These pizza turnovers with spicy bison sausage with pepperoni seasoning are easy to make for a great snack or weeknight dinner.

1 (13.8 ounce) package refrigerated pizza dough
¾ cup bison sausage with pepperoni seasoning
¾ cup shredded mozzarella cheese
½ cup pizza sauce
3 tablespoons sliced green onions
Milk
¼ cup grated Parmesan cheese
Pizza sauce, warmed

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with foil; grease foil. Set baking sheet aside. Unroll pizza dough onto a lightly floured surface. Roll dough into a 15-inch square. Cut dough into nine 5-inch squares.
  • For filling, combine bison pepperoni, mozzarella cheese, the 1/2 cup pizza sauce, and the green onions in a medium bowl. Place about 3 tablespoons of the filling on each dough square. Fold one corner of each square over filling to the opposite corner, stretching dough as needed to cover the filling. Seal edges and prick tops with a fork.
  • Place turnovers on the prepared baking sheet. Brush lightly with milk and sprinkle with Parmesan cheese. Bake for 15 to 18 minutes or until golden brown. Serve with additional warm pizza sauce.

3 tablespoons chopped fresh mushrooms
2 tablespoons chopped green pepper
2 tablespoons chopped onion
1 tablespoon butter
5 tablespoons tomato paste
2 tablespoons water
1/2 teaspoon dried oregano
1/8 teaspoon garlic powder
1/2 cup shredded part-skim mozzarella cheese
1 package (15 ounces) refrigerated pie pastry
1 egg, lightly beaten

Steps:

  • In a small saucepan, saute the mushrooms, green pepper and onion in butter until tender. Add the tomato paste, water, oregano and garlic powder. Reduce heat to medium-low. Stir in cheese until melted. Remove from the heat., Cut 3-1/2-in. circles from pie pastry. Place 1 teaspoon filling in the center of each circle. Brush edges of dough with water. Fold each circle in half; seal edges with a fork. Brush the tops with beaten egg. Place the turnovers on a greased baking sheet., Bake at 425° for 12-14 minutes or until golden brown.

5 ounces reduced-fat italian bulk turkey sausage (mild)
1/2 cup pizza sauce
nonstick olive oil flavored cooking spray
1 (10 ounce) package prepared pizza crust
1/3 cup shredded reduced-fat Italian cheese blend

Steps:

  • Preheat oven to 425°F.
  • Cook sausage in nonstick saucepan until browned, stirring with spoon to break up meat.
  • Drain off fat.
  • Stir in pizza sauce.
  • Cook until hot.
  • Spray baking sheet with Pam.
  • Unroll pizza dough onto baking sheet.
  • Pat into 12x8” rectangle.
  • Cut into six (4x4”) squares.
  • Divide sausage mixture evenly among squares.
  • Sprinkle with cheese.
  • Lift one corner of each square and fold dough over filling to opposite corner, making a triangle.
  • Press edges with tines of fork to seal.
  • Bake 11-13 minutes or until golden brown.
  • Serve immediately or follow directions for freezing and reheating.
  • Note: To freeze turnovers, remove to wire rack to cool for 30 minutes.
  • Individually wrap in plastic wrap, place in freezer container or plastic freezer bag and freeze.
  • To reheat turnovers, preheat oven to 400.
  • Unwrap turnovers.
  • Place on ungreased baking pan.
  • Cover loosely with foil.
  • Bake for 18 to 22 minutes or until hot.
  • Or, place one turnover on a paper-towel-lined microwavable plate.
