1 cup butter
1 cup packed brown sugar
¼ cup milk
1 teaspoon vanilla extract
2 cups all-purpose flour
½ teaspoon baking soda
1 cup rolled oats
1 cup raisins

Steps:

  • Cream together butter or margarine, brown sugar, milk and vanilla. Mix well.
  • Stir in flour and baking soda. Blend well. Mix in one cup oatmeal and stir. Add in raisins and mix well.
  • Drop by teaspoonfuls onto cookie sheets and bake at 350 degrees F (175 degrees C) for 10 - 12 minutes.

COOKIES:
4 sticks (1-pound) salted butter, softened
1 1/2 cups granulated sugar
2 large egg yolks
1 tablespoon lemon zest
1 tablespoon lime zest
4 cups all-purpose flour
2 tablespoons lemon or lime juice (or 1 tablespoon of each)
1/2 teaspoon coconut extract
ICING:
3 cups powdered sugar, plus more if needed
2 tablespoons cream of coconut
1 tablespoon lemon zest, plus extra for decorating
1 tablespoon lime zest, plus extra for decorating
1 tablespoon milk
1 teaspoon coconut extract
dash of salt
1 large egg white
juice of 1 lemon, plus more if needed
juice of 1 lime, plus more if needed

Steps:

  • COOKIES: Preheat the oven to 350°F. Using a hand or stand mixer, cream the butter and granulated sugar until combined. Add the egg yolks and mix until combined. Add the lemon and lime zest. Add the flour and mix until just combined. Next, add the citrus juice and coconut extract, and mix the dough until it comes together. Scoop out tablespoons of dough, roll into balls between your hands and place on a baking sheet. Bake until not quite starting to turn brown, 12 to 13 minutes. Remove from the oven but keep the cookies on the baking sheet for 3 to 4 minutes. Use a spatula to move them to a cooling rack to cool completely. ICING: Add the powdered sugar, cream of coconut, lemon, and lime zest, milk, coconut extract, salt, egg white, and lemon and lime juice to a large bowl. Whisk thoroughly until combined, adding either more powdered sugar or more juice until it reaches a pourable but still thick consistency. Drizzle the icing across the cookies in several lines, and then repeat in the other direction. Sprinkle the cookies with extra zest before the icing sets.

1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 cup butter
1 egg
1/2 cup shortening
1 cup sugar
1 teaspoon vanilla
2 tablespoons milk

Steps:

  • All ingredients should be at room temperature.
  • Sift together flour, soda, and salt.
  • Cream together butter, shortening, sugar, and vanilla.
  • Add egg. Mix until fluffy.
  • Stir in dry ingredients until smooth.
  • Blend in milk.
  • Drop by teaspoonful onto greased cookie sheet.
  • Flatten with bottom of glass dipped in suger.
  • Bake at 375 degrees 10-12 minutes. Cool.

1 cup salted butter, slightly softened
1 cup powdered sugar (confectioners)
1 egg
2 teaspoons vanilla
2 1/2 cups flour
1/2 cup unsweetened cocoa powder
1 teaspoon salt
4 ounces white baking chocolate or 4 ounces almond bark
8 peppermint candies (red or green)

Steps:

  • Cream softened butter with powdered sugar. Add egg and vanilla and mix to combine. Add dry ingredients and mix together until dough comes together. Place plastic wrap on surface of dough and refrigerate for 2 hours.
  • In the meantime, unwrap candies and place them in a plastic bag. Beat with a mallet until finely crushed, leaving larger chunks if desired.
  • Preheat oven to 375 degrees.
  • Roll cookie dough in walnut-sized pieces and place on a cookie sheet. Gently press balls flat with a plain, smooth surface.
  • Bake for 7 to 9 minutes, being careful not to burn. Cookies will remain the same general size and shape after they bake. Remove from oven and place cookies on a cooling rack. Allow them to cool completely.
  • Place crushed candies in bowl. Melt almond bark in the microwave. Dip cooled cookies into almond bark, coating half the cookie. Immediately sprinkle crushed peppermints over both sides of the almond bark. Gently set on parchment paper or other nonstick surface and allow to cool before serving.

2/3 cup softened butter
1 cup sugar
2 eggs
1/2 teaspoon baking soda
1 (12 ounce) package semi-sweet chocolate chips
2/3 cup butter flavor shortening
1 cup light brown sugar
1 tablespoon vanilla extract
3 1/4 cups all-purpose flour, sifted
1/2 teaspoon salt
1 1/2 cups chopped walnuts

Steps:

  • Preheat oven to 375 degrees F.
  • Blend butter and shortening until smooth.
  • Add both sugars and cream well.
  • Add eggs, beating after each egg.
  • Stir in vanilla.
  • Mix dry ingredients and gradually add to batter.
  • Add chocolate chips and nuts.
  • Mix well and drop by teaspoonfuls onto ungreased baking sheet.
  • Bake for 8- 10 minutes, depending on you oven.
  • Cool briefly on baking sheet then move to cooling rack to cool completely.

FIRST CREAM BUTTER AND SUGAR
3/4 c butter (1 1/2 sticks)
1 c brown sugar
NEXT BEAT IN EGG & MOLASSES
1 egg
3/4 c molasses
IN SEPERATE BOWL MIX DRY INGREDIENTS & ADD IN THIRDS.
2 1/2 c flour
2 tsp baking soda
1 pinch salt
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp ground cloves

Steps:

  • 1. Cream butter and brown sugar in mixer.
  • 2. Next beat in egg and molasses.
  • 3. Add dry ingredients in thirds.
  • 4. Make into balls about 1 inch or so. Roll balls in sugar in the raw. Put on cookie sheet.
  • 5. Bake in 350 deg F oven for about 9-10 minutes for soft cookie.

This recipe has had updates like: wax paper and refrigerate... but my grandmother told me that they use to form the dough into balls and press them flat with a glass. This cookie is so good... but...

3 c flour
1 tsp baking soda
1 Tbsp salt
1 c shortening
1 c sugar
2 large eggs
1 Tbsp vanilla extract
1 c walnuts or pecans (chopped small)

Steps:

  • 1. Sift together flour, baking soda and salt. Set aside
  • 2. Cream together the shortening, sugar, then add eggs and vanilla.
  • 3. Slowly add the flour mixture to the shortening mixture, in small amounts at a time. Add nuts.
  • 4. Form the dough into an oval shaped log. Wrap in wax paper. Refrigerate over night.
  • 5. Preheat oven to 350 degrees.
  • 6. Remove dough log from refrigerator and remove wax paper. Slice very thin. Place slices on a greased baking sheet. Bake for 10 -15 minutes.

I couldn't believe my luck when I found this recipe in "The Los Angeles Times California Cookbook" (1981). The Pioneer Boulangerie was a fabulous bakery/restaurant in the Ocean Park area of Santa Monica; my friends and I lived on these fabulous chocolate chip cookies for years! The Boulangerie disappeared some time in the 1990s, but it's great to know these cookies can still be enjoyed.

1 lb butter
1/2 teaspoon salt
2 teaspoons vanilla extract
4 1/2 cups flour
12 ounces semi-sweet chocolate bits
2 cups powdered sugar

Steps:

  • Cream together butter and two cups of powdered sugar.
  • Add salt, vanilla, and flour and mix until blended. Mixture will be stiff!
  • Stir in chocolate pieces.
  • Pinch off pieces of dough. Roll into 1" balls and flatten with a fork on a baking sheet.
  • Bake at 350 for 15 minutes. Sprinkle with additional powdered sugar while still hot.
