16 ounces sliced pastrami
2 (8 ounce) packages cream cheese, softened
1 (16 ounce) jar dill pickles, cut into strips lengthwise

Steps:

  • Spread cream cheese over a meat slice to cover. Place a pickle piece on one end, and roll the meat up. Repeat with remaining ingredients. Cut into 1 1/2 inch pieces, and chill until ready to serve.

12 thin sliced genoa salami or sliced ham
12 baby dills
1/3 c whipped cream cheese (flavored cream cheese works also)

Steps:

  • 1. Spread each slice of salami with cream cheese, place pickle in the middle, roll up and place toothpick in center. Refrigerate for at least an hour, remove and slice into bite sizes.
  • 2. Also great with ham! Flavor your own cream cheese with fresh herbs to really to take over the top!!

2 tbsp (30 mL) reduced fat spreadable cream cheese
1 Old El Paso* Large Flour Tortilla (from 8 count package)
1/4 cup (50 mL) shredded carrots
2 tbsp (30 mL) shredded Cheddar cheese
4 petite whole kosher dill pickles

Steps:

  • Spread cream cheese evenly over tortilla. Sprinkle carrots and Cheddar cheese evenly over cream cheese.
  • Place pickles, end to end, about 1 inch from one edge of tortilla. Starting at edge with pickles, roll up tortilla.
  • Wrap tortilla in plastic wrap. Refrigerate 30 minutes. (Roll-ups can be made ahead and stored in refrigerator up to 2 days.)
  • To serve, cut 1/2 inch off each end of tortilla; cut into 6 bite-size pieces.

4 oz. cream cheese
pinch of paprika
2 tsp. chopped dill (optional)
Freshly ground black pepper
4 medium dill pickles

Steps:

  • For each roll-up, lay two slices of ham onto a cutting board and top with about a tablespoon of cream cheese.
  • Sprinkle with paprika, dill (if using), and pepper. Place a pickle in the center and roll the ham around the pickles.
  • Slice roll-up into four pieces. Repeat with remaining ingredients and serve immediately, with toothpicks if desired.
