Pineapple-Stuffed French Toast image

A dressed-up version of French toast has the sweet tropical flavor of pineapple. I use homemade hot fudge sauce for topping.

1 cup chopped fresh pineapple, drained
1 ½ teaspoons ground cinnamon, divided
4 slices good bread
2 tablespoons cream cheese
1 cup whole milk
1 egg
2 tablespoons white sugar
½ teaspoon vanilla extract
1 tablespoon butter
2 tablespoons hot fudge sauce, or to taste

Steps:

  • Mix pineapple and 1 teaspoon cinnamon in a bowl. Spread each slice of bread with 1 1/2 teaspoon cream cheese. Top 2 slices with 1/4 cup pineapple mixture apiece; reserve remaining pineapple mixture. Place remaining slices of bread atop pineapple mixture and press lightly to make 2 sandwiches.
  • Whisk remaining 1/2 teaspoon cinnamon, milk, egg, sugar, and vanilla extract in a shallow bowl. Lay each sandwich in milk mixture and let bread absorb mixture for a few seconds; flip and repeat.
  • Heat a nonstick skillet over medium heat, melt butter in the hot skillet, and fry sandwiches on both sides in butter until golden brown, 2 to 3 minutes per side. Top each sandwich with half the remaining pineapple mixture and drizzle 1 tablespoon hot fudge sauce over pineapple.

one can crushed pineapple and juice, drained, 8 ounces
1/4 cup cream cheese such as philadelphia, 2 ounces
5 slices french bread sliced, 6 inches long
1 1/2 cup egg substitute
cooking spray
sugar-free maple syrup, optional
fresh blueberries, optional

Steps:

  • 1. preheat oven to 400°.
  • 2. Mix pineapple and cream cheese. Cut a horizontal slit through one side of each bread slice to form a deep pocket. Stuff about 2 tablespoons pineapple mixture into each pocket, pressing down gently.
  • 3. Pour egg substitute into a shallow bowl. Heat a large nonstick skillet over medium heat. Coat pan with cooking spray. Dip stuffed bread slices and egg substitute. Add bread to pan; cook two minutes on each side or until lightly browned. Place Brown toasts on a baking sheet coated with cooking spray.
  • 4. Bake at 400° for three minutes or until egg mixture on side of toast is cooked. Garnish with syrup and blueberries if desired. Makes five servings.

8 slice(s) kings hawaiian sweet round bread (3/4
4 tablespoon(s) pineapple cream cheese
4 x large eggs
1 cup(s) heavy cream
2 tablespoon(s) butter
1/2 cup(s) maple syrup

Steps:

  • Arrange bread in 4 stacks so that equal size slices are on top of each other. Evenly spread 1 tbsp of cream cheese on 1 slice in each stack, leaving a 1/4" border. Top each stack with remaining slice & press gently to seal.
  • In a large bowl, combine eggs & cream, whisking until smooth.
  • Melt 1 tbsp butter in skillet over medium high heat. Working in batches, quickly dip both sides of each sandwich into egg mixture (DO NOT SOAK). Transfer to skillet & cook for 2 - 3 minutes on each side or until golden brown. Repeat with remaining butter & sandwiches. Serve warm & with syrup.
