the meat and set aside. Discard the liquid.
  • Refill the pot with fresh water; add the pork liver and bring to a boil for about 5 minutes. Remove the liver and allow to cool; cut into bite sized pieces. Set aside.
  • Heat 3 tablespoons olive oil in a large skillet over medium-high heat; fry the potatoes in the hot oil until golden brown and cooked through, 7 to 10 minutes. Remove the potatoes to a plate lined with paper towels. Add 2 more tablespoons olive oil to the skillet and allow to get hot. Cook and stir the onion and garlic in the hot oil until fragrant, 3 to 5 minutes. Add the pork and pork liver to the skillet; cover and cook for 5 minutes. Stir the tomatoes into the mixture; cook together, stirring occasionally, another 5 minutes. Return the potatoes to the skillet with the green bell pepper. Season with salt and pepper. Cook and stir another 5 minutes.

Number Of Ingredients 10

2 pounds pork shoulder cut into cubes
1 large head onion, minced
4 heads garlic cloves
6 slices hot dogs or wieners, cut diagonally
1 1/2 cups frozen peas
16 ounces tomato sauce
2 teaspoons sugar
4 pieces potatoes, quartered
3 tablespoons cooking oil
2 cups beef broth

Steps:

  • Heat the cooking oil in a cooking pot or deep pan.
  • Sauce the garlic and onion when the oil becomes hot
  • Once the onion is soft, add the pork and cook until light brown ( around 3-5 minutes)
  • Pour in the tomato sauce and beef broth. Stir .. Let boil. Cover and simmer for 45-60 minutes or until pork is tender
  • Add the hot dogs and potatoes, Cook for 8 minutes.
  • Add the green peas, sugar, salt and pepper . Stir and cook for 3 minutes.

Number Of Ingredients 18

2 Lbs of Pork belly or pork butt cut in 2×2 in. cubes
4 Medium sized potatoes, quartered
3 Medium carrots cut in 1 in. pieces
1 Large onion, diced
4 Cloves of garlic peeled and smashed
2 Small tomatoes, seeded and diced
2 Bay leafs
4 Tbs. Annatto seeds or atsuwete seeds
4 **4 Cups of tomato sauce
1 Cup of green peas (frozen is fine)
1/2 ½ Red bell pepper 1 in. diced
1/2 ½ Yellow bell pepper 1 in. diced
1/2 ½ Green bell pepper 1 in. diced
Salt & Pepper to taste
1/2 ½ Tbs. MSG (optional)
3 Tbs. Corn oil
** Use tomato paste if tomato sauce is not available.
(**3 Cups of water and 1 cup of tomato paste)

Steps:

  • In a large casserole dish heat 1 Tbs. of oil, season pork with salt, and brown on all sides. In another frying pan heat 2 Tbs. of corn oil and add annatto seeds until oil turns dark red. Using a strainer pour annatto seed oil onto the browned pork and let it sauté for about three minutes while stirring. Then add the following: garlic, tomatoes, onions, bay leaf, and tomato sauce. Stir and cover then let simmer over medium low heat for 10 minutes. Add msg and salt & pepper to taste. Next add carrots, cover, and let it simmer for another 3 minutes. Add the potatoes and let it cook for 12 minutes or until potatoes are tender stirring frequently to avoid scorching. After the potatoes are tender you may add the green peas, stir, and let it cook for 2 minutes. Then add the final ingredients the bell peppers. Serve with white rice and enjoy your delicious Pork Afritada.

My Brother and his Wife shared this recipe with me. My Sister In Law is from the Philippines. It is a hearty meal. You can also make this with chicken.

8 oz plain ground pork
1 medium onion diced
2 Tbsp minced garlic
1 medium chopped tomato
2 Tbsp soy sauce
2 Tbsp fresh lemon juice
1 c tomato sauce
1 c water
1 medium potato cut in small cubes
6 small baby carrots sliced into rounds
1 medium red pepper cut in small bites

Steps:

  • 1. I used a medium deep pot. Add a little oil and heat pot. Saute onion, garlic, tomatoes. Add Lemon juice and Soy sauce. Add Pork breaking it up until cooked through.
  • 2. At this point you can add Fish sauce. I did not have it. Add tomato sauce, water. Bring to a boil, turn down heat. Put on lid and simmer for about 20 minutes or so. Stir every so often.
  • 3. Add the carrots and potatoes. ( I pre cooked in the Microwave, to soften ) also the red pepper. A dash of salt and pepper and Soy Sauce. Serve over rice or pasta.
