I know what most of you are thinking... yuck or even weird.. It's definitely NOT either YUMMY is often said with this old recipe that have been in my family for years... Simple and easy to make. Can sub Splenda for sugar as well and still sets up just fine.

5 cups of crushed peaches
20 ounces crushed pineapple
7 cups sugar
2 (3 ounce) peach Jell-O, packages

Steps:

  • Mix together peaches, pineapple and sugar.
  • Boil for 15 minutes.
  • Watch carefully and stir constantly.
  • Turn off stove and add Jello.
  • Stir until Jello is dissolved completely.
  • Pour into hot jars and seal.

Here is another fun summer recipe that will certainly cool off the most discerning of palettes. My wife is not one for fancy soup, even more so chilled soup but she loves peaches so this will certainly be a recipe I make again and bring some home for her to try. I'd suggest using fresh peaches when possible, that you freeze...

1/2 lb peaches, frozen, thawed
1/2 c pineapple juice
1/3 c orange juice
1 Tbsp orange blossom honey
1/3 c greek yogurt
1/3 c half and half
1/4 c gewurztraminer
2 tsp lemon juice
1/8 tsp cinnamon, ground
black pepper, freshly cracked

Steps:

  • 1. Put peaches in small batches in blender, reserving about 1 lb. Blend until smooth and pour into a large stainless steel bowl.
  • 2. Add remaining ingredients into blender in batches and blend until pureed. Remove from blender and add to peaches.
  • 3. Dice remaining peaches, and stir into soup, then chill until time of service.
  • 4. Top with a turn of fresh cracked black pepper.

1 cup dry white wine
1 cup peach schnapps
½ cup sugar
1 teaspoon chopped fresh mint leaves
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
2 cups half-and-half cream
10 fresh peaches, sliced

Steps:

  • Place white wine, peach schnapps, sugar, mint leaves, cinnamon, nutmeg, and half-and-half together in a bowl, and stir until well blended and sugar is dissolved. Add sliced peaches, and transfer to a saucepan.
  • Cook over medium heat for 15 minutes, stirring frequently and reducing heat if necessary to prevent scorching cream. Remove from heat when peaches are tender. Cool to a safe temperature for blending. Process in a blender or food processor until completely smooth. Cover, and refrigerate until ready to serve. Serve chilled.

I just threw this together the other night, and he thought it was better than those pies that I have spent hours on--the nerve of the man! It is yummy, but not for the purists perhaps unless they are in a hurry--hee hee!!!!

1 (21 ounce) can peach pie filling
1 (20 ounce) can pineapple slices
1 cup sugar
2 tablespoons cornstarch
1/4 cup pineapple juice
2 9-inch pie shells

Steps:

  • Preheat the oven to 325 degrees.
  • In a medium sized mixing bowl mix the sugar and the cornstarch together until all of the cornstarch is smoothly blended in.
  • Drain the pineapple slices, reserving 1/4 cup of the juice.
  • Cut the slices into 1 inch pieces.
  • Add the peach pie filling, pineapple pieces and pineapple juice to the sugar and mix well.
  • Place one of the pie crusts into a glass pie plate, and pour the pie filling mixture into the crust.
  • Cut the second pie crust into strips and place it over the pie filling in a lattice type pattern.
  • Bake at 325 degrees for 30 minutes until the pastry is golden brown.
