2 cups all-purpose flour
2 packages (3.4 ounces each) instant pistachio pudding mix
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 large egg
1/2 cup canola oil
1/4 cup water
1 teaspoon vanilla extract
1/2 cup chopped pistachios, optional
FROSTING:
3 ounces cream cheese, softened
1/4 cup butter, softened
1 teaspoon vanilla extract
1/8 teaspoon salt
3 cups confectioners' sugar
Optional decorations: candy eyeballs, M&M's minis, milk chocolate M&M's, Life Savers hard candies and gummies, regular and mini peanut butter cups, licorice twists, shoestring licorice, Starburst fruit chews, mega and regular Smarties, Nerds, Runts, Snaps chewy candies, candy corn, tiny-size Chiclets gum, butterscotch hard candies, Rolo candies, Caramel Creams and PayDay candy bar

Steps:

  • Preheat oven to 350°. In a large bowl, whisk flour, pudding mix, sugar, baking powder and salt. In another bowl, whisk egg, oil, water and vanilla until blended; stir into flour mixture. If desired, stir in pistachios. (Dough will be stiff.), Press dough into a greased 13x9-in. baking pan. Bake 20-25 minutes or until edges begin to brown. Cool completely in pan on a wire rack., In a large bowl, beat cream cheese, butter, vanilla and salt until blended. Gradually beat in confectioners' sugar. Spread over top. Decorate as desired., Cut into bars before serving. Store in the refrigerator.

Dark Chocolate Pistachio Bars are naturally sweetened and filled with good-for-you ingredients! Plus they are simple to make and adapt!

1 cup packed pitted dates (deglect noor recommended)
1/3 cup creamy peanut butter
1/3 cup pure maple syrup
1 teaspoon vanilla extract
1/2 cup Quick-1 minute Oats
1 cup Old fashioned Oats
3/4 cup shelled pistachios (chopped)
1/2 cup miniature dark chocolate chips
1 cup dark or milk chocolate chips
2 teaspoons coconut oil

Steps:

  • Line an 8 x 8 pan with parchment paper or foil with an overhang for easy removal. Don't spray with cooking spray as it makes these greasy. Set aside.
  • In a small blender jar (I use the Twister jar for Blendtec) or a food processor, pulse the pitted dates to create a very thick and sticky paste. (If your dates aren't moist, soak in warm water and then drain and dry very well)
  • Scoop out the date paste and place in a bowl.
  • Slightly warm up the peanut butter and maple syrup in the microwave (like 20 seconds) and stir into the date paste. Stir well.
  • Add in the vanilla extract.
  • Stir in the quick oats and the old fashioned oats.
  • Add in the miniature chocolate chips and chopped pistachios
  • Knead with your hands to get it all well mixed.
  • Press into the prepared 8 x 8 baking pan and set aside while assembling the melted chocolate.
  • In a large microwave safe bowl combine the chocolate chips and coconut oil (measured when the oil is in a hardened state).
  • Microwave in bursts of 15 seconds stirring in between each burst for 15 seconds until melted.
  • Pour evenly over the bars and tip the pan around to move the chocolate in an even layer on top.
  • Place in the fridge (covered) until the chocolate is completely set.
  • Remove from the pan and cut into bars.
  • Store in the fridge, covered.

1 cup unsalted roasted pistachios (if you can only find salted, that's fine; just omit adding salt)
1/2 cup white chocolate chips
1 tablespoon sugar
1/8 teaspoon kosher salt
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
2 cups milk or almond milk

Steps:

  • For the pistachio white chocolate butter: Combine the pistachios, white chocolate chips, sugar, salt, almond extract and vanilla in a food processor and blend, scraping the sides occasionally, until very creamy and spreadable, about 10 minutes.
  • For the white hot chocolate: Gently heat the milk in a saucepan over medium heat and whisk in 4 to 6 tablespoons of the pistachio butter (4 tablespoons for a nice, light, not-too-sweet situation, or 6 for a very rich desserty sitch!). Save the remaining pistachio butter for another use.

