PICKLED BEETROOT

Preserve roasted beetroot in a sweet and spiced vinegar to make this punchy, classic accompaniment to cold meats and cheeses

1kg beetroot
vegetable oil
4-5 tsp coarse crystal sea salt
1 tbsp black peppercorns
1 tbsp coriander seeds
1 tbsp yellow mustard seeds
10 cloves
few pieces of mace blades
pinch of dried chilli flakes (optional)
2 bay leaves
700ml white wine vinegar, plus 3½ tbsp
100g light brown soft sugar

Steps:

  • Wash and trim the beetroot, rub each with 1 tbsp vegetable oil, then wrap individually in foil. Roast on a tray at 200C/180C fan/gas 6 for 1 hr or until tender. Cool, peel, then cut into wedges.
  • To make the pickling vinegar, put the whole spices in a medium saucepan. Toast over a low heat until they begin to smell aromatic. Add the dried chilli flakes last, as these can easily catch. Add the bay, pour in all of the vinegar and sugar, let it dissolve, and bring to a simmer.
  • Pack the beets into sterilised jars (see tip below), add 1 tsp coarse crystal sea salt to each, then pour over the hot vinegar and seal. Ready to eat in 2 weeks, or longer, if you like.

SPICED SWEET & SOUR PICKLED BEETROOT

Forget crinkle-cut versions, this light pickle is sweet and rich - perfect with cold meats, salads and punchy cheeses

Number Of Ingredients 9

1kg small-medium sized raw beetroot
200g caster sugar
300ml white wine vinegar
2 star anise
3 cloves
2 allspice berries
2 bay leaves
2 tbsp balsamic vinegar (optional)
1 tbsp olive oil

Steps:

  • Heat oven to 180C/160C fan/gas 4. Trim the leaves and most of stalks off the beetroot, leaving a stump of stalk on each. Wrap the beetroots individually in pieces of foil and place on a baking tray. Roast for 1 hr 15 ins or until the point of a sharp knife can be easily inserted then leave to cool.
  • Unwrap, peel and trim the stalks away from the beetroot. Leave the small ones whole and cut larger ones in half and pack them into a large sterilised kilner jar.
  • Tip the sugar, white wine vinegar, 200ml cold water the spices and bay leaves into a sauce pan and bring to the boil. Turn down to a simmer and bubble gently, stirring, for 2 mins until all the sugar has dissolved. Turn off the heat and add the balsamic if using.
  • Carefully pour the hot vinegar, spices and bay over the beetroot (you might not need it all) and leave to cool uncovered. Once cool pour the olive oil over, seal the jar and keep in the fridge for up to a month.

This light pickle is sweet, delicious and perfect with cold cuts and punchy British cheeses

Number Of Ingredients 7

1kg small beetroot
200g caster sugar
300ml white wine vinegar
3 cloves
2 allspice berries
2 bay leaves
1 tbsp olive oil

Steps:

  • Boil the beetroot for 15 mins until the point of a sharp knife is easily inserted, then leave to cool. Drain, remove the stalks and peel the beetroot, then thickly slice and pack into a large sterilised Kilner jar (see tip below).
  • Tip the sugar, vinegar, 200ml cold water, the spices and bay leaves into a saucepan and bring to the boil. Reduce to a simmer and bubble gently, stirring, for 2 mins until the sugar has dissolved.
  • Carefully pour the hot vinegar mixture over the beetroot (you might not need it all), including the spices and bay, then leave to cool, uncovered. Once cool, pour over the olive oil, seal the jar and keep in the fridge for up to a month.

