Roasted, thinly sliced yams or potato of your choice, quickly adds a yummy side-dish to your meal. Best when served with chicken, steak, or a mild fish.

1 large yam, peeled and cut into 1/4 inch thick slices
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons olive oil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet or shallow baking dish with aluminum foil.
  • Arrange slices of potato in the prepared pan so they are overlapping slightly. Season with salt and pepper and then drizzle olive oil over them as evenly as possible.
  • Bake in the preheated oven until potatoes are tender and have begun to wrinkle around the edges, about 30 minutes.

1/2 cup (1 stick) unsalted butter, room temperature
3 tablespoons mild-flavored (light) molasses
1 teaspoon ground cinnamon
1 teaspoon grated orange peel
1 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
6 9- to 10-ounce yams (red-skinned sweet potatoes)

Steps:

  • Using electric mixer, beat first 7 ingredients in medium bowl until fluffy. (Can be prepared 1 week ahead. Cover and chill. Bring to room temperature before using.)
  • Preheat oven to 350°F. Line large baking sheet with heavy-duty foil. Using small, sharp knife, make one 1/2-inch-deep lengthwise slit in each yam, leaving 1 inch of yam uncut at each end. Place yams on baking sheet. Bake yams until tender, about 1 hour 15 minutes.
  • Cut slits across center of each yam. Press ends toward center to expose flesh. Transfer yams to platter. Spoon 1 tablespoon spiced butter into each. Pass remaining spiced butter separately.

1 cup (2 sticks) butter, room temperature
1/4 cup pure maple syrup
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/2 teaspoon ground black pepper
8 small yams (red-skinned sweet potatoes)

Steps:

  • Mix first 5 ingredients in medium bowl. (Can be made 3 days ahead. Cover and chill. Bring to room temperature before using.)
  • Preheat oven to 375°F. Lightly pierce potatoes all over with fork. Set potatoes directly on oven rack; bake until tender when pierced with skewer, about 1 hour. Cut cross in top of each potato. Using oven mitts to protect hands, squeeze potatoes gently in from sides, forcing crosses to open. Spoon 1 tablespoon butter into each potato. Serve, passing remaining butter separately.

Baked Sweet Potatoes image

These make a great lunch or snack. They get sweeter over time in the refrigerator, so bake some up and cut thick slices to go with cottage cheese, goat cheese, or feta for a quick lunch.

4 medium sweet potatoes, scrubbed

Steps:

  • Preheat the oven to 425ºF. Scrub sweet potatoes and pierce in several places with a sharp knife. Line a baking sheet with foil and place the potatoes on top. Bake for 45 minutes to an hour, depending on the size of the potatoes, until thoroughly soft and beginning to ooze. Remove from the heat.
  • Place on a plate or in a dish and allow to cool. Cover with plastic wrap and refrigerate (they will continue to ooze and sweeten). Serve cold (cut in thick slices and remove the skin) or room temperature, or reheat for 20 to 30 minutes in a 350ºF oven.
