1/2 cup water
1/2 cup sugar
2 750-ml bottles chilled brut Champagne
1 1/2 cups white rum
1 1/4 cups pomegranate juice
1 large lemon, thinly sliced
Pomegranate seeds
Fresh mint leaves
1 ice block

Steps:

  • Bring 1/2 cup water and sugar to boil in small saucepan, stirring until sugar dissolves. Simmer 5 minutes. Cool syrup completely.
  • Combine Champagne, rum, and pomegranate juice in punch bowl. Add enough syrup to sweeten to taste. Mix in lemon slices, pomegranate seeds, and mint leaves. Add ice block to bowl.

8 ounces agave syrup
12 ounces tequila blanco
1 cup pomegranate seeds
1/2 cup fresh mint leaves, plus 6 sprigs for garnish
One 750-milliliter bottle Champagne or sparkling wine
2 limes, sliced

Steps:

  • Add the pomegranate juice and agave to a pitcher and stir to combine. Add the tequila, pomegranate seeds and mint, then stir and allow to sit until ready to serve.
  • Fill wine glasses with ice, then fill halfway with the prepared cocktail. Top off each glass with Champagne. Garnish each with a mint sprig and 1 or 2 slices of lime. Serve immediately.

1/2 cup pomegranate juice
2 1/2 cups water
1 1/2 cups pomegranate juice
1 cup vodka
3/4 cup orange-flavored liqueur, such as Cointreau
1/3 cup fresh lime juice
1 bottle Champagne
Rose petals, for garnish

Steps:

  • For the ice mold:
  • Add the pomegranate seeds, pomegranate juice and water to a silicone Bundt pan. Freeze until solid, 3 to 4 hours or overnight. When ready to serve, run the ring mold under a little hot water, remove from the pan and place in a large punch bowl.
  • For the pomegranate lime punch:
  • Add the pomegranate juice, vodka, orange-flavored liqueur and lime juice to a large punch bowl and stir to combine. Add the ring mold and top with the Champagne just before serving. Garnish with the rose petals.

Steps:

  • Bring sugar, 1 1/2 cups water, and ginger to a simmer in a small saucepan over medium heat, stirring, until sugar dissolves. Remove from heat. Add mint; let stand 30 minutes. Strain. Let cool completely.
  • Stir together mint syrup, juice, and nectar in an ice-filled punch bowl. Add seltzer. Garnish with mint; serve.

Steps:

  • Create an ice float by freezing water in a plastic container (choose a size that will make a shape to fit comfortably in your punch bowl) for at least 6 hours or overnight.
  • Combine the pomegranate juice, lemonade and rum in a large punch bowl and stir well to incorporate. When ready to serve, add the large ice float, stir well and then chill for at least 15 minutes. Garnish with the berries and lemon wheels. Serve over ice in coupe or punch glasses.

  • Combine pomegranate juice and sugar in a pint jar or similar vessel and stir until sugar dissolves to make a syrup. Refrigerate 1 hour or, covered, up to 3 days.
  • Crush basil leaves between your fingers and drop them into a pitcher. Add grapefruit and lychee juice to pitcher and stir.

5 pomegranates
1 cup apple cider
1/2 cinnamon stick
1 tablespoon thinly sliced fresh ginger
1/4 cup fresh orange juice, plus strips of orange zest for garnish

Steps:

  • Cut pomegranates in half. Extract juice from seeds with a citrus juicer or reamer. Strain into a medium saucepan. (You should have about 2 1/2 cups juice.)
  • Add cider, 2 cups water, the cinnamon stick, and ginger. Cook over high heat until simmering, 5 to 6 minutes. Reduce heat; gently simmer 15 minutes. Skim any foam that rises to the surface.
  • Remove from heat. Discard cinnamon and ginger. Stir in orange juice. Serve warm, garnished with orange zest.

small bunch rosemary
1 bay leaf
4 whole cloves
1 cinnamon stick
60g soft light brown sugar
1 orange, zest pared
ice cubes
150ml non-alcoholic gin
2 tsp red wine vinegar
1 pomegranate, seeds bashed out (or 80g tub seeds)
250-350ml soda water

Steps:

  • Put the pomegranate juice, half the rosemary, bay, cloves, cinnamon, sugar, and orange zest in a pan, and bring to a gentle simmer over a low heat. Once steaming, remove from the heat, put on the lid and leave to infuse for at least 2 hrs, or up to 24 hrs chilled.
  • When ready to serve, strain the pomegranate juice into a punch bowl with a handful of ice cubes. Add the non-alcoholic gin, vinegar and pomegranate seeds, and remaining rosemary sprigs. Top up with soda water in the glasses just before serving.

1/3 C. frozen lemonade concentrate, thawed

1/2 750-ml. bottle (about 1 2/3 C.) Pinot Noir wine or other dry red wine, chilled
1 750-ml. bottle Champagne, chilled
Lemon slices (opt)

Steps:

  • Cut pomegranate into quarters and place in large bowl filled with cool water. Use fingers to loosen seeds and divide among 3 ice cube trays; fill almost full with water. Freeze until solid (about 3 hrs.). In punch bowl, combine apple juice and lemonade concentrates. Add pomegranate juice and wine; stir to combine. Just before serving, add Champagne, but do not stir. Add pomegranate ice cubes and, if desired, lemon slices. Serve immediately.

4 dried figs, sliced
1 bottle fruity red wine

Steps:

  • Roll the pomegranates on a countertop to soften. Halve them crosswise and hold them, cut side down, over a medium saucepan, hitting the backsides until all the seeds have been released. Add the lime juice, brown sugar, rum, 10 pieces of star anise, cinnamon, mulling spices and 3 of the sliced figs. Bring to a boil and simmer 7 minutes. Add the wine and let it rest, covered, 10 minutes. Serve warm, strained or not, in small mugs garnished with a fig slice and a piece of star anise.