1 cup butter, softened
2/3 cup powdered sugar
2 cups Gold Medal™ all-purpose flour
1/4 teaspoon baking powder
1/2 cup finely chopped pistachio nuts
1 1/2 cups whipping cream
2 packages (8 oz each) cream cheese, softened
1 cup powdered sugar
1/2 teaspoon vanilla
1 box (4-serving size) pistachio instant pudding and pie filling mix
1 cup milk

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • In large bowl, beat butter and 2/3 cup powdered sugar with electric mixer on low speed until blended. Beat on medium speed until light and fluffy. Beat in flour and baking powder. Stir in nuts. Press dough in bottom of pan.
  • Bake 30 to 35 minutes or until golden brown. Cool completely in pan on cooling rack, about 1 hour.
  • In chilled medium bowl, beat whipping cream with electric mixer on high speed until soft peaks form. In another medium bowl, beat cream cheese and 1 cup powdered sugar on medium speed 1 minute or until creamy. Fold in vanilla and 1 1/2 cups of the whipped cream. Spread over baked crust. Refrigerate.
  • In medium bowl, mix dry pudding mix and 1 cup milk as directed on package. Refrigerate 5 minutes. Fold in remaining whipped cream. Spread over cream cheese layer. Refrigerate at least 2 hours or until chilled. Cut into 6 rows by 4 rows. Garnish with additional chopped nuts, if desired. Store covered in refrigerator.

2 tablespoons brown sugar
1/2 teaspoon ground cinnamon

3/4 cup dried tart cherries, chopped
1 cup white baking chips
1 cup dark chocolate chips
1 cup pistachios, coarsely chopped
1 cup sweetened condensed milk
1 teaspoon grated orange zest
3 cups miniature marshmallows

Steps:

  • Preheat oven to 350°. Line a 13x9-in. pan with foil, letting ends extend up sides; grease foil., Mix cracker crumbs, brown sugar and cinnamon; stir in butter. Press onto bottom of prepared pan. Sprinkle evenly with cherries, baking chips and pistachios. In a small bowl, mix milk and orange zest; drizzle over top., Bake 20 minutes. Makes for a very delicious dessert to take to a family gathering or any occasion and guaranteed you'll get lots of requests for the recipe. Bet when you try them, you won't be able to stop at just one!!!

1 cup flour
1/2 cup butter or 1/2 cup margarine
2 tablespoons sugar
1/4 cup chopped nuts
2/3 cup icing sugar
1 (8 ounce) package cream cheese
1/2 liter Cool Whip
2 (113 g) packages instant pistachio pudding mix
2 1/2 cups milk

Steps:

  • Mix first layer and press into 9 x 13 pan. Bake at 350 degrees for 15 minutes.
  • Combine ingredients for second layer and spread on first layer.
  • Mix pudding and milk; spread over second layer.
  • Spread remaining Cool Whip over third layer.
  • Sprinkle with chopped nuts.
  • Place in refrigerator until ready to serve.

CHOCOLATE-PISTACHIO COOKIES

1/2 cup sugar
2 large egg yolks, lightly beaten
3 ounces semisweet chocolate, melted and cooled
4 ounces salted shelled pistachios (about 1 cup), ground to a paste in a food processor
1 large egg white
1/8 teaspoon pure vanilla extract
Pinch of coarse salt
6 ounces bittersweet chocolate, chopped
1 tablespoon vegetable shortening
For the garnish: slivered, unsalted, shelled pistachios (optional)

Steps:

  • Make filling: Bring 1/4 cup sugar and 1/4 cup water to a simmer in a small saucepan over medium heat, stirring until sugar has dissolved; set aside.
  • Put egg yolks in the heatproof bowl of an electric mixer set over a pan of simmering water. Whisk by hand until yolks are warm to the touch, about 2 minutes. Fit mixer with the whisk attachment. Mix yolks on medium speed; pour in sugar syrup. Raise speed to high; mix until mixture is cool and fluffy, about 3 minutes. Reduce speed to medium; drizzle in melted chocolate. Refrigerate until firm, about 45 minutes.
  • Make cookies: Put pistachio paste and rest of sugar in the clean bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until smooth. Mix in the egg white, vanilla, and salt.
  • Preheat oven to 350 degrees. Transfer dough to a pastry bag fitted with a small (about 1/4 inch) plain round tip (such as Ateco #10). Pipe 1-inch rounds onto a baking sheet lined with parchment paper, spacing about 1 inch apart.
  • Bake cookies until firm and golden around edges, about 10 minutes. Transfer on parchment to a wire rack, and let cool completely.
  • Place cookies, bottom sides up, on a wire rack set over a baking sheet. Spread 1 to 1 1/2 teaspoons chocolate filling on bottom of half of the cookies. Sandwich with remaining cookies. Freeze 1 hour.
  • Make glaze: Melt chocolate in a heatproof bowl set over a pan of simmering water, stirring occasionally. Remove from heat. Add shortening; stir until combined. Let cool, stirring, until mixture is lukewarm.
  • Using a chocolate fork or regular fork, hold 1 cookie at a time above bowl of chocolate glaze. Spoon glaze over cookie, letting excess drip back into bowl. Transfer to a wire rack set over a baking sheet. Garnish with slivered pistachios. Refrigerate until set, 5 minutes.
