POGACA (FETA DUMPLINGS)

3 ½ cups all-purpose flour
2 teaspoons baking powder
½ cup canola oil
¼ cup butter, melted
1 cup plain yogurt
3 beaten eggs
1 tablespoon sour cream
1 tablespoon white sugar
1 ½ teaspoons salt
1 cup crumbled feta cheese
1 cup finely chopped fresh parsley
1 tablespoon olive oil
2 teaspoons paprika
2 egg yolks
2 tablespoons sesame seeds

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper. Mix the flour with baking soda in a bowl; set aside.
  • Mix the canola oil, butter, yogurt, eggs, sour cream, sugar, and salt together in a large mixing bowl until smooth. Gradually stir the flour mixture into the wet ingredients to form a soft dough. Knead and squeeze the dough in the bowl until it is no longer sticky, about 5 minutes. Stir the feta cheese, parsley, olive oil, and paprika together in a bowl with a fork to make a filling.
  • Make each dumpling by pinching off about 2 1/2 tablespoons of dough; roll into a ball about 1 3/4 inches across between your hands, and press it into a flat circle 3 inches across on your palm. Spoon 1 scant tablespoon of filling into the center of the circle. Bring the edges of the circle together over the filling, and pinch them together to make a fat, round little stuffed dumpling. Set the dumplings onto the parchment paper-lined baking sheet, seam sides down. Beat the egg yolks in a small bowl, and brush the pogaca tops with the egg yolk. Sprinkle each with about 1/4 teaspoon of sesame seeds.
  • Bake in the preheated oven until the tops are shiny, brown, and crackled, 20 to 30 minutes.

For the dough:
1 cup warm milk
3 tbs sugar
2 tbs (or 2 mini packs) all natural dry yeast
2 eggs (save one yolk for later)
1 cup yogurt
3/4 cup vegetable oil
1.5 tsp salt
6.5 cups flour
Filling:
1lb Feta cheese
1/2 bunch of parsley
Garnish:
Sesame seed
Black Cumin seed

Steps:

  • 1. Mix milk, sugar and yeast. Wait for 15 mins to proof the yeast. Milk should rise by at least 50%. 2. Mix 2 egg whites and one yolk, yogurt, oil, yeast-milk mixture and salt. Slowly add flour - until you have a dough a little softer than your earlobe, but does not stick to your hands (most likely to be around 6.5 cups of flour). Knead the dough well and then cover with a clean towel. 3. Keep the dough in a warm place for about an hour or until it rises to twice the original size. (I turn the oven on to Warm - or lowest temparature- with the door open and keep the dough on the oven tray that is slightly pulled out.) After it is doubled in size, the dough should be fluffy and soft. 4. When the dough rises, make the filling. Mix feta cheese crumbles with finely chopped parsley. 5. Pre-heat oven to 350 fahrenheit. Lightly oil your hands and the surface that you'll use to make the pastries. Take a piece of dough (the size of a big egg). Flatten it into a thick disc using your palms. Put some filling in the middle and then close the sides of the disc pressing the edges well (or they may break during cooking). You can try round or slim shapes but what matters is that the closure line should be left underneath while cooking. 6. Brush the pogacas well with egg yolk. Spread some sesame and cumin seeds on top. Bake at the middle section of oven for ~20 mins or till top of the pogacas turn gold. 7. Once you take it out of the oven, cover with a kitchen towel for 10 mins, and then serve while they're still warm.

2 tablespoons sugar
3 tablespoons oil
1 egg

Steps:

  • Preheat oven to 325 degrees.
  • Dissolve yeast in warm water.
  • Add sugar oil and egg.
  • Gradually stir in flour until combined and soft dough forms.
  • Knead in bowl for 1 minute.
  • Place dough in greased bowl, cover, and let rise until doubled.
  • Roll on floured board into large, slightly flattened circle.
  • Prick with fork all over.
  • Brush top with oil or butter and let sit 20 minutes.
  • Bake for 30 minutes, or until lightly browned.

3 teaspoons active dry yeast
1 ½ teaspoons white sugar
2 tablespoons warm milk
1 cup all-purpose flour, or more as needed
1 cup whole wheat flour
½ cup warm water, or more as needed
¼ cup vegetable oil
½ teaspoon salt
1 teaspoon salted butter, or as needed
1 cup crumbled feta cheese
½ bunch fresh parsley, chopped
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon chili powder
2 tablespoons milk, or as needed
1 teaspoon poppy seeds, or to taste

Steps:

  • Dissolve yeast and sugar in warm milk in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
  • Combine 1 cup all-purpose flour, whole wheat flour, 1/2 cup water, vegetable oil, salt, and yeast mixture in the bowl of a stand mixer fitted with the hook attachment; knead until pliable and not too sticky. Add a little flour if too soft, or warm water if too hard. Cover with a wet cloth and let sit at room temperature for 45 to 50 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking tray with butter.
  • Mix feta cheese, parsley, salt, pepper, and chili powder together in a bowl until well combined.
  • Knead dough for 2 minutes. Divide it into 12 equal portions, and roll each one into a ball. Use your hands or a rolling pin to flatten each ball into a 2- to 3-inch circle. Add a spoon of cheese filling in the middles and fold the edges upward like a bundle, pressing to secure. Place on the prepared baking try, folded-sides down. Brush with milk and sprinkle with poppy seeds.
  • Bake on the top rack of the preheated oven until golden, 30 to 32 minutes.