SALT-BAKED BEETROOT WITH FETA & PICKLED ONIONS

The salt crust really intensifies the natural flavour of the beetroot as it steams in its own juices, seasoning it as it cooks

Number Of Ingredients 16

4 medium beetroot (different types are fine), washed, the leaves trimmed for the salad
6 rosemary sprigs
150g salt
500g plain flour
2 large egg whites
140ml cider vinegar
65g demerara sugar
½ tsp mustard seeds
1 dill sprig
2 onions , sliced into 5mm rings, tossed in a bowl with a pinch of salt to break them down
3 tbsp extra virgin rapeseed oil , plus extra for drizzling
1 tbsp lemon juice
1 tbsp snipped chives
1 Granny Smith apple, diced
30g toasted hazelnuts , chopped
120g feta

Steps:

  • First, make the salt crust. Blitz the rosemary and salt in a food processor, then add the flour and egg whites with 200ml water. Blitz again to bring together. Tip the mixture onto a clean surface and knead for 5 mins to form a smooth ball, then wrap in cling film and chill for 1 hr.
  • Heat oven to 160C/140C fan/ gas 3. Roll the dough out to the thickness of a £1 coin. Put the beetroots in the middle and draw the edges up to form a bag. Bake on a tray for 2 1/2 hrs
  • Meanwhile, make the pickling liquor for the onions. In a saucepan, combine the vinegar, sugar, mustard seeds and 1 tsp salt over a medium heat, and bring to the boil. Add the dill and leave to cool for 30 mins. Strain the mixture onto the onions, and leave for a further 1 hr, then drain. In a small bowl, mix the dressing ingredients with some seasoning and set aside.
  • Remove the beetroots from the oven and leave in the salt crust until cool enough to handle. Open the salt crust with your hands and discard. Peel the beetroot, cut into wedges and drizzle with a little rapeseed oil.
  • Mix the beetroots, onions and beetroot leaves in a large mixing bowl, then add the dressing. Reserving a little of each for decoration, add the chives, apple and hazelnuts, toss well, then tip into a large serving bowl. Crumble the feta over the top with the reserved ingredients, then let everyone help themselves. Best served slightly warm.

This is one of Sweden's most popular every-day dishes. Serve it with fried eggs, pickled beetroot and rye bread, in the traditional way. Makes a superb light "comfort" lunch or supper dish, and is quick and easy to rustle up for hungry children and family!

600 g potatoes, peeled and cut into 1-inch cubes
2 ounces butter
1 tablespoon sunflower oil
2 onions, peeled and finely diced
2 tablespoons finely chopped parsley
salt
pepper
400 g cooked bacon or 400 g cooked sausage
4 eggs
pickled beet

Steps:

  • Heat up a large frying pan and melt the half the butter.
  • Add the diced potatoes and saute until the potatoes are golden brown and soft.
  • In another smaller frying pan, add the remaining butter and melt.
  • Add the diced onions and cook until golden brown and soft.
  • Add the fried onions to the fried potatoes, then add the parsley, mix gently but well - cover and keep warm.
  • Put the chopped meat into the onion pan and saute quickly and over a high heat.
  • Add the meat to the potatoes and onion mixture.
  • Heat up the sunflower oil and fry the eggs.
  • Serve the Pytta I Panna immediately with a fried egg on top of the potato, onion and meat mixture.
  • Accompany this dish with a bowl of pickled beetroot and rye bread.

SCANDI-STYLE SAUSAGE HASH WITH PICKLED BEETROOT



Scandi-style sausage hash with pickled beetroot image

Stick on the frying pan and rustle up this Scandinavian-inspired solo supper with egg, potatoes and sweet pickles

2 pork sausages
200g potato , diced (leave the skins on)
1 tbsp olive or vegetable oil
1 small onion , chopped
1 small apple , cored and chopped
1 egg
2 cooked beetroot , grated
1 tbsp honey & mustard dressing
1 tbsp cider or white wine vinegar
rocket , to serve

Steps:

  • Boil a pan of water. Add the sausages and cook for 5 mins, then add the potatoes for another 5 mins. Drain well and slice the sausages.
  • Meanwhile, heat the oil in a small frying pan and fry the onion and apple until softened. Add the sliced sausages, potatoes and seasoning, then increase the heat and fry until golden and crispy, mashing the potatoes a little as you fry. If your pan is ovenproof, crack the egg on top and grill for a few mins until cooked to your liking. If not, fry the egg in a second pan.
  • Mix the grated beetroot, dressing and vinegar together, and serve with the hot sausage hash, fried egg and rocket.
