- •Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray. Place bread crumbs in prepared baking dish. •In a medium-sized bowl, combine eggs, milk, 1 cup cream of coconut, pineapple, vanilla, cinnamon, and nutmeg; mix well. Pour over bread cubes, making sure bread is completely moistened. •Bake 55 to 60 minutes, or until a wooden toothpick inserted in the center comes out clean. Topping: •In a small bowl, with an electric beater on medium speed, combine heavy cream and remaining cream of coconut just until stiff. •Serve over warm bread pudding or, if you prefer, chill pudding and topping until ready to serve, making topping within 2 to 3 hours of serving; top just before serving. Rum caramel if used should be drizzled before topping is applied. Carmel: Over medium high heat, melt the butter and the brown sugar together, adding the rum and then the cream. Cook at a rolling boil for about 5 minutes as it bubbles and thickens. Pour over the bread pudding and serve

- Preheat over to 350 degree F or 180°C.
- Spray 11 x 7 inch glass baking dish with non stick cooking spray.
- Place cubed bread in large bowl; set aside.
- Combine milk, juice concentrate, egg substitute, vanilla and butter flavored extract in another large bowl; mix until smooth. Drain pineapple reserve juice.
- Add milk mixture, pineapple and raisins to bread; gently mix with large spoon.
- Spoon bread mixture evenly into prepared baking dish and flatten slightly; bake, uncovered 40 minutes. Cool slightly.
- For the sauce add water to reserved pineapple juice to equal ¼ cup.
- Combine juice, preserves, coconut and rum in microwavable bowl.
- Microwave at high 2 - 3 minutes or until sauce is hot and bubbling cool to room temperature.
- Divide pudding among 8 plates; top each serving with 2 tablespoons of Pina Colada Sauce.

A long time ago we went to Red Lobster and I thougt I try their Coconut Shrimp. I love them, so I thougt I'd try to copy what I thought they had in their recipe. Turned out really good.

- 1. Place 1 cup corn starch in a bowl; set aside.
- 2. Combine bread crumbs, 1/2 cup corn starch and coconut flakes in a separate bowl; set aside.
- 3. Combine 1 cup pina colada drink mix, powdered sugar and rum if desired in a separate bowl; set aside
- 4. Coat shrimp in corn starch, then dip in pina colada mixture, then in coconut mixture, back into pina colada mixture and back into coconut mixture.
- 5. Carefull drop each coated shrimp into 375 degree oil, fry until golden brown, drain on a brown paper bags.
- 6. To make sauce for dipping.
- 7. Combine 1/2 cup pina colada drink mix, sour cream and pineapple, stir and place in a bowl.
- 8. Dip fried shrimp in the sauce and enjoy.
- 9. * Also can be baked on a greased cookie sheet at 450 or until golden brown or broiled in your oven. Watch not to burn them.

This is an adaption of another recipe. I recently took it to a Pot luck, the chicken bites disappeared quickly and everyone wanted the recipe. The chicken can be left in larger pieces for a main course, just adjust the baking time to assure that your chicken is fully cooked. This is a pleasant change to the coconut shrimp....

- 1. Melt butter in sauce pan.
- 2. Add brown sugar and stir over med heat until sugar is melted and browns slightly.
- 3. Add flour, stirring until well blended over med heat. Mixture will thicken.
- 4. Add juice and coconut milk to sauce mixture. While cooking over low heat mixture will thicken, stir occasionally. While sauce is simmering prepare chicken.
- 5. Cut raw chicken into bite size pieces.
- 6. Place chicken pieces into a bowl with the buttermilk.
- 7. Place flour, panko, coconut and seasonings in plastic bag, mix well. Place chicken in bag, a few pieces at a time and shake to cover well.
- 8. Place chicken pieces on parchment lined baking pan. Drizzle with melted butter.
- 9. Bake at 400 degrees for 15 - 20 minutes until cooked through and browned.
PIñA COLADA DIPPING SAUCE
This is a wonderful dipping sauce like the one you'll find at Red Lobster, served with their Parrot Bay Coconut Shrimp. One of the times I've had this at the restaurant I was with a bunch of friends, and - on a whim - we dipped everything we'd ordered in it... and it ALL tasted good in it. Even the broccoli! :) From then on, we called it "crack."

- Mix together Piña Colada mix, water, crushed pineapple, coconut, and powdered sugar in a saucepan.
- Heat on medium low temperature until sauce begins to simmer, stirring frequently.
- Let mixture simmer slowly 10 to 12 minutes.
- Mix cornstarch and water together, add to sauce, and blend well.
- Let the mixture simmer for 3 to 5 minutes longer while stirring during and after adding cornstarch.
- Remove from heat and bring to room temperature.
- Sauce is served at room temperature or chilled with coconut shrimp (but it tastes great on other stuff, too).

- In a small heavy saucepan stir together juice and sugar and simmer until reduced to about 3/4 cup. In a bowl lightly beat yolks and in a slow stream add half of hot juice mixture, whisking. Add egg mixture to remaining juice mixture and cook over moderately low heat, stirring constantly, until custard is thickened and a thermometer registers 160°F.
- Transfer custard to a clean bowl and with an electic mixer beat until cool and very thick. In another bowl with electric mixer beat cream until it just holds stiff peaks. Gently fold in coconut milk and fold cream mixture into custard gently but thoroughly. Spoon mousse into ten 1/3-cup cone-shaped paper cups or other very small paper cups. (If using cone-shaped paper cups, set in small winglass or juice glass to keep upright.) Freeze mousses, covered, at least 4 hours, or until firm, and up to 1 day.
- In a saucepan bring whole milk, coconut milk, and sugar to a boil, stirring until suagr is dissolved. In a bowl lightly beat yolks and in a slow stream add half of hot mixture, whisking. Add egg mixture to remaining milk mixture, stirring and cook over moderately low heat, stirring constantly, until sauce is thickened and a thermometer registers 160°F. Chill sauce, its surface covered with a buttered round of wax paper, at least 3 hours, or until cold, and up to 1 day. Stir rum into sauce.
- In a blender purée raspberries with syrup and pour through a fine sieve into a bowl.
- Gently tear paper cups from mousses and invert onto 10 plates. Cut each mousse horizontally into thirds. Carefully seperating sections with a spatula, slip a 3-inch tuile between bottom and middle sections and a 2 1/2-inch thick tuile between top and middle sections of each mousse.
- Spoon coconut sauce around mousse and dot sauce with rasberry coulis. Draw a knife decoratively through sauce and coulis and garnish desserts with pineapple leaves.

- In a bowl beat the egg yolks until thickened and lemon yellow,about 5 minutes on high speed.
- Add powdered sugar and keep beating until combined, use medium speed.
- Gradually stir in rum until blended.
- Fold in whipped topping Makes 2 cups of Sauce.
- ----------PANCAKES------------.
- In a large bowl, mix flour, baking powder, sugar& salt.
- Drain Pineapple, reserve syrup.
- Add water to syrup to make 1 cup.
- In another bowl combine eggs,syrup-water, milk& veggie oil.
- Add to flour mixture.
- Stir very lightly and only until combined: the batter will be lumpy.
- Mix drained pineapple with the coconut.
- pre heat the griddle or skillet.
- Use 1/4 cup of batter for each pancake.
- Pour batter onto the griddle and top each pancake with 1 tbsp pineapple mixture, cook on medium-high heat for 2-3 minutes or until underside is brown and top is bubbly.
- Turn and cook 2-3 minutes more.
- Keep warm.
- Serve with Rum Sauce.