600 g flour
300 ml nonfat milk
10 g sugar
1/4 ounce yeast
175 ml vegetable oil
1 egg
1 egg yolk
1 teaspoon salt
1 tablespoon poppy seed
1 cup feta cheese
1 cup parsley

Steps:

  • Mix everything together except the egg yolk.
  • Wait for 1 hour for batter to double.
  • Make small rounds as big as half of your palm.
  • Press it with your fingers to make it as big as your palm.
  • Mix feta cheese and parsley.
  • Put the mixture into these small rounds and close it and round it again.
  • Place it on the oiled oven sheet.
  • Brush all the batch with the egg yolk.
  • Place it in the preheated oven for 30-40 minutes in 350°F.
  • Put poppyseed on the batch as desired.

Classic Turkish poğaças, made with olive oil and yogurt, are like healthy cheese-and-herb scones. My variation uses natural sourdough leavening for an even healthier, more flavorful result. I love how layered and crispy these poğaças turn out, and how versatile the dough and fillings are.

Dough
250 grams plain whole milk yogurt (~1 cup)
80 grams extra virgin olive oil (1/3 cup)
70 grams sourdough starter (~¼ cup)
250g refined flour (scant 2 cups)
50g whole wheat flour (heaping 1/3 cup)
10 grams salt (1 ½ tsp)
Fillings and Toppings, add to taste
Herbs such as dill, parsley, oregano, or chives
Cheese such as crumbled Turkish white cheese, feta, or asiago (~70 grams)
Black pepper
Egg yolk to brush on the dough before baking
Sesame and nigella seeds, if desired

Steps:

  • Whisk together the yogurt, olive oil, and sourdough starter in a medium bowl.
  • Add most of the flour, reserving a little in case it's not needed, and add the salt. Mix and knead the dough in the bowl until all the dry ingredients are incorporated. Add more flour as needed to get a soft but not sticky dough.
  • Wash and chop the herbs, and prep (crumble, slice, shred) the cheese you've chosen to use. Then add them as well as the black pepper to the dough by folding and kneading.
  • Cover the dough and let it ferment at room temperature for 4-6 hours. Then refrigerate the dough overnight.
  • The next day, prep a baking sheet with parchment paper.
  • Flip the cold dough out of the bowl and shape it into a tube, about as thick as a baguette.
  • Cut the tube on the diagonal about every 5 cm (2 inches), and place the pieces on the parchment paper smooth side up (as opposed to cut side up).
  • Cover and let the dough rest and rise for an hour or longer, until it's puffy.
  • Preheat your oven to 180°C (355°F).
  • Brush the dough with lightly beaten egg yolk and sprinkle with sesame and nigella seeds.
  • Bake for 25-30 minutes, until golden brown.

1 tablespoons salt
2 tablespoons sugar
1 packages dry yeast
2 cups water
5 cups flour
3 tablespoons oil

Steps:

  • 1. Mix salt, sugar, yeast and water in a large bowl.
  • 2. Add 3 cups flour & mix well (use large wooden spoon). Add 3 Tbsp. oil and mix well, dough will become very sticky. Add 2 cups flour and mix well (use hands).
  • 3. Let dough rest in bowl about 5-minutes. Then take out and knead on lightly floured board for 5- minutes, until smooth.
  • 4. Grease bowl with 1 tsp. of oil. Put dough in & spin so top & bottom is greased. Cover with plastic wrap & let it raise until doubled. To test if doubled - poke with two fingers into dough, if the holes stay the dough has doubled.
  • 5. Take out dough and divide in half. Knead each part about 2-minutes, shape into round ball & flatten with hands to about a 1" high -7 or 8" diameter loaf. Prick with fork deep into dough all over. Makes 2 pogacas (this should be done on a large cookie sheet that has been greased with shortening). Cover & let raise until double.
  • 6. Bake in a preheated 350 degree oven 25 to 30 minutes. Tap bottom, if it sounds hollow its done. Grease top with a little shortening, let cool on rack.

1 teaspoon olive/vegetable oil
1/2 cups butter
1 pack yeast
5 glass flour
1/2 cup warm water
1/2 cup warm milk
1 egg
1 cup cheese (any kind will do)
1/4 cup parsley or dill
1 teaspoon sugar
1 teaspoon salt

Steps:

  • Put the flour, butter, egg white, salt and sugar into a bowl. Melt the yeast with the water and milk. Put it into the bowl. Knead it until it's formed a though dough. (My granny would say, knead it until it feels like earlobe) Make it rest for ten minutes. Preheat the oven. Chop the parsley. If you use some kind of hard cheese (cheddar or gouda... etc). grate it, otherwise, sort it with a fork and put the parsley in. Make small balls as big as an egg out of the dough. Flatten each ball with your fingers and put the filling in the middle. Fold the dough and close the edges with your fingers. (You can make the shape round with rolling it with your hands which is easier, or like a half-moon which looks nicer). Put each of them into the oiled tray. Put some egg yolks on top. Bake it for 20-25 minutes until their tops are crusty and the color turns golden. Enjoy it while it's hot.
