Tuscan Fettunta and Le Bruschette: Tuscan Toasted Bread and Bruschetta image

4 large slices country bread, toasted
2 cloves garlic, peeled and halved
1/4 cup/50 ml extra-virgin olive oil, for drizzling

1/4 cup/50 ml extra-virgin olive oil, for drizzling

Steps:

  • For the Tuscan fettunta: Rub each slice of bread with 1/2 a garlic clove. Drizzle the bread with olive oil and sprinkle with salt.
  • For the cannellini bruschetta: Rub a garlic clove over each slice of bread. Mash half the beans and generously spread the cannellini beans on each slice of bread. Drizzle with olive oil and sprinkle with salt.
  • For the avocado bruschetta: Rub each slice of bread with 1/2 a garlic clove. Divide and spread the avocado on each slice of bread. Drizzle with olive oil and sprinkle with salt.

8 slices Tuscan style bread
12 eggs
1/4 cup water
1 teaspoon kosher salt
1/4 tablespoon hot red pepper sauce
1 ounce sweet butter
5 1/2 ounces Montrachet goat cheese, softened
1 1/2 ounces marinated sun dried tomatoes, julienned
Fresh basil leaves, as garnish
Basil Pesto, recipe follows
3/4 cup chopped fresh basil leaves
1 cup olive oil
3/4 cup grated Reggiano Parmesan
1/4 cup pine nuts
2 cloves garlic, chopped
1/4 teaspoon kosher salt
1 turn fresh black pepper
2 teaspoons lemon juice

Steps:

  • Toast the bread and keep while preparing the eggs. Combine the eggs, water, Tabasco and salt in a bowl and whisk until smooth. In a large non-stick omelette pan, melt the butter and add the eggs, stirring with a spatula until the eggs are gently scrambled. Spread the soft goat cheese equally over the slices of toast. Add the scrambled eggs on top of the goat cheese and cut each of the toast slices in half. Put 4 halves on each plate and garnish with sundried tomatoes, fresh basil leaves and drizzle with basil pesto.
  • Combine all the ingredients, except for the olive oil, in a blender. With the blender running, slowly drizzle in the olive oil.

2 tablespoons light whipped butter or light buttery spread
1 (2-inch-wide) French baguette (about 4 ounces)
1/2 teaspoon garlic powder
1 cup fat-free liquid egg substitute
1 plum tomato, diced
1/4 cup chopped fresh basil
Salt and black pepper, optional

Steps:

  • Preheat oven to 450 degrees F.
  • Put butter in a small microwave-safe bowl. Cover and microwave until melted, about 15 seconds. Set aside.
  • Using a sharp serrated knife, carefully cut baguette into 16 half-inch-thick slices. (Discard the ends or reserve for another use.) Spray a large baking sheet with nonstick spray and evenly place the bread on the sheet.
  • Using a pastry brush, evenly brush each slice of bread with melted butter and sprinkle with garlic powder.
  • Bake in the oven until warm and crispy, about 8 minutes.
  • Meanwhile, bring a skillet sprayed with nonstick spray to medium-high heat on the stove. Add egg substitute and scramble until it's mostly cooked, about 3 minutes.
  • Add tomato and basil to the skillet and continue to scramble until fully cooked, about 1 minute.
  • Evenly distribute scrambled egg mixture among the baked bread slices. If you like, season with salt and pepper. Enjoy!

Chorizo Sausage, recipe follows
Pimiento Cheese, recipe follows
Store-bought crispy fried onions, for topping
Cherry Bomb BBQ Sauce, recipe follows
2 diced jalapeños
2 dried guajillo chiles, soaked in water for 2 to 3 hours
1 dried California chile, soaked in water for 2 to 3 hours
1 1/2 ounces cider vinegar
1 pound ground pork
2 teaspoons minced garlic
1 1/2 teaspoons smoked paprika
1 1/2 teaspoons crushed red pepper
1 teaspoon oregano
1 teaspoon ground black pepper
1/2 teaspoon ground cumin
1/2 teaspoon granulated garlic
1/2 teaspoon kosher salt
1/4 teaspoon allspice
1/4 teaspoon ground coriander
1/4 teaspoon dried thyme
1/8 teaspoon marjoram
8 ounces cream cheese, softened
4 ounces drained and diced pimientos
2 cups shredded Cheddar
1/2 cup mayonnaise
1/4 cup crumbled cooked bacon
1/2 teaspoon cayenne pepper
1/2 teaspoon granulated garlic
1/2 teaspoon granulated onion
1/2 teaspoon minced jalapeño
2 cups frozen tart cherries
1 cup ginger ale
7 ounces cherry preserves
4 ounces canned chipotle peppers in adobo sauce

1/4 cup cider vinegar

Steps:

  • Preheat the oven to 400 degrees F.
  • Prep the potatoes by rinsing off thoroughly, then patting dry.
  • Lightly coat the potatoes with the oil, then space evenly on a cookie sheet and par-bake until fork-tender, 35 to 45 minutes. Let cool to room temperature. (Leave the oven on.)
  • Slice the potatoes in half lengthwise and, using a tablespoon, scoop out a "bowl" in each half. Lightly coat the potato boats with oil and sprinkle with salt and pepper. Return the potatoes to the oven and bake until golden brown and slightly crispy, 10 to 15 minutes. Allow to cool thoroughly before handling.
  • Meanwhile, in a large skillet on the stovetop, fry the Chorizo Sausage. Drain on a paper towel and set aside.
  • Fill the potato boats with about 1 tablespoon of Pimiento Cheese each followed by 1 tablespoon chorizo each. Top with the fried onions and Cherry Bomb Sauce, then garnish with the jalapeños.
  • Drain the chiles and remove the stems (reserve the chile water). Add the chiles and vinegar to a blender and purée. If too thick, continue to blend, adding the reserved chile water a little at a time. Mix the purée with the pork, garlic, smoked paprika, crushed red pepper, oregano, black pepper, cumin, garlic, salt, allspice, coriander, thyme and marjoram.
  • Using a hand mixer or stand mixer, combine the cream cheese, pimientos, Cheddar, mayonnaise, bacon, cayenne, granulated garlic, granulated onion and jalapeño in a large bowl and mix thoroughly. (Be sure to start on low speed at first, gradually increasing speed until the mixture is fluffy and the Cheddar is broken down and completely incorporated.)
  • Add the cherries, ginger ale, cherry preserves, chipotles in adobo, ketchup and vinegar to a small saucepan on high heat. Bring to a boil and reduce the heat to medium-low. Continue to simmer until the skins on the cherries are broken down, 20 to 30 minutes. Remove from the heat and transfer to a blender. Blend on high speed until the mixture is completely puréed. Allow to cool to room temperature before storing in the refrigerator.

1 tablespoon fresh lemon juice
1 tablespoon cilantro, chopped
2 tablespoons extra virgin olive oil
24 sea urchin "tongues"
6 rustic bread slices

Steps:

  • Combine the minced onion, sherry, lemon juice, cilantro, and 1 tablespoon olive oil in a bowl. Add the urchins and season with salt and pepper. Let marinate while you grill the bread. Brush the bread slices with the remaining olive oil and grill over medium heat until both sides are lightly colored. Slice the toast into fingers and top with the urchin and serve.
