All-purpose flour, for dusting
Three 1-pound balls pizza dough
6 tablespoons unsalted butter, melted
6 tablespoons extra-virgin olive oil
1/4 cup minced fresh parsley
1 teaspoon garlic powder
6 cloves garlic, minced
Kosher salt
1/2 cup plus 2 tablespoons grated Parmesan
8 ounces cream cheese
1 cup whole milk ricotta
1/2 cup heavy cream
1 teaspoon crushed red pepper flakes
One 8-ounce bag shredded mozzarella
2 cups jarred marinara sauce
1 cup mini pepperoni
1/2 green bell pepper, cut into matchsticks
1/2 red onion, cut into matchsticks
1/4 cup sliced black olives
4 leaves fresh basil, sliced thinly

Steps:

  • Preheat the oven to 375 degrees F.
  • Dust a work surface with flour to keep the dough from sticking. Divide each dough ball into 12 equal-size pieces. Roll each piece into an 8-inch rope and twist into a knot. Arrange the knots around the edge of a 13-by-18-inch sheet pan, leaving 1/4 inch between each. Use the remaining knots to form 2 lines to divide the pan into 3 sections widthwise. Cover the pan with a clean kitchen towel and let the dough rise, about 15 minutes.
  • Meanwhile, make the garlic oil. Combine the butter, olive oil, parsley, garlic powder, fresh garlic and 2 teaspoons salt in a medium bowl. Stir to combine.
  • Brush the knots with about 1/4 cup of the garlic oil and sprinkle with 2 tablespoons Parmesan. Bake until just starting to brown, about 20 minutes. (The knots won't be fully baked.) Reduce the oven temperature to 350 degrees F.
  • Meanwhile, combine the cream cheese, ricotta, heavy cream, red pepper flakes, 1 cup mozzarella, the remaining 1/2 cup Parmesan and 6 tablespoons of the garlic oil in a large bowl. Beat with an electric mixer until fluffy and combined, about 3 minutes.
  • Make the dips in the pan of half-baked knots. Divide the marinara sauce evenly between the far left and far right sections. Sprinkle half of the pepperoni over the right-hand section. Sprinkle half of the peppers and onions over the left-hand section. Then dollop and spread two-thirds of the ricotta mixture in the center section. Divide the remaining ricotta mixture between the right and left sections, dolloping it over the sauce and gently spreading with the back of a spoon or small offset spatula. Divide the remaining cup mozzarella between the far right and far left sections, sprinkling it on. Top the far right section with the remaining pepperoni and the far left section with the remaining peppers, onions and olives. Bake until the knots are golden and the dips are bubbling and lightly browned, 20 to 25 more minutes.
  • Brush the knots with the remaining garlic oil and sprinkle the fresh basil over the center section.

1 1/8 teaspoons active dry yeast (half a 1/4-ounce package)
4 1/2 teaspoons extra-virgin olive oil, plus more for brushing
1 3/4 cups all-purpose flour, plus more for dusting (see Cook's Note)
Kosher salt
1/2 cup jarred pizza sauce
8 ounces shredded mozzarella (about 2 cups), such as Good & Gather™️ Mozzarella Cheese
1/4 cup mild banana pepper rings
1/4 cup sliced roasted red peppers
1 pinch dried oregano, plus more for serving
1.5 ounces thinly sliced salami (3 to 4 slices)
1.5 ounces thinly sliced capocollo (3 to 4 slices)
1.5 ounces thinly sliced prosciutto (3 to 4 slices), such as Good & Gather™️ Prosciutto
Balsamic glaze, for serving
Freshly grated Parmesan, for serving
3 tablespoons unsalted butter, melted
2 tablespoons plus 2 teaspoons hot sauce
8 ounces shredded mozzarella (about 2 cups), such as Good & Gather™️ Mozzarella Cheese
8 ounces frozen cooked breaded shrimp, tails removed (about 16 shrimp)
1/4 teaspoon Cajun seasoning
3 tablespoons mayonnaise
1 tablespoon Creole mustard
1 tablespoon finely chopped dill pickles
2 teaspoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper
1 cup shredded iceberg or butter lettuce
3 tablespoons extra-virgin olive oil
1 large clove garlic, finely grated
8 ounces shredded mozzarella (about 2 cups), such as Good & Gather™️ Mozzarella Cheese
6 slices bacon, cooked and crumbled
4 large eggs
Kosher salt and freshly ground black pepper
1 tablespoon finely chopped chives

