2 chicken breasts (cut in half lengthwise)
1/4 onion (cut into thin slices)
1 teaspoon minced garlic
1 tablespoon Knorr Suiza chicken bouillon
2 tablespoons olive oil
1 1/2 cup heavy cream
1/2 cup chicken broth
1/4 cup chipotle salsa (or 2 chipotle peppers in Adobo)
Cilantro (for garnish)

Steps:

  • Get out and measure your ingredients.
  • Season the chicken breast with salt and pepper.
  • Heat the olive oil in a large sauté pan. Add the onion to the oil and sauté on medium low for 7 minutes till translucent and softened.
  • Add the garlic, bouillon, cream, chicken broth and chipotle salsa to a blender.
  • Blend until smooth.
  • Push the onions to the side of the pan and add the chicken. Cook the chicken over medium heat, for 3 to 4 minutes on each side. The need to be lightly golden on each side.
  • Remove the chicken from the pan. Turn the heat down to medium low. Pour the sauce into the pan and simmer very low for 4 minutes. Watch closely so it doesn't boil or the cream can curdle.
  • Add the chicken breasts back into the sauce and cook for an additional 4 minutes. Turn the chicken over after 2 minutes.
  • Serve immediately over rice or with a side salad, sprinkle the cilantro over the chicken when serving, if desired.
  • Serve.

6 chipotle chiles, seeds removed and soaked in water for 30 minutes
7/8 cup chicken stock
2 tablespoons oil
3 onions, sliced
6 boneless skinless chicken breasts

Steps:

  • Preheat the oven to 350°F
  • Place the soaked chilies in a blender. Measure the soaking liquid in a jug and make up to 1 2/3 cups with the stock.
  • Pour the liquid into the blender and process on high until smooth.
  • Heat the oil in a frying pan, add the onions and cook for 5 minutes until soft.
  • Place the onions in an ovenproof dish. Add the chicken breasts and season with salt and freshly ground black pepper.
  • Pour the chipotle puree over the chicken covering each piece and cook in the oven for 1 hour until the chicken is thoroughly cooked.
  • Serve the chicken with soured cream, Mexican rice and frijoles de olla.

Guadalupe Moreno runs Mi Morena, a tacos de guisado business in the Bay Area, where a number of saucy fillings and toppings are used to mix and match tacos to order. She shared her recipe for tinga de pollo with Leticia Landa and Caleb Zigas for their cookbook "We Are La Cocina." Ms. Moreno's tinga de pollo works perfectly in tacos and also on top of crisp tostadas with lettuce and salsa, inside quesadillas or as a tamal filling. It's a great way to use up any leftover cooked chicken (just skip straight to step 2), whether pulled from a roast or poached bird, or grocery-store rotisserie.

2 pounds bone-in chicken legs, breasts or a combination
1/2 medium white onion
1 celery stalk, cut into 2-inch pieces
2 small carrots, cut into 2-inch pieces
1/4 cup vegetable oil
1 medium white onion, halved and thinly sliced
3/4 cup canned crushed tomatoes
3 chipotles in adobo with sauce (1/3 cup)
2 garlic cloves, peeled
Salt and freshly ground black pepper

Steps:

  • Cook the chicken: Combine the chicken, onion, celery and carrots in a large saucepan and add 4 cups cold water. Add more water if needed to cover the solids. Bring to a boil over high heat, then reduce the heat to maintain a simmer. Cook until the chicken is very tender and falling off the bones, about 45 minutes.
  • Transfer the chicken to a bowl. When cool enough to handle, discard the skin and bones, then pull the meat into very fine shreds. Strain the broth and reserve for Tamales de Pollo or another use.
  • While the chicken cooks, make the sauce: Heat the oil in a large saucepan over medium-high heat. Add the onion and cook, stirring occasionally, until soft and translucent, about 5 minutes. While the onion cooks, puree the tomatoes, chipotles and garlic in a blender until smooth. Add to the pan and bring to a boil. Reduce the heat to simmer. Cook, stirring occasionally, until the sauce thickens, 2 to 3 minutes.
  • Add the chicken to the sauce and gently fold to evenly coat and heat through. Season to taste with salt and pepper and serve immediately or cool to room temperature to use a filling for Tamales de Pollo.

4 boneless, skinless chicken breasts, cut into strips
1 cup all-purpose flour
4 eggs
1/2 cup milk
1/2 cup Parmigiano cheese, grated
1/2 cup pecorino cheese, grated
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh mint
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh marjoram
Kosher salt and freshly ground black pepper, to taste
2 cups bread crumbs with Italian seasoning
Dipping sauces, recipes follow
Simple Iceberg Salad, recipe follows
8 ounces creme fraiche
1 small wedge gorgonzola cheese, crumbled
1/2 teaspoon ground cayenne pepper
1/2 teaspoon paprika
1/2 teaspoon chopped fresh chives
2 egg yolks
1 1/2 cups extra virgin olive oil, divided
1 tablespoon fresh lemon juice, divided
1 tablespoon honey mustard
1 tablespoon jarred roasted garlic
1 tablespoon fresh chives, chopped
1/4 cup sundried tomatoes, thinly chopped
Kosher salt and freshly ground black pepper, to taste
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar

Steps:

