BACON-WRAPPED PINEAPPLE APPETIZERS (MICROWAVE)



Bacon-Wrapped Pineapple Appetizers (Microwave) image

This is a different, outstanding appetizer. They always disappear fast when served. Original recipe is from the Sharp Carousel Recipe Book which came with my first microwave. I've made them in other carousel microwaves also. The time to cook is actually 5 - 9 minutes depending on your microwave's power. Just watch them cook the first time for the light browning and you'll do fine. Prep/Cook time does not include marinating time. Hope you enjoy!

1 (8 ounce) can pineapple chunks in juice, drained (reserve 3 tablespoons juice)
2 tablespoons soy sauce
1/4 teaspoon ground ginger
1 dash garlic powder
6 slices bacon, each cut into thirds

Steps:

  • Combine the 3 tablespoons juice, soy sauce, ginger and garlic powder in small bowl.
  • Marinade the pineapple chunks in this for 1- 2 hours.
  • Drain.
  • Wrap a piece of bacon around each chunk.
  • Secure with a toothpick.
  • Line microwave carousel with several layers of paper towel.
  • Arrange around the outer edge of carousel with space between each one.
  • Microwave at 100% power until bacon is lightly browned (5 to 9 minutes).
  • Serve.

1 lb thick slab bacon
16 ounces pineapple chunks in juice
brown sugar

Steps:

  • Preheat oven to 375 degrees.
  • Cut the length of the bacon in half. Open and drain the pineapple. Wrap each chunk of pineapple with a piece of bacon and use a toothpick to keep it wrapped.
  • Place the wrap on a metal baking tray with the pineapple facing up. Sprinkle brown sugar over the top.
  • Bake until bacon is cooked. Remove from pan and place on a warm plate or serving tray.

I love these little bites, and so do most of my clients. I use my own homemade meatballs, and a "special" sauce to coat them. They're easy to make, and can keep your guests happy, while waiting for the main course to arrive. So, you ready... Let's get into the kitchen.

PLAN/PURCHASE
24 small meatballs
1 can(s) (14 ounces) pineapple slices, in natural juice
THE GLAZE
1 1/2 Tbsp arrowroot powder
1 c coconut sugar, or light brown sugar
1/4 c cider vinegar
1 Tbsp tamari sauce
2 tsp worcestershire
reserved juice from the sliced pineapple, about 1.5 cups

Steps:

  • 1. PREP WORK

  • 3. Drain the juice from the can of sliced pineapple, and reserve.
  • 4. Cut up the pineapple into 1-inch (2.5cm) chunks, and reserve.
  • 5. THE GLAZE
  • 6. Gather your ingredients.
  • 7. Add all the ingredients to a saucepan over medium heat.
  • 8. Chef's Note: If the amount of the pineapple juice doesn't equal 1.5 cups, then add some water to make up the difference.
  • 9. Whisk until thoroughly combined.
  • 10. Allow the glaze to simmer until the sauce begins to thicken, about 10 - 12 minutes.
  • 11. Add the meatballs, and continue to simmer for an additional 5 - 7 minutes.
  • 12. PLATE/PRESENT
  • 13. Place a pineapple chunk on top, and hold together with a skewer, or toothpick.
  • 14. Serve while still nice and warm. Enjoy.
  • 15. Keep the faith, and keep cooking.

6 fresh pineapple chunks (1-1/2 inch)
2 tsp. oil
2 Tbsp. KRAFT Hickory Smoke Barbecue Sauce
2 Tbsp. KRAFT Classic Ranch Dressing

Steps:

  • Heat grill to medium-high heat.
  • Toss shrimp and pineapple with oil. Thread 1 each shrimp and pineapple chunk onto 2 small parallel skewers. Repeat with remaining shrimp and pineapple on 5 additional sets of parallel skewers.
  • Grill 4 to 6 min. or until shrimp turn pink, turning occasionally.
  • Mix barbecue sauce and dressing until blended; drizzle over appetizers.
