1 lb boneless chicken breast, cut in 1/2 pieces
1 small green pepper, julienned
1/2 cup onion, chopped
1 garlic clove, minced
1 tablespoon olive oil
1 cup mushroom, sliced
1 cup cherry tomatoes, halved
1 (8 ounce) can pizza sauce
1/2 teaspoon italian seasoning
1/3 cup reduced-fat mozzarella cheese

Steps:

  • Cook pasta according to directions, drain.
  • Stir fry the chicken, pepper, onion and garlic in oil until no longer pink.
  • Add the pasta, mushrooms, tomatoes, sauce and seasoning; heat through.
  • Remove from heat and sprinkle with cheese; let stand until melted.

8 ounces penne rigate
1/4 cup flour
1 teaspoon dried basil or 1 teaspoon oregano leaves
4 boneless skinless chicken breast halves (about 1 lb)
2 tablespoons olive oil
1 (26 ounce) jar classico di genoa pasta sauce (Spicy Tomato & Pesto)

Steps:

  • Cook penne rigate as package directs; drain.
  • Combine flour and basil in paper or plastic bag. Add chicken; shake to coat evenly.
  • In large skillet, over medium-high heat, brown chicken in oil. Remove chicken from skillet; drain.
  • In same skillet add pasta sauce. Bring to a boil. Return chicken to skillet. Reduce heat.
  • Cover; simmer 15 minutes or until chicken is fully cooked. Serve with hot penne.

4 slices bacon
2 chicken breasts, sliced
salt, to taste
pepper, to taste
2 teaspoons italian seasoning
1 teaspoon paprika
2 cloves garlic, minced
2 cups spinach
4 small tomatoes, diced
1 ½ cups cream
1 cup shredded parmesan cheese, plus more for serving
½ teaspoon red pepper flakes, plus more for garnish
10 oz penne pasta, cooked until al dente
3 tablespoons Chopped fresh parsley, for garnish

Steps:

  • In a deep skillet, fry the bacon until crispy. Remove to a paper towel to drain, then chop.
  • In the same skillet, add the chicken and season with salt, pepper, Italian seasoning, and paprika. Cook until no longer pink inside.
  • Add the garlic and cook until softened.
  • Add spinach and tomatoes and cook until the spinach is wilted.
  • Add the cream, Parmesan, an red pepper flakes and bring to a boil.

1/2 medium yellow onion, finely chopped
4 garlic cloves, minced
1 (14 1/2 ounce) can tomatoes, diced
1 (14 1/2 ounce) can tomato sauce
1 (6 ounce) can tomato juice
2 tablespoons basil, chopped fresh
1 tablespoon olive oil
1 tablespoon parsley, chopped fresh
fresh ground black pepper, to-taste
1 teaspoon salt
2 chicken breasts, grilled and sliced
2 cups penne pasta
parmesan cheese, grated

Steps:

  • Sauté onions in olive oil until translucent.
  • Add garlic and cook for one more minute.

1 1/4 lbs chicken breasts, evenly diced
3 tablespoons olive oil
2 small shallots, chopped
3 garlic cloves, minced
1 1/4 teaspoons salt
1 pinch cayenne chili pepper flakes (amount is per taste)
2 cups thinly-sliced fresh mushrooms (save time by using an 8-ounce carton of sliced mushrooms)
2 tablespoons flour
1 cup chicken broth
1/3 cup white wine
8 ounces spinach, rinsed and chopped (thawed and drained frozen spinach may be used)
16 ounces farfelle bow tie pasta
1/2 cup shredded asiago cheese

Steps:

  • Cook pasta according to package directions, or 11-12 minutes until al denté.
  • While the pasta is cooking, heat oil in a large skillet over medium-high heat; add chicken and sauté 1-2 minutes; then add shallots, garlic, salt, and cayenne pepper flakes, and sauté another 1-2 minutes; then add mushrooms and sauté another 3 minutes until chicken is nearly done; sprinkle flour evenly over chicken mixture and stir it in; add wine, broth, and spinach; cook and stir 2 minutes until spinach is wilted, sauce thickens slightly, and chicken is cooked through.
  • Drain pasta and add it to chicken mixture in skillet; toss well and heat through; transfer to serving platter, top with cheese, and serve immediately.

1/2 cup olive oil, divided
1/4 cup fresh basil leaf
1/4 teaspoon dried rosemary
16 ounces dried mini penne pasta
4 cups cooked chicken
3/4 cup sliced green onion
1/2 cup grated parmesan cheese

Steps:

  • Cook pasta according to box directions. Drain and set aside.
  • Peel garlic and sauté in 1/2 of olive oil for 2-5 minutes until tender on low heat. Puree garlic in food processor with 1/4 cup oil, basil and rosemary to make pesto.
  • Add pesto, green onion, chicken and cheese to pasta; mix very well.
  • Drizzle and toss with olive oil (up to 1/4 cup) until desired consistency.
  • Serve immediately.
