1 cup chopped pineapple
1 ounce lime juice
1/2 cup simple syrup (equal parts water and sugar)
3 ounces Smirnoff No. 21 Vodka
Chili powder and a lime wheel for garnish

Steps:

  • In your blender, combine the chopped pineapple, lime juice, simple syrup, and vodka and puree until smooth.
  • Strain through a fine mesh strainer, then place in the refrigerator to chill.
  • Once chilled, drizzle over a cone packed with the crushed ice (use an ice cream scoop to create the ball on top or your hands). Garnish with chili powder and a lime wheel and serve with a straw and pineapple cocktail parasol.

1/2 ounce grenadine
Crushed ice
5 ounces pineapple juice (or any fruit juice)
2 ounces gin (or any clear liquor)

Steps:

  • Line six or seven shot glasses on a work surface or a big bowl of crushed ice (if making a snow cone). This can get messy.
  • Add the grenadine to a cocktail shaker. Add enough crushed ice to the ice until the shaker is three-quarters full. Slowly pour the pineapple juice over the back of a spoon or ice scoop into the shaker. Then add the gin and a splash of curacao. This will create layers. Strain the liquid into the shot glasses. If making ice cones, pour over the crushed ice, making sure there is enough space for all of the colors.

2 cups canned crushed pineapple
1 cup sugar
1 tablespoon plain gelatin
1/4 cup cold water
1/2 teaspoon vanilla extract
1/8 teaspoon salt
2 cups whipping cream

Steps:

  • Soak gelatin in water.
  • Heat pineapple.
  • Stir in sugar, salt.
  • When boiling, stir in soaked gelatin. Remove from heat and stir until dissolved. Chill until almost set.
  • Whip cream. Add vanilla.
  • Fold into pineapple mixture. Place pudding into wet mold. Chill 4 hours or longer.

8 large baking apples (recommended: Granny Smith, Golden Delicious, or Northern Spy)
2 tablespoons cornstarch
1 tablespoon vanilla extract
3/4 cup apple juice concentrate, thawed
1/4 cup lightly packed dark brown sugar
1/4 cup dark or golden raisins
8 ice cream "sugar" cones
Whipped cream, for garnish

Steps:

  • Preheat the oven to 400 degrees.
  • Peel, core, and cut the apples into 3/4-inch chunks. In a medium bowl, whisk the cornstarch, vanilla extract, apple juice concentrate and brown sugar together. Add the apples and raisins and toss. Transfer to a 2-quart baking dish. Cover the dish with foil and bake for 20 minutes. Uncover and bake for 20 minutes more, stirring occasionally for even cooking. The mixture is done when the apples are just tender and the filling is clear and thickened. Set aside to cool a bit. Scoop warm filling into the ice cream cones and serve, topped with whipped cream.

4 cups water
1/2 cup plus 2 tablespoons sugar, separated
2 cups frozen raspberries, thawed
1 cup purple grape juice concentrate
4 fresh mint leaves
2 tablespoons fresh lemon juice
1 cup orange juice concentrate
1 tablespoon honey

Steps:

  • In a saucepan bring the water and 1/2 cup sugar to a boil. Let cool then pour into a shallow pan and freeze overnight. The next day, scrape the surface of the ice with a metal spoon to make shaved ice. Store in the freezer until ready to serve. To make the toppings, puree the raspberries with the remaining 2 tablespoons of sugar and strain to remove the seeds and set aside. Blend the grape juice concentrate with the mint leaves in a blender and strain and set aside. Whisk together the citrus juices and honey and set aside. Using a large ice cream scoop, scoop a ball of the shaved ice onto 4 cones. Drizzle with various syrups and serve immediately.

  • In a medium saucepan, stir together the sugar and 1 cup water. Bring to a boil and cook, stirring, until the sugar is fully dissolved. Remove the pan from the heat and mix in the lemon juice. Allow the mixture to cool completely.
  • Prepare cones or bowls of shaved ice and pour about 1/4 cup of the syrup on top of each.
