Summer Kale, Avocado, Mango, and Chickpea Salad with Citrus Poppy Seed Vinaigrette image

This is a delicious summer salad. Great as a dinner salad with some grilled chicken or fish, or as a side. This is my first experience with kale, and I'm hooked! Add nuts (walnuts, cashews, slivered almonds), sunflower seeds, or dried fruit (cranberries or cherries) for some added texture and deliciousness! I also like to add thinly sliced red bell peppers or Shepherd peppers; it is a salad, anything goes! The citrus vinaigrette is light and refreshing. Sometimes I want a sweeter vinaigrette, hence the addition of marmalade. Apricot would work well, too. A great summertime salad.

6 cups shredded kale
1 avocado - peeled, pitted, and cubed
½ mango - peeled, seeded, and cubed
⅓ cup chickpeas (garbanzo beans)
⅓ cucumber, thinly sliced
6 tablespoons olive oil
2 tablespoons rice wine vinegar
1 tablespoon orange juice
1 tablespoon sunflower seed kernels, or to taste
1 teaspoon Dijon mustard
½ teaspoon poppy seeds
½ teaspoon orange marmalade, or to taste

Steps:

  • Place kale in a large bowl and gently massage it with your hands until slightly tender, 2 to 4 minutes. Let kale rest to tenderize further, about 10 minutes.
  • Stir avocado, mango, chickpeas, and cucumber into kale.
  • Combine olive oil, vinegar, orange juice, sunflower seed kernels, mustard, poppy seeds, and marmalade in a jar with a tight-fitting lid; put on the lid and shake until dressing is well combined. Pour dressing over kale mixture and toss to coat.

A super easy and very refreshing cucumber and melon salad. A great change from typical green or fruit salads! Can be made a full day ahead.

½ cantaloupe - peeled, seeded, and cut into 1/2-inch cubes
2 cucumbers - peeled, seeded, and cut into 1/2-inch cubes
½ small red onion, finely diced
1 large stalk celery, diced
⅓ cup poppy seed dressing, or more to taste
3 tablespoons red wine vinegar
1 teaspoon poppy seeds, or to taste

Steps:

  • Place cantaloupe and cucumbers in a colander; set a plate on top. Place a heavy object such as a large can of food on top of plate to squeeze out excess liquid from cantaloupe and cucumbers, tossing about every 30 minutes, 2 to 3 hours.
  • Transfer cantaloupe and cucumbers to a large bowl; add onion, celery, poppy seed dressing, and red wine vinegar. Toss to coat. Stir in poppy seeds.

We love, love, love this salad. The dressing is the real star here, with an awesomely delicious flavor. Linda calls for canned chicken in her recipe, but we like using leftover rotisserie chicken instead. Either way is terrific!

2/3 c olive oil
1/2 c sugar
2 Tbsp poppy seeds
1 Tbsp honey mustard
1 tsp salt
1/3 c lemon juice, fresh
1 large head romaine lettuce, chopped
1 c each sliced strawberries, mandarin oranges
1/4 c chopped red onion
1 c chopped walnuts
1 can(s) white chicken breast (swansons)
1 large english cucumber sliced thin
2 c shredded swiss cheese

Steps:

  • 1. Layer lettuce, chicken, strawberries, oranges, cucumbers, nuts, then red onion unto 3-4 serving plates. Set aside. Mix and shake oil, lemon juice, mustard, sugar, salt and poppy seeds. Drizzle on each salad to taste. Top with shredded Swiss Cheese.
  • 2. Serve with crusty Italian Bread; be sure you have enough to dip in the remaining dressing/just cannot resist!
