I have been making this dip for over 25 years and it is always the first to be eaten at parties. Delicious! Serve in a dipping bowl and eat with crisps of French bread.

1 (8 ounce) package cream cheese, softened
2 cups crushed pineapple, drained with juice reserved
1 teaspoon onion powder
2 cloves garlic, peeled and crushed

Steps:

  • In a medium bowl, mix together cream cheese, crushed pineapple, onion powder and garlic. Mix in reserved juice from pineapple as desired. Chill in the refrigerator until serving.

1 fresh pineapple
1 package (8 ounces) cream cheese, softened
1/3 cup plus 1 tablespoon chutney
1/2 to 3/4 teaspoon curry powder
1/4 teaspoon ground mustard
1/4 cup slivered almonds, toasted
Assorted crackers, optional

Steps:

  • Cut pineapple in half vertically, leaving the top attached. Remove fruit from 1 half, leaving a 3/4-in. shell. Remove fruit and discard outer peel from remaining half; cut pineapple into bite-sized pieces. Set aside., In a small bowl, beat the cream cheese, chutney, curry and mustard until smooth. Spoon into pineapple shell and top with almonds. Serve immediately or refrigerate for up to 4 hours (remove from the refrigerator 30 minutes before serving). Serve with cut pineapple and, if desired, crackers.

PINEAPPLE-GINGER SYRUP

1 large pineapple, washed and dried
1 3-inch piece fresh ginger, thinly sliced
1 cup sugar

Steps:

  • With a sharp knife, slice off top and bottom of pineapple. Holding fruit upright on cutting board, slice off peel in strips; reserve peel. Cut flesh into 8 wedges. Remove core; reserve. Refrigerate wedges for another use.
  • Cut reserved peel and core into 1-inch pieces; place in a medium saucepan with ginger, sugar, and 4 cups water. Boil until reduced to 1 cup, 25 to 30 minutes. Strain, discarding solids; chill.

PINEAPPLE & GINGER PAVLOVA

4 large egg whites
225g white caster sugar
1 tsp ground ginger
1 tsp cornflour
1 tsp white wine vinegar
½ large pineapple , peeled, cored and cut into 4-5 wedges
3 tbsp ginger syrup from the jar (see below), plus extra to drizzle
6 balls stem ginger in syrup, roughly chopped
500ml double cream
1 tbsp icing sugar , plus extra for dusting handful mint leaves, shredded
4 large egg whites
225g white caster sugar
1 tsp ground ginger
1 tsp cornflour
1 tsp white wine vinegar
½ large pineapple , peeled, cored and cut into 4-5 wedges
3 tbsp ginger syrup from the jar (see below), plus extra to drizzle
6 balls stem ginger in syrup, roughly chopped
500ml double cream
1 tbsp icing sugar , plus extra for dusting handful mint leaves, shredded

Steps:

  • Heat the oven to 150C/130C fan/gas 2. Place the egg whites in a large very clean bowl, and whisk to stiff peaks with an electric hand whisk. Continue to whisk while you add the sugar, 1 tbsp at a time, until the mixture is thick and glossy. Continue to whisk as you add the ginger, cornflour and vinegar.
  • Draw a 23cm circle on a piece of baking parchment, then turn it over and place on a large baking tray. Spread out the meringue mixture to fill the circle, creating a dip in the middle and higher sides. Run a palette knife up the edges at regular intervals if you want to create ridges. Bake for 1 hr, then leave in the oven with the door shut for 8 hrs until the pavlova is completely cool.
  • While the pavlova bakes, heat a clean griddle pan over a medium-high heat until hot. Brush the pineapple wedges with the ginger syrup and griddle for 2 mins until char lines appear and the pineapple is slightly softened. Leave to cool completely, then cut into chunks. The pineapple can be griddled the day before and chilled. Let it come to room temperature before you assemble the pavlova. The pavlova base can be made up to 2 days before serving, stored in an airtight container, then topped with cream and pineapple just before serving.
  • When you're ready to serve, whizz the stem ginger and 2 tbsp of the syrup in the small bowl of a food processor to a chunky paste. Add the cream and icing sugar and whip to soft peaks, then spoon into the crater of the meringue. Top with the pineapple, drizzle with a little extra ginger syrup, scatter over the mint and dust with icing sugar.

GRILLED VANILLA-GINGER PINEAPPLE



Grilled Vanilla-Ginger Pineapple image

Sherry Yard has a wonderful recipe in her first cookbook, "The Secrets of Baking," called Roasted Voodoo Vanilla Pineapple. She roasts her pineapple with the dried vanilla pods that you save after you've scraped out the seeds, and fresh ginger. She inserts the pods into the flesh of the pineapple, a great idea if you're roasting the pineapple for a long time. I decided to use vanilla extract instead of the pods, because during the relatively short time on the grill they infused only the section of the pineapple they had been stuck into. I add vanilla to the ginger syrup and baste the pineapple with this sweet and pungent mix. You could also simply drizzle the pineapple with honey.

1 large ripe pineapple
1 teaspoon vanilla extract
1/4 cup ginger palm sugar syrup or honey
Pinch of cayenne
1 tablespoon grape seed oil or canola oil
Fresh mint for garnish

Steps:

  • Cut ends off pineapple. Quarter lengthwise, peel and core.
  • Prepare a hot or medium-hot grill. (If you are using the grill after cooking meat or fish, allow residue to burn off and scrape away with a spatula.) Stir together vanilla extract, ginger palm sugar syrup or honey, and cayenne.
  • Brush pineapple wedges lightly with butter or oil and place on grill. Cook for 6 to 8 minutes per side, basting with the syrup, until you see grill marks and the pineapple is lightly colored. Remove to a platter or to plates and brush on remaining syrup or honey. Garnish with fresh mint, and serve warm.
