Number Of Ingredients 8

1 c juice from canned pickled beets
1 c vinegar
1 clove garlic
1 medium bay leaf
2 tsp mixed pickling spices
1/2 tsp salt
12 hardcooked eggs
1 small onion, sliced and separated into rings

Steps:

  • 1. In a large bowl, combine the beet juice, vinegar, 4 cups water, garlic, bay leaf, pickling spices and salt; mix well.
  • 2. Add eggs and onion rings; cover and refrigerate for several days.