Steps:

  • For the pizza dough: Whisk 2/3 cup warm water (105 to 110 degrees F) and the sugar in a medium bowl; sprinkle the yeast on top. Set aside until foamy, about 10 minutes. Stir in the olive oil.
  • Whisk the flour and 3/4 teaspoon salt in a large bowl. Make a well in the center of the flour and pour in the yeast mixture. Gradually stir with a wooden spoon, starting from the inside of the well and working your way out, to make a rough dough.
  • Turn out the dough onto a lightly floured surface. Knead until smooth and elastic, about 5 minutes, dusting with more flour if necessary. Form into a ball. Brush a large bowl with olive oil, add the ball of dough and turn to coat with the oil. Cover tightly with plastic wrap and set aside at room temperature until doubled in size, about 1 hour 30 minutes. If not making pizza immediately, at this point you can wrap the dough in plastic and freeze for up to 1 month. Thaw in the refrigerator overnight and then allow to come to room temperature before rolling out.
  • One hour before baking, put a pizza stone or large inverted baking sheet on the lowest oven rack and preheat to 500 degrees F.
  • Place the ball of dough on a large piece of parchment that's been lightly dusted with flour, then stretch into a 12- to 14-inch round. Slide the parchment with the dough onto a pizza peel or a second inverted baking sheet. Top as desired and bake following the instructions below.
  • For the Italian sub pizza: Spread the pizza sauce on the pizza dough, leaving a 1/2-inch border. Top with half of the mozzarella, then add the banana peppers, roasted red peppers, the remaining mozzarella and a pinch of oregano. Slide the pizza (on the parchment) onto the hot stone or baking sheet. Bake until the crust is golden brown and the cheese is bubbling, 10 to 12 minutes. Top with the salami, capocollo, prosciutto, a drizzle of balsamic glaze, another pinch of dried oregano and a sprinkle of Parmesan. Let cool 1 to 2 minutes before slicing.
  • For the shrimp po' boy pizza: Stir together the butter and 2 tablespoons of the hot sauce in a small bowl, then brush on the pizza dough, leaving a 1/2-inch border. Top with half of the mozzarella, then add the shrimp and remaining mozzarella. Sprinkle with the Cajun seasoning. Slide the pizza (on the parchment) onto the hot stone or baking sheet. Bake until the crust is golden brown and the cheese is bubbling, 10 to 12 minutes. Meanwhile, make a remoulade sauce by stirring together the mayonnaise, mustard, pickles, lemon juice, remaining 2 teaspoons hot sauce and a pinch of salt and pepper in a small bowl. Top the pizza with the lettuce and drizzle with the remoulade sauce. Let cool 1 to 2 minutes before slicing.
  • For the breakfast sandwich pizza: Stir together the olive oil and grated garlic in a small bowl, then brush on the pizza dough, leaving a 1/2-inch border. Top with half of the mozzarella, then add the bacon and remaining mozzarella. Crack the eggs on top of the pizza, leaving about 1 inch between each egg, then sprinkle with a pinch of salt and several grinds of black pepper. Slide the pizza (on the parchment) onto the hot stone or baking sheet. Bake until the crust is golden brown and the cheese is bubbling, 10 to 12 minutes. Top with the chopped chives. Let cool 1 to 2 minutes before slicing.
