MACADAMIA-CRUSTED SEA BASS WITH MANGO CREAM SAUCE



Macadamia-Crusted Sea Bass with Mango Cream Sauce image

My husband and I fell in love with sea bass after we made this recipe.

½ mango - peeled, seeded and diced
½ cup heavy cream
1 teaspoon lemon juice
½ cup chopped macadamia nuts
¼ cup seasoned bread crumbs
1 teaspoon olive oil
½ teaspoon black pepper
1 pinch red pepper flakes
1 pound fresh sea bass
salt and ground black pepper to taste
2 cloves minced garlic
1 tablespoon extra virgin olive oil

Steps:

  • In a food processor, combine macadamia nuts, bread crumbs, 1 teaspoon olive oil, black pepper, and red pepper flakes. Process until smooth. Preheat oven to 350 degrees F (175 degrees C).
  • In a small saucepan over medium heat, combine mango, cream, and lemon juice. Bring to a boil, reduce heat, and simmer until thickened.
  • Season fish with salt and black pepper. Heat 1 tablespoon olive oil and crushed garlic in a large skillet over medium heat. Sear the sea bass on both sides, and remove from heat.
  • Transfer fish to preheated oven, and roast until cooked through. Cover the sea bass with macadamia crust, and return to the oven until crust browns. Top with the mango cream sauce.

2 tablespoons shallots, minced (about 2)
2 cloves garlic, minced
1/4 teaspoon (pinch) crushed hot pepper flakes
1 teaspoon of dry oregano
1 tablespoon olive oil
1/2 cup of sweet vermouth (you may use white wine instead)
1/2 cup chicken stock
4 ounces sea urchin (12 to 18 whole urchins)
1/2 cup butter, cut into chunks
1 tablespoon chopped parsley
Salt and ground black pepper to taste
1/2 pound shucked and cooked lobster meat

Steps:

  • In a 9-inch saute pan over medium-high heat sweat shallots, garlic, hot pepper and oregano in the olive oil. About 2 minutes, until limp. Add vermouth and chicken stock, reduce this by half. Add sea urchin, cooking for 30 seconds. Whisk in butter, chunk at a time, breaking up urchins as you mix. Add parsley. Season with salt and pepper. Add lobster at the last minute. Toss in sauce, and the pour over spaghetti. Toss with spaghetti. Pasta: Use same dough as for tortelli-cut as spaghetti.

CHILEAN SEA BASS WITH LIGHT SOY AND CHIVE SAUCE



Chilean Sea Bass with Light Soy and Chive Sauce image

1/2 bunch shallots
4 ounces butter
1/2 cup white wine
1 cup fish stock
1/4 cup heavy cream
3 tablespoons soy
2 large onions
Flour, as needed
Frying oil. as needed
3 bunches scallions
Olive oil
4 servings potatoes, whipped
2 tomatoes
1 bunch chives
5 pieces Chilean sea bass, approximately 6 ounces each
2 lemons

Steps:

  • Make the sauce: Slice shallots, saute with butter and add white wine. Cook total reduction, add fish stock, and reduce to 1/2. Add heavy cream. Blend with 2 ounces of butter; add the soy, salt and pepper to taste. Keep warm.
  • Make the garnish: Slice the onion, dredge in flour. Shake off excess and fry until golden brown. Keep warm on a paper towel. Cut the scallion and saute with olive oil. Mix with the whipped potatoes. Salt and pepper to taste. Keep warm. Peel, de-seed and dice tomatoes. Cut chives.
  • Progression: Saute the bass with olive oil, salt and pepper to taste. When thoroughly cooked squeeze lemon juice on fish.
  • Ready to eat: To serve, place some whipped potatoes on the center of the plate. Add tomatoes and chives to the sauce, place around the potatoes. Place the fish on the potatoes and top with fried onions. Serve hot.

