PIEROGI LASAGNA
You might want to add a few cooked sliced mushrooms to the potatoes, or maybe a cup of well-drained sauerkraut. And season your mashed potatoes however you like 'em...salt, pepper, and butter work fine.

- 1. Preheat oven to 350 degrees F.
- 2. Coat a 9- x 13-inch baking dish with cooking spray.
- 3. Cook lasagna noodles according to package directions; drain and set aside.
- 4. Meanwhile, in a large skillet, heat oil over medium-high heat. Saute onions 8 to 10 minutes, or until lightly browned; reserve 1/2 cup sauteed onions for topping. Add remaining onions, pepper, and cheese to mashed potatoes; mix well.
- 5. Place 3 noodles on bottom of prepared baking dish. Spread 1/3 of potato mixture over noodles. Repeat layers until a total of 4 layers of noodles and 3 layers of potato mixture have been placed (with a layer of noodles on top).
- 6. Top with remaining sauteed onions. Cover with aluminum foil and bake 25 to 30 minutes, or until heated through. Enjoy delicious Pierogi Lasagna!
PASTA AND POTATO PIEROGI LASAGNA
Steps:
- For the potatoes: Bring a pot of water with the cubed potatoes to a boil and boil until tender, 15 to 20 minutes. Drain. Heat the milk and butter in a pot, then add it to the cooked potatoes and mash until smooth. Mix in the salt and pepper. Set aside.
- For the meat and cabbage: Meanwhile, heat the oil in a large saucepan over medium-high heat. Add the beef and sausage and cook, stirring and breaking it up with a wooden spoon, until cooked through, 5 to 7 minutes. Remove the meat with a slotted spoon and set aside. Add the cabbage and cook, stirring occasionally, until softened, about 7 minutes, then add the meat back in and stir. Set aside.
- Preheat the oven to 375 degrees F.
- For the cheese sauce: Melt the butter in a heavy-bottomed saucepan. Stir in the flour and cook, stirring constantly, until the paste bubbles a bit but does not brown, 2 to 3 minutes. Whisk in the hot milk, continuing to stir as the sauce thickens, and bring it to a boil. Add 1 teaspoon each salt and pepper, then lower the heat and add the Cheddar. Cook until a smooth sauce is obtained. Add additional salt and pepper if needed.
- For the assembly: Spray a 9-by-13-inch baking dish with some cooking spray. Spoon a thin layer of the cheese sauce on the bottom of the dish, then place 4 of the noodles on the sauce. Top with a third of the meat-cabbage mixture, a third of the potatoes and a third of the cheese sauce. Layer in another 4 noodles, another third of the meat-cabbage mixture, potatoes and cheese sauce and sprinkle in half of the Parmesan. Repeat the layers one more time, then top the final layer with the remaining Parmesan. Bake until golden, 30 to 45 minutes. Sprinkle with chopped parsley and serve.

- Cook lasagna noodles according to package directions.
- Boil potatoes, then mash them together with the margarine, marble cheese, and salts.
- Mix the ricotta cheese with the parmesean, egg, and garlic powder.
- Alternate 3 noodles, then cheese mixture, 3 noodles, then potatoes. 3 noodles on top.
- Saute onions with the oil & bacon in small pan. pour over top layer of noodles.
- Bake covered at 375 for 45 minutes. Let sit 15 minutes before serving.

- 1. Preheat oven to 375 degrees.
- 2. Fry the bacon and drain on paper towels. Crumble into small pieces. Set aside.
- 3. In the same skillet: Cook together the ground beef and the onions. Drain, as you remove with a slotted spoon, put in a bowl and set aside.
- 4. In the same skillet: Fry the sausage coins. Set aside.
- 5. Heat up the mashed potatoes. Set aside.
- 6. Boil the lasagna noodles. Rinse and drain. Butter generously the sides and bottom of a 13x9 inch baking pan. Put a layer of Lasagna noodles in the pan. Add a layer of mashed potatoes, drizzle with a little melted butter, sprinkle on some shredded cheddar cheese, sprinkle on some of the ground beef and onion mixture. Sprinkle lightly with ground black pepper and garlic powder.
- 7. Lay down a second layer of lasagna noodles. Sprinkle with sauerkraut. Evenly distribute the sausage coins.
- 8. Lay down the third layer of lasagna noodles. Add another layer of mashed potatoes. Drizzle with melted butter, sprinkle with shredded cheese, sprinkle with any remaining meats, sprinkle with cheese and top with the crumbled bacon.
- 9. Bake 35 minutes until bubbly and cheese is well melted.

- Cook lasagna and drain.
- Chop onions and cook in butter or margarine only until clear, but not brown. Saute on low heat.
- Cook and mash potatoes; add cheese to potatoes.
- Spread 2 pieces of lasagna on bottom of 9 x 13-inch pan.
- Spread potatoes with cheese over top of lasagna, then spread butter and onions over potatoes and start over with layer of lasagna, etc. End with layer of lasagna.
- Then pour can of Pet milk over top and bake in oven at 350 degrees until milk bubbles.
- Cut in squares and serve with sour cream.

This is wonderful with a nice ham dinner,even better made the night before and then warmed up.If you like mashed potatos and onions you'll love it.I just use instant mashed potatos but you can adjust this with real mashed.

- 1. In dutch oven melt butter,add onions and saute till soft.Add salt and pepper to taste parsley and garlic and onion powder.Add sour cream,stir till smooth.Set aside 2 cups for the final topping.
- 2. While onions are sauteing make mashed potatos for 10 servings,set aside.Add less water as you need the potatos to be stiff.
- 3. Add 2 cups of onion-sourcream mixture to potatos.Add the eggs,parm.or romono cheese,mix well.In a deep lasagna pan(mine is a 9x13 inch pan with 4 in sides)ladle enough of sourcream mixture over bottom of pan.Place lasagna noddles over bottom of pan to cover cover with potato mixture,ladle more sourcream mixture,then sprinkle with the shredded cheeses.Keep alternating to top.Put reserved 2 cups of sour cream mixture on top.
- 4. Bake at 350 degrees for 1hour covered,uncover and sprinkle remaing cheeses on top sprinkle with the garlic powder,onion powder,salt and pepper.Bake till golden brown on top and bubbly.Some oven temps.vary so i make sure a knife inserted comes out clean.
- 5. Remove from oven,this really needs at least 40 minutes to set or it will run.Depending on the deepness of your pan times vary.We actually let it set to a little above room temp.Cut into squares great with keilbasa,ham,pork chops anything.

- 1. Boil your noodles, lay them out on greased parchment paper. 2. Chop the potatoes into chunks, place in pot of cold water, bring to a boil and cook till you can pierce with a fork.Drain and mashthem, blend with a mixer. Add in the sour cream and milk,salt and pepper to taste and mix some more. Stir in cheddar( I prefer freshly grated.). 3. Melt all the butter over medium-high heat, then saute the onion until softened. 4. Preheat the oven to 375 degrees F. Grease the bottom of a 9×13 baking dish with some of the butter mixture. Lay three of the noodles on the bottom of the dish, then add a layer of mashed potatoes, spreading gently. Smooth them out. Add some of the butter mixture on top. 5. Repeat this twice (or more if you like), then top with noodles and the remainder of the onions and butter. 6. Cook for 20 minutes, or until golden. Cover if u wish. Allow to cool 10 minutes before cutting.
