SHANNON'S STRAWBERRY PINEAPPLE PARFAIT

This is a spin off from my Good For You parfait. It is also delicious, try them both :) If you like, this can be made into 2 smaller parfaits, just add another tablespoon of Grape Nuts to the list of ingredients and divide ingredients evenly between two parfait glasses.

1/2 cup crushed pineapple in juice, undrained
4 large strawberries or 8 medium strawberries, sliced and sweetened to taste with no calorie sweetener
1 (6 ounce) container sugar-free non-fat vanilla yogurt (I use the Wal-mart brand)
1 tablespoon Grape-nuts cereal

Steps:

  • Layer in a parfait glass pineapple then yogurt then strawberries.
  • Top with the Grape Nuts.

1 pkg unflavored gelatin
1/3 c cold water
1 c vanilla ice milk
1/2 c unsweetened crushed pineapple
3/4 c frozen unsweetened strawberries

Steps:

  • 1. Sprinkle gelatin over cold water.
  • 2. Place over low heat, stirring constantly until gelatin dissolves.
  • 3. Drain pineapple and thaw strawberries.
  • 4. Add ice milk and fruit.
  • 5. Stir gently until mixed.
  • 6. Portion into 4 individual dishes.
  • 7. Refrigerate until serving time.
  • 8. Do not freeze.

CITRUS PARFAIT WITH PINEAPPLE AND MANGO

Number Of Ingredients 9

1 vanilla bean
2 cups water
2 cups sugar
1 large lemon, zested and juiced
2 large limes, zested and juiced
1 cup creme fraiche or sour cream
2 teaspoons sugar
1 large mango, peeled, seeded and cut into 1/2-inch pieces to yield about 1 1/2 cups fruit
1/2 pineapple, peeled cored and cut into 1/2-inch pieces to yield about 3 cups fruit

Steps:

  • For the frozen syrup: Using a paring knife, split the vanilla bean in half and scrape out the seeds. Place the seeds and the empty pod in a medium saucepan. Add the water and whisk until the vanilla seeds have separated. Add the sugar, lemon juice, lemon zest, lime juice, and lime zest. Bring the mixture to a boil over medium heat, stirring occasionally until the sugar has dissolved. Simmer for 5 minutes, remove the pan from the heat, and cool completely, about 20 minutes. Remove the vanilla pod and discard. Pour into an 8-by-8-inch glass baking dish and freeze for at least 10 hours or preferably overnight until frozen (mixture will still be slightly soft).
  • For the topping: In a small bowl, mix together the creme fraiche and sugar. Set aside.
  • To serve: Divide the mango between 4 dessert glasses. Using a spoon or an ice cream scoop, spoon a layer of the frozen syrup on top. Divide the pineapple and place on top. Spoon another layer of frozen syrup on top. Drizzle the top of the parfaits with the topping and serve immediately.

1/4 small pineapple, diced
1/4 cup whipped cottage cheese (or regular cottage cheese blended)
2 teaspoons honey
1 teaspoon toasted sweetened coconut (garnish)

Steps:

  • Prepare and dice 1/4 small pineapple, to yield 3/4 cup.
  • In a glass, layer a third of pineapple with 1/4 cup whipped cottage cheese (or regular cottage cheese, blended) and 2 teaspoons honey.
  • Make another layer of pineapple, cottage cheese, and honey; top with remaining pineapple. Garnish with 1 teaspoon toasted sweetened shredded coconut, if desired.

6 ounces plain fat-free Greek or soy yogurt, preferably organic
1 cup fresh pineapple, cut into chunks
1/2 cup cooked red quinoa, chilled

  • Fold cinnamon into yogurt. In a dish, alternately layer pineapple, quinoa, and yogurt; garnish with almonds and serve.
