ORGANIC OAT FLOUR DROP BISCUITS

I made some strawberry jam the other day. I really wanted a biscuit to put my jam on so I created this delicious drop biscuit. Enjoy!

Number Of Ingredients 6

1 cup organic oat flour
1/2 tsp salt
2 tsp baking powder
1/3 cup whole milk, or homemade coconut milk
2 tbsp grass fed butter
1 egg

Steps:

  • Mix all dry ingredients together.
  • Cut butter with a fork or pastry cutter into flour.
  • Add wet ingredients to dry ingredients and mix well.
  • Line a cookie sheet with parchment paper (greased with coconut oil).
  • Drop a heaping tablespoon onto a pan.
  • Bake at 425 degrees for 12-15 minutes.

Quick, easy Drop Biscuits. Tender, fluffy, and completely fuss free! So simple to whip up and they turn out perfectly every time.

Number Of Ingredients 11

1/4 cup butter (cold)
1 cup all-purpose flour
1 cup whole wheat pastry flour (or swap white whole wheat flour or regular whole wheat flour*)
1 tablespoon baking powder (I recommend aluminum free)
1/2 teaspoon kosher salt
1 cup whole milk (or buttermilk)
3 tablespoons plain Greek yogurt (I used nonfat)
1 teaspoon honey
Grated parmesan and finely chopped fresh chives (try adding a pinch of garlic powder to the dry ingredients with this one!)
Shredded sharp cheddar and ground black pepper
Shredded gruyere and finely chopped fresh rosemary or thyme

Steps:

  • Place a rack in the center of your oven and preheat to 450 degrees F. Line a large baking sheet with parchment paper or a silicone baking mat. Dice the butter into small pieces and place it in the freezer while you prepare the other ingredients.
  • In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, and salt. (If adding any herbs, garlic powder, or black pepper, do it here.)
  • Scatter the cold butter pieces over the top. With a pastry blender (or my favorite, your fingers), cut in the butter until the mixture resembles coarse crumbs. Some pieces may be the size of small pebbles and others as large as peas.
  • In a separate bowl or large measuring cup, whisk together the milk, Greek yogurt, and honey until smoothly combined. Pour the milk mixture into the dry ingredients a little at a time, stirring lightly between additions. (If adding cheese, add it slowly as you add the milk.) Stop stirring as soon as the dough holds together. It will be very moist and seem wet.
  • Drop the batter by spoonfuls onto a cookie sheet. I like to use a muffin scoop for this-you'll have 9 large or 12(ish) more moderately sized biscuits total. Bake for 10 to 13 minutes, until the tops are golden and spring back lightly when touched. Enjoy warm.

OATMEAL SHORTCAKES WITH SPICED PLUMS

For shortcakes
2 cups all purpose flour
1/2 cup old-fashioned oats
1/2 cup (packed) golden brown sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup chilled unsalted butter, cut into small pieces
2/3 cup whole milk
2 teaspoons sugar
For fruit
1 pound firm but ripe plums (about 6), halved, pitted, each cut into 4 wedges
1/3 cup sugar
2 teaspoons fresh lemon juice
1/2 teaspoon ground ginger
1/8 teaspoon ground cinnamon
2 tablespoons unsalted butter
3/4 cup chilled whipping cream
2 tablespoons powdered sugar

Steps:

  • Make shortcakes:
  • Preheat oven to 425°F. Line large baking sheet with parchment paper. Mix flour, oats, brown sugar, baking powder and salt in large bowl. Using fingertips, rub in butter until mixture resembles coarse meal. Add milk; stir until dough forms.
  • Drop dough onto prepared baking sheet, forming six 2 1/2-inch-diameter biscuits and spacing 3 inches apart. Sprinkle with 2 teaspoons sugar. Bake until biscuits are golden and tester inserted into biscuit comes out clean, about 20 minutes. Transfer to rack. (Can be made 8 hours ahead. Cool. Store airtight at room temperature.)
  • Make fruit:
  • Combine plums, 1/3 cup sugar, lemon juice, ginger and cinnamon in heavy medium saucepan. Cook over medium heat until plums release their juices but are still firm, stirring occasionally, about 4 minutes. Add butter. Stir until butter melts. Cool slightly.
  • Using electric mixer, beat cream and powdered sugar in large bowl until stiff peaks form. Using serrated knife, slice off top 1/3 of biscuits. Transfer biscuit bottoms to plates. Spoon half of plum mixture over biscuits. Spoon whipped cream atop plum mixture. Spoon remaining plum mixture atop cream, dividing equally. Place biscuit tops over plum mixture. Serve immediately.

3 cups packed brown sugar
1 ½ cups white sugar
12 tablespoons unsalted butter, melted
1 (15 ounce) can applesauce
3 large eggs
4 ½ cups old-fashioned rolled oats
3 ¾ cups all-purpose flour
1 ½ teaspoons baking soda
¾ teaspoon baking powder
¾ teaspoon coarse salt
1 pound dried plums, cut into small pieces
½ cup chopped fresh basil, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  • Place sugars and butter in a large bowl. Beat with an electric mixer on low speed until combined. Add applesauce and eggs; mix well until blended, 2 to 3 minutes. Mix in oats, flour, baking soda, baking powder, and salt. Fold in plums and basil.
  • Drop dough onto the baking sheets using a tablespoon-sized cookie scoop, spacing cookies 2 inches apart.
  • Bake in the preheated oven until cookies are golden and just set, about 10 minutes. Let cool on the baking sheets for 5 minutes before transferring to wire racks.