2 (8-ounce) striper fillets, skin removed
Olive oil, to taste
2 tablespoons lemon dill Parmesan sauce (store bought or make your own)
Crushed garlic croutons, to taste
1 tablespoon shredded Parmesan
Salt and pepper
2 (8-ounce) striper fillets, skin on
Chopped tomato
Diced shallots
Chopped cilantro leaves
Sweet peppers, chopped
Chives
Garlic
Olive oil

Steps:

  • Place 2 fillets and place on a sheet of tin foil. Lightly cover them with olive oil, and then drizzle 2 tablespoons of lemon dill Parmesan sauce over each fillet. Sprinkle crushed garlic croutons generously over them and top with 1 tablespoon of cheese over the fillets. Fold tin foil sheets inward to hold juices in. Place these on your grill for about 20 minutes.
  • Take the skin-on fillets and cover both sides with olive oil, salt and pepper. Place directly on BBQ and cook for about 20 minutes. You may score the skin side with a knife to keep filet from curling.
  • Meanwhile, combine all the ingredients for the dressing. Set aside and leave at room temperature.
  • Remove the skinned fillets from the grill and serve with asparagus and angel hair pasta.
  • Transfer the skin-on fillets to a serving platter and generously spoon some of the Tomato Shallot dressing.

2 cups fresh lime juice
1/2 cup Thai fish sauce
1/4 cup minced garlic
1/2 cup Thai bird chiles, seeded and minced
2 tablespoons grated ginger
1/4 cup sesame oil
1/4 cup sugar

Steps:

  • In medium bowl mix lime juice, fish sauce, garlic, chiles, ginger, sesame oil and sugar. Pour half of the sauce over the fish and let sit for 1 hour refrigerated. 10 cups mixed baby greens
2 pink grapefruits, peeled and cut into segments

Steps:

  • Place first 6 ingredients in processor until almost smooth. Add juice and blend well. Season spice mixture with salt pepper. Sprinkle fish with salt and pepper. Rub the spice mixture over each fillet. Refrigerate 2 hours.
  • Preheat grill. Remove fish from marinade and season with salt and pepper. Grill for 3 minutes on each side.
  • Whisk together the ingredients and season with salt and pepper to taste.
  • Place greens in a large bowl and drizzle with some of the dressing, season with salt and pepper and toss to coat, divide among 8 plates.
  • Arrange grapefruit segments and mangoes atop greens and drizzle with some of the dressing; place 1 fish fillet along each salad. Top fish with avocado.

Eggs in Burgundian Wine Sauce image

1 bottle (750ml) dry red wine
2 cups/500ml beef stock
4 to 8 eggs
1 bay leaf
1 carrot, thinly sliced
1 celery stalk, sliced
1 clove garlic, crushed
1 onion, thinly sliced
1 sprig fresh thyme
2 tablespoons butter
2 tablespoons all-purpose flour
Salt and freshly ground pepper
2 tablespoons chopped fresh parsley
2 tablespoons butter
4 ounces/125g button mushrooms, sliced
4 ounces/125g bacon, sliced into paper clip-size pieces
15 to 20 pearl onions, peeled

Steps:

  • For the eggs and sauce: Bring the wine and stock to a slow boil in a saute pan. Gently crack the eggs in and poach until the whites are set and the yolks runny, 2 to 3 minutes. Remove to a plate.
  • Remove any clumps of egg white and bring the wine-stock mixture back to a boil. Add the bay leaf, carrots, celery, garlic, onions and thyme. Simmer until reduced by half and concentrated, about 20 minutes.
  • For the garnish: While the sauce reduces, melt 1 spoonful of the butter in a frying pan and cook the mushrooms, about 3 minutes. Remove. Add the second spoonful of butter and fry the bacon until brown. Remove the bacon with a slotted spoon and drain on paper towels. Fry the onions in the fat left in the pan until tender and golden, about 10 minutes. Drain off the excess fat and put the bacon and mushrooms back in.
  • Once the sauce has reduced, knead the butter and flour together to form a paste. Whisk it, a piece at a time, into the simmering sauce until thick enough to coat a spoon. Strain the sauce over the garnish. Bring to a boil, and check the seasonings. Gently place the poached eggs in the sauce to reheat for a minute. Serve the eggs in wide, shallow bowls with some garnish and sauce. Scatter with the parsley.
