1/4 teaspoon salt
2 tablespoons fresh lime juice
1 tablespoon sugar
2 tablespoons vegetable oil
1 (2-inch-long) fresh serrano or jalapeño chile, minced, including seeds
1/4 to 1/2 teaspoon Asian fish sauce
1/2 seedless cucumber (often plastic-wrapped), halved lengthwise, then thinly sliced crosswise
1/2 pineapple, peeled, quartered lengthwise, cored, then sliced crosswise 1/4 inch thick (2 cups)
1/2 cup coarsely chopped fresh cilantro
1/4 cup coarsely chopped fresh mint
2 medium tomatoes (1 lb total), cut into 1/2-inch-thick wedges

Steps:

  • Mince garlic, then mash to a paste with salt using side of a large heavy knife.
  • Whisk together lime juice and sugar in a large bowl until sugar is dissolved, then whisk in oil, garlic paste, chile, and fish sauce (to taste). Add remaining ingredients, tossing to coat, and add salt to taste.

1 red bell pepper, stemmed, seeded, and julienned
2 scallions, cut on bias
1 zucchini, julienned
1 cup shredded red cabbage
2 tablespoons chopped fresh cilantro leaves
1 cup pineapple chunks in juice, drained
1 cup Thai Citrus Dressing, recipe follows
1 cup fresh squeezed tangerine juice, or orange juice
1 tablespoon fresh squeezed lime juice
3 tablespoons rice wine vinegar
1 tablespoon minced fresh ginger root
2 cloves garlic, minced
1/2 teaspoon toasted sesame seed oil
1 pinch fresh ground pepper
1 teaspoon chile sauce (recommended: Sriracha Thai)
1 tablespoon finely chopped fresh cilantro leaves
1 tablespoon finely chopped fresh basil leaves
1 pinch Chinese five-spice powder
4 tablespoons chile powder

Steps:

  • Season chicken breasts and grill or bake. Cut chicken into thin julienne strips and set aside. In a hot saute pan over medium high heat saute the onion, garlic, and mushrooms with the oil, tossing, 2 minutes. Set aside. Wash the lettuce leaves, pat dry and place in the center of 6 salad plates. Toss the remaining ingredients with the dressing in a bowl. Add the chicken and sauteed veggies and mix well. Evenly divide the salad and center on the lettuce leaf. Garnish with a cilantro leaf. Serve chilled.
  • Mix all of the ingredients together and pour over desired salad, pasta or fruit. It's also great over freshly sliced cucumbers, zucchini, peaches, pears, or apples. Toss and chew!
  • Place everything in a mill or coffee grinder and blend 15 to 20 seconds. Remove to a sealable container.

When I lost this recipe, I searched everywhere for one just like it. None of them had the dressing, which, IMO, makes this fruit salad. The dressing is very similar to what's used in Taffy Apple Salads, so I used that for awhile. I finally found my mom's recipe in a basket full of old recipes and want to post it here. I could eat all of this in one sitting. I don't care for the coconut, so I don't add it. I also guessed on the number of servings. Prep time includes time spent whisking dressing.

1 cup mandarin orange, drained
1 cup pineapple tidbits, drained (save juice for dressing from approx 20 ounce can)
1 cup miniature marshmallow
1 cup coconut
1 cup sour cream
1/4 cup sugar
1 egg, beaten
2 tablespoons flour
1 tablespoon lemon juice
juice from drained pineapple

Steps:

  • Mix the first five ingredients together in large mixing bowl.
  • Dressing:.
  • Combine the rest of the ingredients for the dressing in a small saucepan and cook over medium heat til thickened, stirring constantly(I use a whisk).
  • Let dressing cool slightly then pour over salad and chill. Serve cold.

This was inspired by a recipe on drfuhrman.com and is one of our favorite salads. I've taken it to picnics and been asked for the recipe.

1/2 cup natural creamy peanut butter
1 tablespoon honey or 1 tablespoon agave nectar
3/4 cup pineapple juice (6 ounce can)
1/2 cup raisins
1/2 cup raw sunflower seeds
1/4 cup onion, chopped fine
2 large head of broccoli, stems chopped and florets cut to bite size

Steps:

  • Whisk peanut butter, honey and pineapple juice in a large bowl until smooth.
  • Mix in raisins, sunflower seeds and onion.
  • Add broccoli and mix well.
  • Chill and serve.

1 can (20 ounce) pineapple chunks in juice, drained and juice reserved
3 tablespoons whole-milk plain Greek yogurt
1 teaspoon (or to taste) honey
1/4 teaspoon grated lime zest
1 cup fresh blueberries

Steps:

  • Whisk 1 tablespoon pineapple juice, Greek yogurt, honey, and lime zest in a medium bowl. Fold in pineapple chunks and blueberries until coated with yogurt mixture.
  • Serve immediately.

1 pomegranate (optional)
8 cups mizuna or 8 cups arugula, roughly chopped
2 grapefruits
1/2 cup fresh pineapple chunk
1/3 cup white balsamic vinegar
1/3 cup extra-virgin cold-pressed olive oil
1/8 teaspoon salt

Steps:

  • Cut the pomegranate in quarters and take out seeds while submerging in water.
  • Cut off the peel of grapefruits with a knife and cut into sections. Use a bowl to collect juice while cutting.
  • Place mizuna or arugula on salad plates and add grapefruit sections. Sprinkle pomegranate seeds.
  • In a blender or food processor, place the collected grapefruit juice, pineapple chunks, vinegar, olive oil and salt and blend to make a dressing.
  • Infuse love into food and serve with dressing.
