Another Great Brunch Casserole image

I just love this type of breakfast / brunch casserole...they are great for taking to Church...hearty and flavorful, what's not to love?...I love having the leftovers to pop in the microwave as well...enjoy! My photos.

24 oz bulk pork sausage - i used bob evans
1/2 - 3/4 c onion, chopped
1/2 c each, red and green bell pepper, chopped
2 c shredded cheddar cheese
3 c frozen hash browns
1 c biscuit mix
4 eggs
2 c milk
1/2 - 1 tsp fresh ground pepper
1/2 - 1 tsp salt
1/2 tsp red pepper flakes - optional

Steps:

  • 1. Preheat oven to 400 degree F. Grease a 9 x 13 baking dish.
  • 2. In a large skillet, brown sausage, peppers and onions, until sausage is no longer pink. Drain
  • 3. In a medium sized bowl; mix sausage mixture, 1 1/2 cup cheddar and hash browns.
  • 4. Pour this mixture into prepared baking dish. Spread out evenly. In same bowl, add Bisquick, milk, eggs, salt, pepper, hot pepper flakes. Whisk until blended.
  • 5. Pour evenly over sausage mixture.
  • 6. Bake for 40 to 45 minutes or until a knife inserted in the center comes out clean.
  • 7. Sprinkle remaining cheese evenly on top and place back in oven until cheese is melted.
  • 8. Cool for roughly 5 minutes before cutting. Enjoy this yummy casserole.
