PINEAPPLE DREAM DESSERT

Pineapple dream is one of those perfect potluck desserts. Cream cheese, pineapple, whipped cream and graham crackers, yum!

2 1/2 cups graham crumbs (2 sleeves)
1/2 cup unsalted butter
2 cups powdered sugar (sifted)
1/2 cup unsalted butter (softened)
4 oz cream cheese (softened)
8 oz Cool Whip (fat-free)
20 oz crushed pineapple (drained well)

Steps:

  • Preheat oven to 300 F.
  • Melt butter in the microwave and allow to cool. Combine the crumbs and butter and toss together until incorporated. Press 2 cups of the crumb mixture firmly into an 9×9 square pan and bake for 8-10 minutes. Place on wire rack to cool.
  • Beat the cream cheese and butter together until creamy. Turn the mixer down to low and add the powdered sugar one cup at a time until incorporated. Turn up and beat well for a minute or so. Add a heaping tablespoon of the drained pineapple and stir in with a rubber spatula. Spread the cream cheese and pineapple mixture over the crust.
  • Fold the remaining pineapple into the Cool Whip and spread on top of the cream cheese mixture. Sprinkle the remaining graham cracker crumb mixture on top. Refrigerate for at least 4 hours, preferably overnight.

This is one of my "back pocket" recipes for a quick and tasty party dip. I've had people ask me if it is chicken salad, because the pineapple adds a texture that is similar to shredded chicken, and the savory ingredients mask the pineapple flavor. It's perfect for a little bite before a meal or a satisfying afternoon snack on your favorite crackers. If you like, you can sneak in some vegetables, and serve it on celery sticks, or those little tri-color mini bell peppers, cut in half.

2 (8 ounce) packages cream cheese, softened
1 (8 ounce) can canned crushed pineapple, drained
1 cup chopped pecans
½ cup chopped green bell pepper
2 tablespoons chopped green onion
1 teaspoon salt, or to taste

Steps:

  • Combine cream cheese, crushed pineapple, pecans. bell pepper, most of the green onion, and salt in a bowl, reserving some of the green onion tops for garnish.
  • Serve immediately if desired with reserved green onions sprinkled over, or cover with plastic wrap and refrigerate until ready to serve.

1 stick butter
1 egg, slightly beaten
1 c milk
1 c all purpose flour
1 c sugar
2 tsp baking powder
1/2 tsp salt
2 can(s) (20 oz cans) pineapple chunks (drained)
8 oz cream cheese, cut into small pieces.

Steps:

  • 1. Preheat oven 350 degrees. melt butter and pour into 9 x 13 inch glass baking dish. in a small bowl mix together the egg,milk,flour,sugar,baking powder, and salt. Pour directly over the butter in the baking dish, but do not stir.
  • 2. Add the Pineapple chunks,arranging in a single layer as much as possible. Drop cream cheese pieces over pineapple chunks.
  • 3. Place in preheated oven and bake for 45 minutes or until top is golden brown and edges are bubbling. ( crust rises up and around the fruit, but fruit will still pop a little out of top)

My first taste of this was at a covered dish. Ohhh, how I remember that surprisingly delicious taste! I am thankful that the lady shared her recipe with me. It has become a family favorite. Whenever I carry it to a covered dish everyone asks for this recipe. Sometimes I use it as a gelatin salad and other times, as a desert. It is great served with angel food cake. I hope you try this quick easy dish and enjoy it.

1 (3 ounce) package knox unflavored gelatin
1 (14 ounce) can crushed pineapple, undrained
1 (8 ounce) package low-fat cream cheese, softened
1/2 cup sugar
1/4 cup water
cherries, with if desired (to garnish)

Steps:

  • In a small saucepan, over medium heat, warm the pineapple, cream cheese, and Splenda or sugar until smooth. Stir gently. This does not take long.
  • Remove from heat.
  • In a small dish, add the water. Then add the unflavored gelatin to it. Allow a few seconds for it to dissolve.
  • Add Knox and water mixture to the pineapple mixture. Stir well to blend.
  • Pour pineapple mixture in a pretty glass bowl. Gently place a few cherries on top, if desired.
  • Place in refrigerator to set. Chill at least 3 hours before serving.
  • Note: The 3 hours is your cook tiime. Also note that the small package of Knox unflavored gelatin wasn't labeled with number of ounces. Since I had removed them from the box, I guess at the number of ounces.

A very easy dessert. Pineapple pieces can be folded into the thickening mixture before being put into individual dishes if desired. This also works well with other flavoured jellies & fruit to compliment jelly.

85 g pineapple jelly crystals (other flavours may be used)
1 1/2 cups boiling water
250 g cream cheese
1/2 cup sugar
1/2 cup lemon juice
canned pineapple chunks, to decorate or fruit, to compliment flavour of jelly used

Steps:

  • Dissolve the jelly crystals in boiling water.
  • Place in fridge until jelly is as thick as egg white.
  • While jelly is setting, beat the cream cheese, sugar and lemon juice together until creamy.
  • Add the partly set jelly and beat until it thickens.
  • Turn into individual dishes.
  • Chill until set.
  • Decorate with pineapple pieces and a dollop of whipped cream.