  • In a large, deep, heavy-bottomed saute pan, heat the canola oil to 350 degrees F.
  • In a bowl, toss the chicken with flour. In a separate shallow bowl, beat the eggs with the milk, Parmigiano cheese, Pecorino cheese, basil, mint, chives, tarragon, marjoram, salt, and pepper. Pour the bread crumbs onto a deep dish. Shake the excess flour from the chicken and dredge the chicken in the beaten eggs then in the bread crumbs. Dip the chicken in the eggs a second time and then again in the bread crumbs.
  • Fry the chicken in the heated oil until golden brown, about 5 minutes on each side. Drain on paper towels and season lightly with salt. Serve with the dipping sauces and Simple Iceberg Salad.
  • Mix the creme fraiche, gorgonzola, cayenne pepper, paprika, and fresh chives in a bowl until they are smooth. There will still be some small chunks of gorgonzola.
  • In a mixing bowl, whisk the egg yolks with half of the oil and half of the lemon juice. Add the mustard and garlic. While whisking, add the remaining oil and lemon juice. When the texture is smooth and creamy, stir in the chives and sundried tomatoes. Season the aioli with salt, and pepper, to taste. Keep the aioli refrigerated until ready to serve.
  • In a small bowl, whisk together the oil, vinegar, salt, and pepper, to taste. Toss the shredded lettuce with the dressing just before serving.

TAMALES DE POLLO (CHIPOTLE CHICKEN TAMALES)

Guadalupe Moreno's tinga de pollo makes for a delicious filling in this tamales formula from Alicia Villanueva of Alicia's Tamales Los Mayas in Hayward, Calif. Ms. Villanueva shared her recipe with Leticia Landa and Caleb Zigas for their cookbook "We Are La Cocina." Her tamales are made with corn masa flour that's softened and flavored at the same time with both fat and broth. The recipe is a project, but once you've done the work of preparing the husks, filling and masa, the process of filling and wrapping the tamales goes quickly.

20 dried corn husks (from about 8 ounces)
3 1/2 cups/410 grams harina de maíz nixtamalizado (such as Maseca)
1 teaspoon fine salt
1/2 teaspoon baking powder
6 tablespoons lard or vegetable oil
2 1/2 to 3 cups chicken broth or water
1 1/2 cups Tinga de Pollo

Steps:

  • Place the corn husks in a large bowl and add enough warm water to cover. Weigh down with a plate if needed and soak until softened, at least 1 hour and up to 3 hours.
  • Meanwhile, whisk the harina de maíz nixtamalizado, salt and baking powder in a large bowl. Add the lard and rub into the dry ingredients with your fingers until thoroughly incorporated and the mixture is sandy. Add 2 1/2 cups broth, 1/2 cup at a time, and mix and knead in each addition with your hands until fully incorporated before adding the next. The dough should be soft and tacky but not sticky. If needed, continue adding broth 1/4 cup at a time, kneading well after each addition.
  • To assemble a tamal, remove a husk from the water and pat dry. Use your fingers or a palette knife to spread a handful of masa (about 1/4 cup) in the center of the husk, covering about two-thirds of the husk with masa about 1/4-inch thick. Leave at least 3 inches clear at the pointed end and at least an inch on the other sides. Put 1 heaping spoonful of the chicken tinga filling lengthwise down the center of the masa. Wrap by bringing the right side of the dough over the filling and folding in half. Continue rolling tightly to the long end of the husk, then fold the pointed bottom end over the tamal towards the open top. Set aside folded ends down. Repeat with the remaining ingredients.
  • Prepare a large steamer by setting a steamer insert or rack above gently boiling water. Stack the tamales flat seam side down on the insert, leaving an empty space in the center. Cover with remaining husks, then the lid. Steam, replenishing the water as needed, until the tamales are firm and the masa comes away easily from the husk, about 45 to 55 minutes. Remove from the heat and keep warm in the steamer until ready to serve. Steamed and cooled tamales can be wrapped individually and frozen for up to 3 months. Thaw overnight in the refrigerator and steam until heated through to serve.

This is my version of a dish I loved from Cafe Mexico in Victoria, BC. Use more peppers if you like. Quantities are approximate, play with them as you like. If you can't grill go skewerless and just throw everything in a roasting pan (mushrooms and onions in the bottom). Cook in a 450F oven stirring every 5 minutes until meat is done and veggies are tender (about 20 - 30 minutes).

1 chipotle pepper, diced and seeds removed
1 dash adobo sauce
1 tablespoon lime juice
1/2 teaspoon ground cumin
1/2 teaspoon Tex-Mex seasoning

1 sliced zucchini
1 cubed red pepper
2 cubed red onions
1/2 lb halved white mushroom
1 chipotle pepper, diced and seeds removed
2 teaspoons adobo sauce
1/3 cup mayonnaise
1/8 cup water
1 tablespoon lime juice
1 teaspoon cumin
1/2 teaspoon Tex-Mex seasoning
1/2 lb grated monterey jack cheese

Steps:

  • Combine marinade ingredients and marinate chicken for at least two hours; 4 hours seems best.
  • Skewer alternating chicken, zucchini, red onion, red pepper, and mushrooms.
  • Grill skewers and baste with remaining marinade.
  • Make cream sauce by combining all ingredients and chilling until ready to use.
  • Serve skewers over rice, with a sprinkling of cheese and cream sauce.
