1 package (8 ounces) cream cheese, softened
1/2 to 1 teaspoon mint extract
7-1/2 to 8-1/2 cups confectioners' sugar
Red and green food coloring
Additional confectioners' sugar

Steps:

  • In a large bowl, beat cream cheese and extract until smooth. Gradually beat in as much confectioners' sugar as possible., Turn onto a work surface dusted with confectioners' sugar; knead in remaining confectioners' sugar until smooth and sugar is absorbed (mixture will be stiff). Divide mixture in half. Using food coloring, tint one portion pink and the other portion light green, kneading until blended., Divide each portion in half; shape each half into a 10-in. log to make two pink logs and two green logs. Place one log on a 12-in. piece of waxed paper lightly dusted with confectioners' sugar. Flatten log slightly; cover with a second piece of waxed paper. Roll out candy mixture into a 12-in. x 5-in. rectangle. Repeat with remaining logs., Remove top sheet of waxed paper from one pink and one green rectangle. Place one rectangle over the other. Roll up jelly-roll style, starting with a long side. Wrap in waxed paper; twist ends. Repeat with remaining rectangles. Chill overnight., To serve, cut candy into 1/2-in. slices. Store in an airtight container in the refrigerator for up to 1 week.

2 (8 ounce) packages cream cheese, softened
1 (1 ounce) package ranch dressing mix
2 green onions, minced
4 (12 inch) flour tortillas
½ cup red bell pepper, diced
½ cup diced celery
1 (2 ounce) can sliced black olives
½ cup shredded Cheddar cheese

Steps:

  • In a medium-size mixing bowl, combine cream cheese, ranch dressing mix, and green onions. Spread this mixture on each tortilla. Sprinkle red pepper, celery, black olives, and cheese (if you'd like) over the cream cheese mixture. Roll up the tortillas, then wrap them tightly in aluminum foil.
  • Chill 2 hours or overnight. Cut off ends of the rolls, and slice the chilled rolls into 1 inch slices.

3/4 cup butter, softened
8 ounces cream cheese, softened
1 egg, separated
2 cups flour
1 tablespoon baking powder
30 wooden popsticks
1 cup colored sugar, one or several colors
30 candy coated chocolate candies

Steps:

  • With a paddle attachment, beat butter, cream cheese, and egg yolk until smooth. Stir in flour and baking powder. Mix until stiff dough forms. Cover with plastic wrap and refrigerate for 1 hour. Lightly beat egg white and set aside.
  • Preheat oven to 350 degrees F.
  • On lightly floured surface, roll dough, 1/2 at a time, into a 15 by 9-inch rectangle. With sharp knife, cut dough into 3-inch squares. Place 3 inches apart on ungreased cookie sheets. Brush with egg white.
  • Lightly press about 1 1/2 inches of wooden stick into bottom center of each dough square. With sharp knife, cut the dough diagonally from each corner to within 1/2-inch of center of each square. Sprinkle about 1 teaspoon colored sugar over each square. Fold alternate corners of the square to the center to form pinwheel, overlapping the dough at the center pushing down gently to seal in center.
  • Press one candy coated chocolate in center of each pinwheel.
  • Bake until set, about 9 to 12 minutes. Using spatula, immediately remove from cookie sheets.
